Super disappointing and a huge waste of money. Made a reservation months in advance and our "server" Abby just kept trying to force us to buy food and didn't explain any of the tasting any of the information on the wine, just "this is white, this is red I'm not much help!" Is exactly what she said. We were celebrating our friends bachelorette and it was a very subpar experience.

My partner and I booked the cave tasting for my birthday weekend and the whole experience was above what we expected. The winery itself is beautiful with the vineyards in the distance and the open, airy space of the tasting room. You're led down into the wine cave as you arrive so you don't have to wait for everyone in that time slot to arrive. We were pleasantly surprised to find we had a whole section to ourselves, which made for an intimate experience. The timing of our pours was spot on and our host shared information on each wine and the inception of the winery. We also ordered a charcuterie plate and baked brie and found them to be a great value for how much food came out. Would definitely recommend for couples and small groups!

Brandon the bartender was amazing from beginning to end. Super personable and had great service even when super busy. Sleek and modern atmosphere. Loved the orange wine. Will come back again.

Absolutely 10/10 experience! We did the Slate Theory tour of $45 which came with the tour, four wine tastings, and two glasses (to keep). Super fun option if you love to hear the story behind things - which, I do! There are other options that focus more on wine tasting and also food pairings, but for me this was the best option. Our tour/tasting guide could not have been kinder and we began right on time. Learning about the intricacies of the organization as a whole and the background in mental health awareness was such a refreshing experience than what you are used to in the area. You somehow get a spooky yet inviting vibe that is both relaxing and exciting all at once. Every staff member encountered was friendly and happy to help, I highly recommend adding this stop to your Fredericksburg trips!!

We got there too late for the cave tour, but still had a great time at the inside bar. Anson was awesome--super knowledgeable about the wines and always on top of bringing out the next tasting. The atmosphere here is great. The vineyard is beautiful, and the indoor bar and patio are just as nice. Such a great spot, especially on a pretty day.

Love the mental health focus of this winery. Definitely book the cave tasting. I appreciated the sommelier's knowledge and time spent sharing with us. The charcuterie was delicious. Would definitely return!

First off, if you want to do the cave tasting or the wine tour, I highly recommend that you make a reservation ahead of time as they can be booked on the weekends. I came here with a group of friends. We initially came on Saturday, but there was no availability on Saturday, so we made a reservation for the following day. It is a 2-hour experience, and it is a must. You get to taste four different wines, and most are grown locally. They are transitioning to produce 100% of their wine with their own grapes. Special shoutout to Abby for being our hostess! She was very kind, relatable, and nice. She was not pushy in selling the membership (unlike some other places nearby). We learned about the company's history, which is a very lovely story, and it involves supporting mental health (Yay!). I would come here again for their wine and mission. I bought a bottle of their Alienist. A bit expensive, but also it is really good, and part of the proceeds support mental health.

10/10 experience! We did the elevated food and wine tasting in the cave and it was exquisite. Charlie was our chef and sommelier, very knowledgeable and personable. The grounds are gorgeous and the weather was perfect. We also met the owner Randy, he was a light and so fun! He even volunteered to take our pictures. Loved hearing the story of this place and how it's become what it is. Will be returning.

Another lovely trip slight theory. This time we joined the wine club. I love their wines very much. And their food is yummy. We love the goat cheese appetizer and chocolate cake you must get! We love the ambience here and they are kid friendly, which is a plus for us. Definitely recommend Slate Theory!

My wife and I booked the cellar tasting experience and had a wonderful time. The whole winery vibe has a mental health feel, which is pretty interesting and most of their wines have some type of psychology reference/theme. Unfortunately, I can't remember the guys name who escorted us down to the cellar, but he was fantastic. Explained to us the different wines and all of the nuances associated with them. The atmosphere is fantastic. The charcuterie board with also very good. We enjoyed the experience so much we ended up signing up for their wine club. Looking forward to visiting

We have been coming here for awhile and Nvr had a bad experience! Service is always awesome and shout out to Sam at the bar she was very helpful. The place is so clean and welcoming so come and check it out!

Took part of the paired wine tasting in the cave and wow. Just wow! To have such a personal experience with wine tasting and food paring was amazing!! The winery itself is gorgeous and the fact that they actively support mental health initiatives is amazing. Can't say enough great things about this place.

There are quite a few car services and wine shuttles. 290 Wine Shuttle is one that comes to mind.

Is an appointment needed to visit?

To visit the Tasting Room, no reservation is required!

Is Slate Theory kid friendly?

They do allow children less than 21yrs, but there are no facilities or play areas for children and they cannot go on the wine tasting tour underground.

Is there food for purchase here?

Yes, they have some small plate options

Is there sweet wine here or only dry?

All wines at Slate Theory are dry, there are no sweet wines and certainly none salty.

Is Slate theory child friendly?

Yes it is!

