I saw Tabay's on social media and couldn't wait to try them out. I took my lady friend to the Laguna Hills Vegan event and there they were. Holy crap!! Repeat after me: You do NOT need to be a vegan to eat here!! Admittedly as a self-confessed hardcore carnivorous, omnivorous consumer, I felt compelled to visit Tabay's after reading about the tragic fire that incinerated the home of this wonderful Persian family. Thankfully they re-opened and serve yummy food daily! On my first visit, I ordered the Persian burger and the Persian cherry drink. The point of service touch screen was very easy to use; and easily allowed for modifications and additions. Suffice it to say, the food was beyond scrumptious--- definitely leaps and bounds beyond the typical veggie burger. The Persian burger was so flavorful, fresh and filling; served on a nice warm bun with crisp veggies; the tasty white creamy sauce made it truly delectable. Also, in the midst of the afternoon Kahului heat, the Persian cherry drink was really refreshing. After consuming the Persian burger, I felt way more energized in contrast to when eating the typical animal protein burgers (albeit delicious) that leave me feeling exhausted and sluggish with bouts of intermittent animal aftertaste!! Best of all, I got to meet the food truck founder / creator: Tabay and see his beautiful mother in the foodtruck. The service and ambience was warm and welcoming, very typical of Persian hospitality. Please come support this wonderful small business. And make sure to support the other nearby food trucks. Just remember that this is the food truck village adjacent to the Marriott Courtyard Maui Hotel situated directly across from Costco. We needed a quick bite before heading to Costco to avoid buying too much stuff - if you ever been hungry while shopping, you know what I mean. I headed over to the Costco Food Trucks and found Tabay's Mindful Kitchen. I was greeted by a friendly woman who offered to look at a full menu since the truck only shows a few options on the side of it. The women working there told me they've just started at that location 6 weeks prior. Also that the truck is her son's who is only 19yo! To say I was impressed was an understatement. He apparently followed his mom into the culinary field. I can tell talent by what I ate since it was all YUM! I ordered the Persian wrap which is grilled kabobs, pickles, shredded lettuce, diced onion & tomatoes, some sort of sumac sauce in a tortilla. I also ordered the lavender lemonade with a mix of watermelon & pineapple juice at the suggestion of the women - it was so refreshing and light. After ordering, she offered to bring it to me at the Costco Food Truck sitting area and I was munching away after about 10 minutes. We drove up from San Diego to San Clemente for my daughter's softball tournament. This truck was the first thing to greet us, and the smell coming out of it was phenomenal. When our plane landed in Kahului for our first ever trip to Maui, my husband and I knew our first stop would be lunch. But Tabay's Mindful Kitchen food truck is not just convenient to the airport -- it's seriously awesome food! We both ordered the no-fish filet sandwiches, and got some chik'n nuggets to share with the house-made hunny mustard. The sandwich was so satisfying and flavorful, a great combination of textures from the soft bun, the crispy "fish" filet, and the plentiful tartar sauce. The nuggets were crunchy on the outside and moist on the inside, perfect on their own -- but dipped in the hunny mustard, next level! Our visit was made even better when we were personally greeted by Tabay himself with that big smile and great vibe.
