I hired them to cater for my company's anniversary celebration. The best caterers ever! Kenny was amazing. Because of his team I was able to focus on other things. Everything went smoothly. I was fortunate enough to attend Harry's class, and I was mind blown. As a beginner, I was a little nervous about joining a class like this. Before the class started, I heard a couple of the guys there saying they were competitors. I immediately thought, "I'm in over my head," but the class was perfect for a beginner like me as well as the seasoned competitors. Harry Soo really deserves more mainstream recognition, his ability to teach and entertain are a joy. I learned of Harry shortly after picking up a Weber Smokey Mountain as I was reading info on how to 'season' it, from there, his YouTube channel is always informative and I have a lot of his rubs in my cabinet which get lots of praise when added to ribs and tri tip. But today was a whole new reckoning, after attending Harry's hands on BBQ class, his thorough coverage of all steps of the BBQ process for various meats (beef, chicken, pork, lamb, tuna, etc!) really opened my eyes to how I could make drastic improvements to my own techniques. I took Harry's Master BBQ Class Oct 28 of this year. It was such an amazing class. Harry is honestly is one of the most kindest & welcoming people I have ever meet. He made me feel right at home from the moment I walked it. I honestly believe he should have his own TV show because he is so knowledgeable on BBQ, history of food & how to blend cultures together . He breaks the class down from sauce by explaining the history. He is such a great storyteller he talks about all cultures of food and break it down to science. Now this class isn't for someone who has never turned on a grill before so you should has some idea of what to do. I went in with a list of questions of what I been doing wrong all these years so I can evaluate my game in Brisket. He explain 20 different thing so you need to be prepared to absorb the information. So for me the class was perfect . We are doing so many things and are hands on you are engaged for that 7hr class. He gives you a breakdown of everything he does in a booklet so you don't forget but it really is a wonderful class to take & bring friends for serious BBQers who want to elevate their game. He also donated his services & % to the class to good cause. And he sell's amazing rubs & sauce. I am such a big fan that if he has other classes I will be happy to take them with him. I did have a dietary restriction & he customized my meals to the class which I thought was incredibly nice. You eat what you make and take a box home. Great atmosphere to allow participants to learn one on one. Class size is perfect to allow adequate interaction, ask questions, allowing to see the break down and clarify the processes. Being hands on and interactive with the class allowed us absorb content and feels like you're getting your bang for your buck. Harry was very welcoming and provided top notch hospitality . To begin with, Harry Soo is plain and simply a class act. He is smart, funny, well spoken, and is willing to convey any and all of his BBQ knowledge (and this knowledge is vast) with his class. It is very obvious why Harry has won so many BBQ awards and championships. His methods are skillful and creative. The class is well organized and takes you through all the steps needed to improve your BBQ skills. From food safety, meat preparation, seasoning, saucing, smoking/grilling techniques, and presentation; you leave class with the skills and knowledge necessary to go home and make delicious BBQ for your friends and family. You finish class by getting to sample all of the food you worked on during class. Just be careful not to sample too much during class. The feast after is amazing and you find yourself saying "Harry, no more, I can't eat another bite!" But don't worry too much, you get a nicely prepared "doggie bag" to take home for your family to sample your wares after class is through. Finally, Harry provides lifetime "tech support" incase you have addition questions or problems in your BBQ journey! Presently, the class is $395. Reporting in after a 4 hour rib cook I did myself! I took the class last week on Sept 21, and I was blown away by the amount of detail that went into everything. We were taught how to prepare and smoke all of these cuts: Steak Pork Ribs (Spare ribs, St. Louis) Pork Butt Tri-Tip Brisket Chicken The class ran from 7:45am and we left around 3pm after lunch. I would HIGHLY recommend this class to any aspiring BBQer because I watched so many of the videos, but it doesn't compare to being there in person watching and experimenting yourself! Eat a small breakfast, because food comes out every hour for you to try and by the end of the day, I was stuffed! Meat sweats and food coma for sure! I've been meaning to review the Slap Yo Daddy BBQ class that I took last Thanksgiving but have been busy so here goes... The cost to attend the course is $375 (I think it cost $395 now). Now that may seem like a lot of money but, some of the proceeds from Harry's classes go to charity and the skills that you attain are valuable if you are serious about BBQ. You also get appetizers throughout the 6.5 hour class, a bag of rub to take home, an all you can eat lunch (pork ribs, beef ribs, pulled pork, brisket, lamb lollipops, sausage, corn bread, Harry's delicious seared ahi tuna, and so many other delicious dishes), a custom SYD apron, training guide, and a box of BBQ leftovers! In my opinion it is worth the money. Harry and his fiancé Donna are professionals and they break the class down into what they call "scenes" like a movie. Topics included: food safety, trimming, seasoning, meat quality, rubs, marinades/injections, wood/charcoal, wood flavors, sauces, smokers, thermometers, and techniques for cooking ribs, pork butt and brisket. After years and years of BBQ and smoking, My abilities had gotten to the point where I could make family/friends happy but I was stagnant with my knowledge and ability to take it to the next level. Notes, attentiveness, Q&A, etc... The class is held at Harry's backyard which is a perfect size. You arrive and they have coffee/donuts and students get to know each other. Harry starts with his approach and philosophy then gets right into it. There is so many diff meats that are cooked, brisket, sausage, chicken, pork, Ahi, etc...I can't list them all. I really learned a lot and hoping I can apply what I learned next time I smoke. Even tho it's 6 hrs long, it feels a bit longer. And then after eating, all you wanna do is nap. (lol) Some of the Highlights: Teaching from all aspects, competition vs backyard, simple ingredients, tasting as you go, one of the best briskets ever tasted, new recipes, casual environment, philosophy of cooking, no "One" way to do anything, right down to the wood used and how to build a proper fire. I really, really was grateful I spent the $ and attended. I learned a few things I would have spent a lot more $$ discovering: I prefer backyard taste over competition flair, I want to buy a tube smoker, I am sensitive to salt, but when cooking for others, I have to cook for them, I've been under-seasoning, I have Traeger but will be buying a used off-set and a 14" weber tube. Overall, had a blast, learned a lot even though I knew more than most, and now I have a couple hrs ahead of my finalizing the notes I took, downloading the recipes and ingredients, putting together my Harry Soo SYD "Brainbook," and of course, planning my required homework of smoking using Harry's teachings and sending him picts...
