You can't always put your finger…read moreon what makes a place stand out, but this bar nails the intangibles--the je ne sais quoi that makes you want to stay a little longer and come back sooner than planned. The outdoor seating is refreshingly simple, but once you step inside, it's pure vibe. There's a thoughtful design touch to everything--from the mid-century glassware to the way each drink seems to have its own personality. They're not just slinging cocktails here; they're crafting an experience. I ordered the VOG CUTTER--Pisco, watermelon, lemon, absinthe, cubeb bitters--and it came topped with a pickled watermelon garnish. I'm usually not an absinthe fan, but this drink was perfectly balanced, bright and herbal with just enough edge. It landed squarely in the "perfect cocktail" category for me. My partner had the Velvet Elvis and was equally impressed. We both kept commenting on how varied and intentional the drinkware was--punch cups, tea glasses, you name it. It makes everything feel more special. The bartender was sharp, friendly, and clearly knew the menu inside and out--eager to help guide us through the options and talk about the thought behind each drink. At one point, a child wandered in by mistake (Esters is 21+ due to its bar zoning), and the bartender gently asked them to leave--but not before handing over a vanilla wafer as a parting gift. One of my favorite touches? The name. There's actually a thoughtful explanation printed right on the menu: "Esters are natural compounds that are created through chemical reactions during fermentation. Esters give a diverse range of aromas and flavors to rum." It's a subtle homage to the science of spirits--and it fits perfectly with the experience Esters delivers. If you're looking for a cocktail bar that hits on every level--drinks, vibe, service--Esters Fair Prospect is the move.

I also ordered a spicy rainbow roll. You could tell that the fish was very fresh on top, but the roll itself was just decent. Not worth the $25 and it was also not spicy. I think my favorite food item was the karaage. It was crispy, tender and the sauce was the cherry on top. I am looking at the menu and I realize that a lot of these cocktails are new, which is another bummer because I would have loved to try all of them (guava mojito, spicy lilikoi mezcalita and vana colada -- yes please!) The restaurant itself is so cute! There is definitely a rustic vibe to it. It could look like a treehouse because there's a big tree in the middle and string lights. It is an outdoor restaurant, and there is an extended outdoor section as well that has a little more secluded feel. There's a bar area, but it is a bit small.

It's the details- the server commented on delayed drinks very dismissively, and their outdoor speaker was on too loud to the point it reverberated with some static, definitely blown out. I asked to please turn it down or off as it was not adding to the experience. Got a very strange look and maybe it was turned down a fraction about 10 minutes later. Traffic noise was significant but we were sitting outside next to the road. Expected. But to compete with the music and traffic was not our cup of tea. This breakfast as described was $95. You decide.

If there is a line, the wait can be lengthy. One day she took my number and texted me when our table was ready (and I killed time at the lobby shops and artisan stands while my husband enjoyed the open air lobby views). The staff are kind, friendly and even offered area activity recommendations. The ocean view is incredible-- it can be enjoyed best on the patio, and from many of the indoor tables. The buffet includes unlimited coffee, tea, juices (love the POG juice), coke products (you can ask for a to go cup on your way out! I recommend asking for ice)-- as well as a made to order omelet. Then there is the entire buffet. As a vegetarian, I had plenty of options. Loved the avocado toast bar-- it was so flavorful! I loved the scones were different flavors each day. I eat eggs, so I sometimes had the scramble, sometimes a veggie omelet (I liked to top it with parmesan cheese from the avocado toast bar). I enjoyed the breakfast potatoes (they changed them up a bit each day), and the variety of salads. They even had a marinaded tofu! The place is kid friendly. There is a parking garage.

Skip the buffet. The eggs were watery and soupy, and the "Hawaiian sausage" turned out to be little more than sliced hot dogs. For a resort of this caliber in a destination known for incredible food, it felt surprisingly low effort. Service was probably the strongest part of the experience, but even that was average at best. I'd call it a 6 out of 10. Friendly enough, but not the level of hospitality you'd expect given the prices and setting. The disconnect is especially noticeable because the Wailea Beach Resort itself is fantastic. We genuinely loved our stay and would absolutely return to the property. That's what makes the restaurant so disappointing. It feels like a business operating inside a great resort rather than an extension of the resort experience. If you're staying at the Wailea Beach Resort, do yourself a favor and explore the many excellent dining options around Wailea instead. Maui has too many great restaurants to spend your vacation settling for this one.
