    What to say...it's Taco Bell. Came with son after dentist trip. Usually fast food is only a 3 star from me at best but they were friendly today and they have a good health score. Ordered a tostada. Now I haven't had one of these in a while. There is some new to me sauce that I'm not a fan of. Maybe a spicy siracha, not bad just not for me on the tostada. Portions were of good size if not slightly heavy compared to some taco bells I've eaten at. Now we did dine in, and it should be noted that I have been shorted items from this drive thru on more than one occasion.

I chose the four taco plate with two pork tacos and two asada tacos, we also bought two bottled waters. The young man told us about the salsa bar as well which looked well stocked with a nice selection of salsas, radishes and pico. We had a seat at a table and the young man also brought us three bottles of sauce and explained there were two mild sauces and one hot. Shortly afterwards, he brought our meals. Everything looked fresh, delicious and yummy. My wife visited the salsa bar while I added some of the mild green sauce at the table to my tacos. We dug in and really enjoyed our meals. It is a small place with less than a dozens tables, and a fairly broad menu. It has been operating for about 10 years now. I was particularly interested in the California Burrito with Steak and the tacos with shredded beef, the Birria tacos, the Guadalajara Dog, and the street corn. We tried them all! The California Burrito is an interesting version - filled with pickled jalapeños, lettuce, tomato, cilantro, onion, avocado, Mexican cheese, sour cream, your choice of protein, and topped with Chili Con Queso once filled. The menu description does not mention FFs which is very much traditional. In fact, the replacement of rice and beans with crispy FFs was what made the California Burrito unique! This is a large burrito, shorter and thicker than the vast majority you'll see. The filling I chose was carne asada and the burrito was topped with what the menu termed "chili con queso". The result was a different looking burrito, but an excellent burrito - and no, I couldn't finish it. The Birria Tacos are only available of Fridays. You get four tacos, sliced radish, Lime wedges, and the house red and green hot sauces. These tacos were well filled with meat and cheese, but there was no consommé, which is very traditional, also no chopped white onion or cilantro - disappointing, would not order again! The street tacos with shredded beef were good, not great - well filled, and well topped with chopped white onion and cilantro. I went all the way which added lettuce, tomato, and Mexican white crumbling cheese, either cotija or queso fresco. Frankly I did not find that the all the way approach worked for me! 3 tacos were $8.99, and all the way added $1.99. These are a bit pricey, most Tex-Mex spots in Winston serve up 4 for just under $13! I wanted to try the Guadalajara Dog more out of curiosity than anything else - I have been in Guadalajara a number of times and experienced some interesting food items, such as Birria (the stew), Pozole, Carne En Su Jugo, BBQ Young Goat, and the Guadalajara Hot Dog ( a wildly popular street food)! The weiner is wrapped in bacon and then deep fried, causing the skin to develop rips. Once in the bun, it is sauced and topped with fresh avocado, chopped onion, ancestry you can add more. This was a good version, but not an item I order often. The street corn consisted of corn kernels, cheese, hot sauce, lime, and a Mayo based sauce. This is a busy item, and I found I prefer the simpler, customary corn on the cob with crumpled cheese. This is an interesting place, one that has a different take on Tax-Mex dishes. Those takes and moves away from tradition are not something for me.

The food was excellent as always. El Taco Shop is unassuming from the outside but don't let that fool. They offer seriously good eats on the inside.

Even with such a small crowd, the service moved extremely slowly, and food came out at very uneven times -- some of my party received their meals well before others, and one of my dishes was even incorrect before being corrected later. The sanitation rating posted was a 90, which made me a little cautious right from the start. The pricing also feels high for the quality and consistency of what was served. I began with the guacamole. The seasoning and flavor were actually quite good, but the execution missed the mark -- the avocado was noticeably firm and under-ripe, and the tomatoes were completely forgotten. Something as simple as guacamole should shine with freshness, and this one didn't. The enchilada had decent flavor, but it carried that slightly "held too long" taste -- not spoiled, just not as fresh or vibrant as it should be. I originally ordered three beef tacos, but chicken was brought out first. Once the correct beef tacos finally arrived, they were much better -- flavorful, fresh, and probably the strongest item I tried. The rice and the chips were also well-prepared and tasted fresh. The weakest dish by far was the taco salad/avocado salad. It was extremely watery, unpleasant in texture, and simply not enjoyable -- it felt like it was thrown together without proper preparation. Overall, I would give Los Chortos around three stars. There are flashes of good food here -- the beef tacos, rice, chips, and the seasoning of the guacamole were all positives -- but the inconsistency, slow service despite an almost empty dining room, order mistakes, and a few poorly executed dishes made the experience uneven. I've had good meals here before, so it's possible I just chose the wrong items this time. I'll come back again, but I'm hoping for a more consistent and polished experience next visit.
