These happen to be my favorite times, as I love cooking and I love making things authentic and as legitimate as possible when I can. Over the past year, I have made it my personal achievement to become proficient in making tamales. Over the last eight months I have learned to perfect multiple different tamales, but I cannot call myself a master, as I have not put in the time of a true master. This is what led me to La Mexicana. A search for proper ingredients beyond just the simple masa and lard. I am always looking for fresh peppers when it's out of season that I cannot grow and dry myself.
