Summit Tacos food is both gorgeous and delicious. Their salsas are heavenly and pickled veggies are top notch. I'm a fan of all of their taco offerings, but do wish the chorizo tacos were a tad less spicy so I can taste the flavor of the chorizo more, as opposed to the amount of heat I got. Regardless, we'll be back again and again. The service and employees are great and friendly. I'm in Longmont for work, and my coworker took me to Summit Tacos for lunch. I really liked the outdoor seating area--super rustic. I had the barbacoa street tacos and carnitas street tacos. The menu's small but has plenty of good options. It's the first Mexican spot I've been to where Carne Asada wasn't even an option, but the barbacoa totally made up for it. If you're looking for great food and even better vibes, Summit Taco is where it's at. The staff here? Absolutely hilarious--like, actually funny, not just "restaurant friendly" funny. These people are a whole experience on their own. They take care of you like you're part of the crew. You walk in once, and they remember you. The a la carte tacos I had were excellent! Two types of salsa to try (tomatillo and a smoky red chile). They have alcohol AND non-alcoholic versions of many popular brands (Coronoa, Lagunitas...). The staff were friendly and informative! The Latin-X music was fun, when generally I don't really like Mexican music that much. There's a patio outside, and 6 indoor tables too. I will come again! Guy who works the front counter is EXTREMELY rude. As others have commented here as well, he is always yelling at people to get out of the doorway.. even went as far as yelling at my dad who is crippled (visibly with a cane and a hard time staying upright) as he was trying literally to walk through the door. I've also seen him yell at parents that their kids can't be playing outside. The food is good, but this guy seriously sucks! I managed a restaurant for several years and would never keep an employee like him around.. he's rude at the counter when you're ordering too. What a fun and funky little find! This place was recommended by locals we were visiting family from out of state. We ordered street tacos and the pamboza which came with pozole a hot spicy soup. Everything was delicious! Aside from the food this place is cool. We sat outside on a Friday afternoon, and lots of people eating at picnic tables. Loved the laid back atmosphere. Just yes!!! I was told summit used to be a food truck but bought a house & renovated it turning into a restaurant! Not sure how true that is but you need to go here. On Tuesday's (and during happy hour daily) they have 4 tacos and a beer for $10.40, need I say more? The tacos are phenomenal and there are plenty of options to satisfy everyone. Love the nopalito tacos. As a vegan, I found there are some good choices. The guacamole is excellent.

The street tacos we had, barbacoa and carnitas, were delicious! Filling. The outdoor front patio is comfortable, mostly under trees, and there's a large outdoor area in the back that's a great place for a party with tents or umbrellas and trees to provide shading for summer. There air conditioning inside with a smaller seating area. The atmosphere is laid back and fun. The margaritas are delicious, with colorful, seasoned rim-salt and a good liquor flavor. This place is amazing! Great atmosphere, great food, great outdoor seating. We had taco plates--we had them pick a variety of tacos for us and they were all fantastic, and we all demolished our plates. The sides and vegetable pickles are a delight. I especially loved the tomatillo salsa. The real highlight for me was the esquites (street corn): smoky, spicy and creamy, a perfect blend of flavors. I'd have licked the bowl but that would have been rude. It reheats well if you have leftovers. My daughter had a quesadilla which isn't spicy and makes for a great kids meal. This place has some great flavors!!! I had all their vegetarian offerings and would definitely recommend them. Its been on my food in Longmont to try list for a year now. The tacos were seasoned so well I did not even need their salsa to go on them. I tried the cactus, poblano and potato (without chorizo) tacos and enjoyed them. I will say though, I really do NOT like cactus or poblano as vegetarian options. I have this aversion to soft wet vegetables that just kills my joy. However I tried it anyway and enjoyed the flavor if not the texture. Their street corn appetizer/side and guacamole are also so so so good. If anything will make me come back for more its their street corn. Without having any other vegetarian options though I will not be coming back (except once and awhile for the corn). I really wish they would offer a cauliflower or street corn taco or quesadilla. Then I would come back. I will always recommend them even if I don't see myself as a repeat customer. My meat eating local friends really love their meat offerings and if the flavor is so good on the vegetarian I know its going to be popping on the meat. Most excellent vegan nopalitos tacos! Jamaica was homemade, with perfect balance of sweet and tart. Meat eaters had an abundance to choose from. Everything was fresh. Good vibes here and great food! Yes the music is a bit loud but it's lively and in the spirit. It gives the place extra character. Best Mexican I have had in a long while. We had the Pambazo, Enchiladas de Mole Rojo and the cheese quesadillas from the kids menu. Sometimes my son leaves leftovers when we eat out. Not this time! He ate everything. We were surprised lol My Pambazo was so good just what I needed. Just the right amount of spiciness and flavor. Arrived around 1pm it wasn't busy they did have sanitizer available for the staff and costumers. The staff was wearing a mask and masks are required. The facility was clean and the staff was very friendly talked us through the menu and suggested some plates! The choices for drinks alcohol and non are a wide variety. We had 1 taco if each meat barbacoa, steak and chicken with a side of beans and rice and elote bowl. It was very delicious the tacos were a tad small but we both got filled up, worked out great! Our plates had a side of pico and lime and salsa. Beans and rice tasted fresh and authentic! We enjoyed all the beautiful artwork and plates/bowls in the restaurant. The bathrooms were clean as well.
