More surprising was that it was pretty busy almost immediately on opening. So last night I decided to give it a shot. The area is pretty well served by takeaways, and has lots of chippers, but with the notable exception of Borza, they tend lack a certain lustre. So its a pretty bold move to open a takeaway in an area saturated with takeaways and only a few feet from one of them. So Hillbilly's is basically american style food - lots of fried chicken. They also seem to have pies, which I didn't order this time. There are a few high stools but this really is a takeaway. I went for chili chicken breast in a bun meal, which cost about 7 euro - so certainly comparable price with the other local takeaways. However when I got it home I was happily surprised to find that it was much better quality. Everything seemed fresher and even the bread was not your packet bun usual standard. I can see why it got so busy so fast. I just hope they keep it up.

The Bolognese was meaty with just the right combination of ingredients. The PUTANESCA had the perfect combination of salty goodness (thanks to the capers & olives) that made the dish pop with flavor. Hubby has a dairy allergy so we shared the New York pizza without cheese with extra sauce. This was the absolute 1st time we've ever had the amount of sauce they put this pizza & it was perfect. The extra sauce helped to keep the crust from drying out during the cooking process so we were excited to actually see this. (Extra sauce in this amount is a rarity in most places we've been to) Paulie's staff members were ALL extremely friendly & polite helping to make the loud experience much better. As a group we decided this had been one of the absolute best meals we had eaten during our visit to Dublin.
