Firstly, Wahoo's used to be my and my daughter's favorite restaurant (like 15 years back or so.) As we grow older, the test of time comes with waves of changes in our lives. I don't remember when our passion for this casual seafood taco place diminished completely where we simply stopped going. It's as if it fell into oblivion without a trace. Our go to location was the one on I-25 and Hampden. Right, it's no longer there and that could easily be why our stopping to go. This, especially for me, might be an excuse because my work (which I go in for 2 days a month ever since COVID) is only a stone's throw from this location in Highlands Ranch which I can casually walk to with no significant effort. Today happened to be one of those in-office days. I skipped lunch but at around 2:45pm or so, getting me a bowl of protein rich food (all of a sudden) hit me. After browsing where to go for such food, Wahoo's came up in my search. And after browsing more than a handful of photos uploaded on Yelp, some dishes looked so appealing. A little after 3pm, I walked over to it as I was getting quite hungry. Some past diners posted photos of what's called "Paleo Bowl" or something like that. That makes sense. Without any further thought, I wasted no time to order it. For this bowl, you pick two proteins of your choice. I went with fish and tofu. The total after tax was about $17 with sone change. Not bad. Within the next 10 minutes, my food was ready. The same pleasant lady handed me my food and off I went to go back to the office. I didn't immediately eat it. i actually ended up waiting until I got home to eat it. When I finally sat down at my dining table it was a little past 4:40pm. My super late lunch/early dinner finally started. And oh wow, this bowl is no joke about protein. There is absolutely no carbs or whatsoever in it. The broth was deliciously made, and the chopped green onions enhanced the flavor to this broth. The 5-6 wontons, which held the main meats of ground pork and minced shrimp, were perfectly seasoned. With each bite, I want to bite more of the meat and slurp the broth. Be careful though: the broth can be steamed hot. Make sure to check both the broth and the wonton before you put them into your mouth or else the soup will burn you. You've been warned. For my main entrée, I ordered bánh xèo, which is Vietnamese crepe with shrimp and pork. One bite of this, wrapped in fresh lettuce, mint, basil, cucumber, pickled carrot and radish, and your taste buds will explode! You can even taste the coconut in the crepe/batter along with bean sprouts and green onions. Hint: if you ordered this item and do not taste the coconut milk from the crepe, you are not eating an authentic bánh xèo (Vietnamese crepe). I did also have their homemade recipe of the Fizzy strawberry drink. A very refreshing, tangy and tart drink that was simply delicious with pieces of purée strawberry at the bottom of the jar/glass. There was food scattered across counters and work surfaces, ingredients spilled around open food containers, dirty cutting boards and utensils, sauce and food debris throughout the line, and generally very poor housekeeping in areas where food was actively being prepared and served. I've attached photos because they tell the story better than I can. What concerned me most was that this wasn't hidden somewhere in the back. This was the customer-facing food preparation area, in plain sight. At some point management has to look at the condition of the restaurant and stop service long enough to clean and sanitize the workspace. It certainly raises food-safety concerns, and after seeing the condition of the preparation area, I did not feel comfortable eating here. CAVA management should take a serious look at this location. A restaurant serving fresh food should look fresh and sanitary. This was neither.
