I was pleasantly…read moresurprised by the nice ambiance and decor with what looked like a copper top ceiling, a main bar, a few raised tables and 2 cozy leather chairs that made me think of enjoying a nice after dinner bourbon in the study of an late 19th to early 20th century study of a business tycoon or politician from that time period.. The bar tender, Noah, was impressive and friendly in that he knew his liquor stock very well, and could explain the flavor intricacies of the various types of bourbon, vodka, and gins. They also offer some non,-alcoholic beverages for the "designated driver" of the group too. We watched Noah make everything from regular and "dirty martinis" with fresh ingredients, as well as one drink where he used a butane lighter and some tiny cedar chips in a straining tool above the drink to give it a fresh, authentic smoky look and flavor. Noah knows his stuff!!!!! The patrons were friendly, diverse, and easy to socialize with if you chose to do so. The establishment is pet friendly for "socialized pets" with a water bowl outside the establishment and some free Milkbone treats inside. Keep in mind that this establishment is a "tasting room" with the majority of products from the New Scotland Distillery, but there are other options. Just don't expect to get a Bud Light Draft or food here. The only downside is that parking in the Lark Steet and State Street location is difficult to obtain without some effort, but we managed to park our vehicles 2 blocks away. This is not a direct criticism of the establishment because the experience is well worth this minor potential inconvenience. We would definitely go back there again, especially for the specialty drinks or the flights and half flights of their bourbon and vodka products. The greenery continues inside with plants adorning a large picture window. Every surface gleams and the place smells fresh and clean... The bathroom is impeccably spotless. Classy attention to detail is the order of the day at New Scotland spirits tasting room. Our bartender, Noah, was welcoming and knowledgeable and our drinks were delicious. We will definitely be back.

The Tomahawk steak was cooked perfectly, the atmosphere was elegant without feeling stuffy, and the service was attentive throughout the evening. It was the kind of dinner that creates lasting memories, and for that, we are grateful. That said, I continue to struggle with the restaurant's à la carte pricing model. I fully understand that many high-end steakhouses operate this way, but I have never quite embraced the concept. Our Tomahawk steak cost $175 and arrived without a single side dish. The fries and broccolini sides you see here were both extra charges. To be clear, this is not a complaint about the quality of the food or the overall cost of the evening. We knew we were choosing a fine dining experience and were happy to pay for it. My concern is more philosophical. When a guest orders a premium steak, I believe a complete meal should accompany it, with opportunities to upgrade or substitute sides if desired. That approach would feel more hospitable and customer-friendly while still allowing the restaurant to offer customization and premium add-ons. None of this diminished what was otherwise a terrific evening, and I would gladly return. I simply think the dining experience would feel even more complete if the restaurant reconsidered the increasingly common practice of charging separately for every component of the meal. In short: excellent food, excellent service, wonderful atmosphere, memorable evening--just a pricing philosophy that I personally find difficult to embrace.

Salt and Char could be perfect except their Fine Dining Area is less to be desired. They need to hire an Acoustic Engineer because the Dining Room is so loud my ears are still ringing the next day. In addition, there were no Linens on the tables (might help). There's a Big wide Entrance with no Door that takes away from the atmosphere. It adds to the Chaos of noise. The poor Staff has to perform with those obscene noise Decimals. If you want to be a five star restaurant you need to rethink the Design and add Acoustic baffles. O M G.

But after eating there I found they have curated their own unique versions of the classics. For dinner I got the Backstage burger and upgraded to poutine fries. Now I'm not the biggest fan of a traditional poutine but I wanted to try it anyway because it looked good. The burger was cooked perfectly and the beef they use is very good. The poutine fries were enormous and apparently only half the size of a full order. If you like poutine you'll probably be into them but I thought the gravy was a little thick and not that flavorful and the cheese curds didn't melt as much as I would have liked. The real sleeper hit though was the Mac & Cheese. I wasn't expecting anything special and was pleasantly surprised. Definitely would come back for that. Here is what we ordered: All American Thigh: fried chicken thigh, American cheese, bacon, hot pickles, honey mustard on brioche Backstage Burger: bacon jam and BSP sauce. Farm fresh from highland hollow, Schoharie, NY Chicken Wings w spicy caramel bacon bourbon sauce Espresso Martini Pork Belly Brussel Sprouts: shaved brussel sprouts sautéed with pork belly, garlic, strawberries, walnuts with maple sriracha drizzle. Only things that were a little miss was the chicken wings while a good size could have been crispier for my preference and the chicken for my sandwich could have been seasoned more. I would definitely go back though, my husband loved his burger and was very impressed with their bourbon selection. I also loved the sauce we got on the chicken wings, it was sweet with a little heat.
