Simply Hailee, how we love thee…read more.. Displaced from restaurants by Covid and young children, my wife and I were losing our foodie status until we found Simply Hailee. Hailee has serious chops--professional training, Four Seasons experience, and as a private chef and caterer in Manhattan. We have ordered Hailee's doorstep delivery meals every week for a year and a half. Her French and Italian can hang with top, local restaurants. Fresh lamb, chicken, beef, salmon, cod. Her sauces and pasta are excellent. Her vegetables often steal the show. Her salad dressings--roasted balsamic tomato vinaigrette, caesar, ranch--are find-something-in-the-fridge-to-dip good. Soups are excellent--light yet flavorful. She also prepares greek, spanish, asian and mexican, all of which are excellent restaurant quality. And rarely is her cooking heavy. Its seasoned for flavor and properly prepared. If she makes salmon, you will taste salmon. If she makes brussels sprouts, you will taste brussels sprouts. Plus, its delivered to our door at the beginning of the week. No more dinner-planning. A high-quality dinner is served after heating in the microwave or toaster oven. Oh, and her quiches, her quiches! On our rare returns to restaurants, we often try a dish and say, "ya, it's good. But Hailee's is better."

Finding the right service was made even harder by the fact that I'm vegan (and my husband isn't). Simply Hailee fixed all of that. Doorstep Deliveries make meal time an absolute breeze. Save your money, tastebuds, and time by using someone else to cater your event!!!!…read more On Friday, December 7, 2018 I had THE worst catering experience EVER!!!! The food was late being delivered and we received no phone call to advise us that they were running late!!!! We had to call them!!!! The food was not hot nor did they bring us anything to warm it up with. The chicken breast were beyond dry!!!! Desert sand with tumbleweed blowing in the wind comes to mind when I describe and visualize just how dry the chicken was!!!! Dessert was not what the desert we ordered and appeared to have been store bought, frozen, and been thawed out, but yet we we're charged $51.00 for an $8.00 store bought cake. The Red Diamond tea was store bought for $2.88 at Wal-mart, but we were charged $18.00 for two gallons. They brought no serving utensils for any of the food items we ordered. The dinner plates, forks, knives, spoons, and cups were brought with enough for 18 people, but there was not enough napkins for 18 people and there were no dessert plates. The chicken was hella dry. The roasted potato's were hard as a rock, were not completely cooked, and could have been used as a weapon. The only positive thing about the entire catering experience was that the asparagus was good and cooked. I will never ever ever ever ever use this company for any event personally or professionally. This was the first time using them and it was an EPIC fail in supporting local business!!!!

I constantly am reminded of how much I love eating food that is pre-made, cooked from frozen, and…read moreoften pretty plain tasting. To clarify, I love eating these simple meals in restaurants that offer them in a non gaudy environment. When you have 10 humble people in the kitchen/back room hanging around, you know you are in a good place where people treat you like family. I sat down, placed my order, and fresh (probably instant bake) rolls and cornbread was brought promptly to my table. Right after that, our order came, just 10 minutes into the meal. The meatloaf was meaty and moist. The beef stew was meaty with plenty of pre-cut, probably frozen veggies. The black-eyed peas were good, as was the cabbage, and the macaroni was tolerable. The chicken fried steak was the worst of the bunch, but it still satisfied to the best of its ability. The pre-made gravy did justice to the somewhat tough and crisp steak. The grand total for a home-style feast? $20 for 2. That is why you cannot beat these types of meals. Sure, the dishes are probably hours old when you get them, and there may even be plastic wrap in your food (I did find a small piece...), but when gracious people are bringing you your filling fool, the grub tastes much better.

I instantly fell in love with Fabiola, the food, and (Vestals' owner) Jordan's passion for serving people and the culinary arts. I knew during our tasting that Vestals was a special organization, and I knew that I wanted to be a part of it. I kept calling and emailing Jordan until he agreed to have me come in for an interview, and the rest is history! Vestals catered my wedding and everything was phenomenal. We had the following passed hors d'oeuvres during cocktail hour: *Chicken N' Waffle Bites w/ Maple Butter (my hubby's fave!) *Crab Cakes w/ Remoulade *our Signature Bacon Wrapped Apricots *Pimento Cheese Tart (inside a homemade cheddar biscuit tart shell) We also had a GORGEOUS cheese and charcuterie display available all night, and signature cocktails with scratch-made bases. Our dinner service was in between plated and family-style. First course was a pre-set salad of mixed greens, strawberries, candies nuts, etc. with a shot glass of balsamic vinaigrette on each plate. Waiters then brought out a plated beef filet with chimichurri and Dijon aioli over ancho sweet potato purée with spring veggies. Along with the entrees, each table was given a platter of spice rubbed chicken with grilled peaches, and two types of Mac N Cheese: one a white cheddar with hatch chiles, the other with bacon and smoked gouda. Guests passed around these dishes and shared at their tables. For dessert, we had Jocelyn make us an elaborate display of the following bites: *Lemon Bars *Vanilla Creme Brûlée with Berries *Ginger Molasses Cookies *Salted Caramel & Dark Chocolate Tarts *Banana Cream Shooters *Strawberry Shortcake Shooters *Raspberry Cheesecake Bites Our late night snack were these really fun breakfast tacos individually wrapped in foil with homemade salsa in to-go bags. We had fun with it and made a whole fiesta-themed display with Mexican pastries, a piñata, bottled sodas, tamales, etc. I've attached photos from my wedding, but also other photos from events we've done. Enjoy! Give me a shout if you are in need of catering services :) kortni@vestalscatering.com
