Pork Outing. Carnitas and Chicharonnes

Damn this had all the makings of a legit experience from a taco truck. -situated in a gas station lot. -plethora of dudes in day glow work gear always in and out. #knowwhattaimsayin -in an area that's no stranger to good taquerias/trucks. But after a couple of tries, there were just too many misses for me to be a regular here. I only tried their tacos, but I'll explain why they didn't hit for me. First the good. Their tortillas are good. They fry them in a little oil just the way I like them. It makes the tortillas a little more chewy, a little toasty and a lot tasty. Then they top every taco with a salsa according to which meat you chose. Their salsas are pretty legit and make their tacos quite "juicy". But their meats is where it falls for me. You see for a taqueria, the meats have to be seasoned on the aggressive side, so it punches you in the mouth, telling you that you're not there for health reasons, and that you're in a friggin' taqueria/truck. The meats here are very under-seasoned by taqueria standards, glaringly so. It made me feel like I was eating tacos from a hospital kitchen trying to limit my salt intake...not a fun ride. Carne Asada (3*) This was actually not too bad, it had a little seasoning and they grill it nice and brown, so that adds flavor. But it still needed a pinch of seasoning to make it come alive or give it some 'wow' factor. But nope. Very finely minced too, so it almost looks like ground beef. The good is the salsa absorbs nicely into the pulverized grilled meat. Carnitas (1*) Totally bland and because there was no salt to accentuate the pork flavor, it didn't have that "porkiness" that carnitas is so known for. The salsa helps a little, but you can't solely rely on that IMO. Felt bad for them cuz this is so easily fixed, and even more perplexing on why they chose this route. Chicharonnes (4.5*) This was my only hit here. Chicharonnes cooked into a salsa so it totally absorbs the sauce and rehydrates the chicharonnes. This is not the crunchy version. But the sauce was great and the texture was spot on. I would actually come back for this. Lengua (2*) Nothing wrong with the texture, spot on actually. But again, zero seasoning just made it taste like boiled beef. Again the salsa verde that tops, just couldn't elevate it enough. The crazy thing here is that they have a jar at the counter with salt packets to grab. Which I unfortunately didn't take advantage of, cuz I had no clue. You usually don't see this. So I almost think that they season this way on purpose, and allow you to season to your own taste. Fine, if I hired a dietician to prepare meals for me. But for a taqueria to impose it, is too much of a stretch for me. #sorrynotsorry

Great burritos and taco lunch spot!!! Edgar's food is authentic and his ingredients taste fresh. He nicely toasted my burrito and gave me some chips and salsa and GUACAMOLE!!! What do you say to that.. holy guacamole!!

It was my first time trying this Foodtruck but let me tell you that they have the best quesabirrias and consomé (only Saturday's) and also they accept card. I highly recommend it

Super quesadilla de carne asada

I passed by here twice always saw at least two people ordering from here. I hike at Dry Creek across the st so decided to give it a try. I got a super quesadilla de carne asada And a super burrito de carne asada With a horchata The quesadilla Was packed with meat! I prefer more cheese than meat but this wasn't bad! I like the sides it comes with. The burrito Although it was super it didn't have avacado lol But the beans were fresh rice was on point and I like thequality if meat. Will becoming back after my hikes teehee

We knew immediately this was our vibe. We sat down and read through the menu. A lot of dishes I wasn't familiar with, so naturally I defaulted to what I knew -- quesadilla de camarón. My wife did the smart thing and asked for recommendations. Mauricio suggested three dishes and she chose the last one- I think it was because something about tequila . When it was my turn, I proudly placed my order. Without missing a beat, Mauricio looked at me and said, "Bro, you can get that anywhere -- you should try this." He began describing the dish, then pointed to his dad sitting patiently at a corner table. "That's his invention." No more words needed. I said sold. Our dishes arrived and we immediately moved them to the center of the table so we could share both. I had the seafood fajitas -- shrimp, fish, fajita vegetables, and the most tender, flavorful pulpo I've ever had. All the seafood was cooked perfectly: tender but not falling apart. But the octopus and the sauce were something special. Chef Jose came to check on us and I told him about the pulpo. His eyes lit up as he began describing his preparation process -- then he said, "You want to see?" He walked me right into his kitchen and showed me the octopus being prepared. That moment alone was worth the visit. By the time we returned to our table, the restaurant had started to fill up. We continued enjoying our food, including the handmade soft tortillas that came with my dish -- don't sleep on those. Chef Jose stopped by again, sharing more stories, more passion, more of himself. Before we even finished eating, we were already planning our next visit for happy hour and dinner with the family. This is a perfect example of what Will Guidara calls Unreasonable Hospitality -- unexpected, personalized, and genuinely human. Mauricio and Chef Jose aren't just running a restaurant. They're sharing something they love, and you feel it in every bite and every interaction. Thank you, Mauricio and Jose. We'll be back.

The Fajitas de Mariscos came with tons of seafood in a savory sauce. It came with rice w/corn and beans. We also had the Camarones Costa Azul which was jumbo shrimp wrapped with bacon in a savory tomato sauce + cheese. Definitely a heavy dish but pretty tasty! I really liked the homemade tortillas here; they were so soft and went well with the shrimp and fajitas. Prices are in the higher end but portions are also huge! There seemed to be just a husband and wife when we dined. They were very welcoming and helpful with explaining the menu. Place was very spacious with lots of seating.

It had a good heat level that wasn't overpowering like the red one. I appreciated that they added the pickled veggies on the side. Overall, a solid taco and sope spot. I will definitely return to try other items on the menu.

Case in point: $9 for 8 oz of guacamole. It's good guac, but at that price I half expect it to come with a tiny mariachi band or at least whisper affirmations while I eat it.
