The focaccia was warm and pillowy, but the chicken... the chicken was so juicy and flavorful that I'm convinced they either brine it, braise it, or whisper ancient culinary incantations over it. Whatever the method, it works. And the mozzarella? They didn't sprinkle it. They didn't "add a touch." They deployed it. Easily a third to half a pound of molten dairy glory blanketing the entire sandwich like it was being tucked in for a long winter's nap.
