Having grown up in Brooklyn, NY in the 60s-70s, I'm very familiar with what a true New York-style bagel should be: * A tight, dense crumb with tiny air pockets -- compact but still soft * A chewy crust, not crunchy -- a gentle tug when you bite * Clear freshness -- when warm, it should smell like flour, steam, and malt What we received was dry and lacking chew, with none of the aroma or freshness expected from a hot-water-boiled, freshly baked New York-style bagel.
