Smith Island cake is made of many thin layers of yellow cake with a rich fudge like chocolate icing. This cake is the most popular , but my favorite is cookies and cream , Neapolitan or fresh strawberry in the summer , which is super moist. Smith Island cakes have been made since the 1800's , when women on Smith Island would send them with their husbands on the Autumn oyster harvest .