Is the property dog-friendly?

Yes dogs are welcome on any of our outdoor patios

One trip changed a lot for owners Craig Stevens and Chesney Castleberry. During a safari, they…read morewitnessed the tragedy of rhino poaching, an experience that inspired them to get involved in conservation and create a sanctuary. Their 55-acre property became a home for Blake, their Texas-born rhino. And there is a winery here, too! Since opening in '22, it has become a natural extension of their passion for fine wine and a meaningful way to support their conservation efforts. The estate now includes nearly 10 acres of Tempranillo, Sangiovese, Merlot, & Malbec. With most vines in their 4th leaf, estate TX wines are still on the way, but visitors can already enjoy excellent Texas wines made from High Plains fruit along with South African ones. The McPhersons have helped craft many of the Texas wines, while Dr. Bob Young has contributed red wines aged in Texas oak. A team of South African winemakers helps support wines made from the Stellenbosch, Elgin, and the coastal area. The tasting room and back patio offer spacious seating, beautiful views of the Pedernales Valley, and direct views of Blake. The north-facing wine tasting patio is an extra plus design to have, especially with the Texas summer heat. For your testing selection, you'll have a list to choose from. For this tasting session a mix of South African & Texas (both reds & whites) were sampled. Starting off with the Sumatran Sparkles, this South African sourced bubbly is Pinot Grig based with notes of honeysuckle and citrus. Next from SA was their Wijde Sparkling. This white bubbly was blended with 53% Chard, 46% Pinot Noir, & 1% Pinot Meunier. It expressed itself with a floral aroma coupled with acidity and a bit of pear. Following that were two of the Crash label brands. Both Pinotage based, with the dry version a nice and light easy drinking wine featuring notes of strawberries with bright acidity. The sweet Pinotage bubbly version (lightly sweet) exhibited more of a cream sensation with a touch of cherries. Moving on to white wines, the first sipped was the '24 Albariño. This TX white wine has some good pineapple notes giving a pleasant tropical finish. The next white was the Texas High Plains 2025 Viognier. Sourced from Lahey, this one was quite impressive with apricot and lemon. The next Texas red was the '24 Horn Red Blend. This High Plains sourced fruit, comprised of 40% Malbec, 25% Dolcetto, 25% Sangiovese, & 10% Petite Sirah, had notes of clove and cherry going for it with even tannins and acidity. Texas Mourvèdre has been making big waves in the Texas wine industry, and their 2023 vintage has Grenache blended with it to yield an intense fruit forward wine with blackberry to satisfy the nose and palate. The final TX red wine sampled was the '24 Sangiovese. With cherry, raspberry, and a touch of spice, this classic Italian varietal was quite satisfying. For the South African red wines, the '22 Cab Franc was the first to sip. Part of the winery's Keras collection, this bold wine was loaded with big tannins and had a firm mouth gripper! Following that were two '22 Cabernet Sauvignons. One was also from the Keras collection with deep cocoa and raspberry notes and a fine tannic finish. Not quite as bold, but still big, the other Cab wine displayed more blackberry and plum notes with a bit of leather. Rounding out the tasting adventure was the '23 Five Species. This Bordeaux style blend had Cab Sauv, Cab Franc, Malbec, and some Petit Verdot blended to craft a well-balanced, smooth, and elegant wine to savor all evening. With a long family history in the Hill Country spanning more than a century, Craig & Chesney are adding their own chapter to the region's evolving story. The estate offers one beautiful surrounding scenery, dedicated up-close viewing sessions with Blake, and local artwork displayed throughout the tasting room. At its heart, this place is a true rhino conservation effort, strengthened by excellent wines from South Africa and Texas that help support the mission. It is a unique gem in the Texas Hill Country. Our concierge was incredibly thorough with his descriptions of what notes and tannins were expected of each wine and he was determined to find the perfect wine that delighted us both. Afterward we enjoyed watching a grape stomping demo and walked the grounds. A special thank you to John for the experience. I was intrigued to discover they partner with neighboring vineyards in a co-op to establish such a hearty and robust assortment of grapes for their wine. We signed up for a tasting, and it completely possible that I just didn't know what that entailed, but it was far different from what I expected. Instead of being seated (or doing a standing tasting), we were given drink tickets and told to go outside for drinks. We were given a welcome wine to try with our tickets which I appreciated! When we got outside, we were met with long lines leading to what looked to be a bar with three staff members pouring wine. For the first pour, we were told a little bit about the wine but after that, no one bothered to tell us anything. In addition, the pours were very inconsistent. Some of them were barely more than two small sips while others were far more reasonable. We quickly discovered which staff member was willing to pour more and who he was willing to pour more for (not me lol). The wines themselves were fine but it was difficult to enjoy considering we had to keep getting up to get pours and the drink tickets felt a little like SXSW. We did very much appreciate that they offered actual food unlike many other places in the area!
