This place has very unique burgers with a "skirt" of cheese around them. There are a lot of options for customizing your burger and toppings. The place is fast casual style where you order at a counter. The food came out pretty quick. The burger was delicious but SUPER heavy. I couldn't eat much before I felt full and then I didn't need anything else for the rest of the day! Thankfully they have take-home boxes available. The fries were good but cost extra. They also provide a free drink upgrade to veterans.

If you're looking for quick good fast food this is the place for you. Both indoor and outdoor seating but to be sure it is very small so seating is limited so try to avoid busy times if you plan on eating in. Menu is small mostly burgers, fries and drinks but the food is very good. Employees are friendly and don't make you wait long at all. If you're in a hurry and hungry go for it.

After hearing family members rave about this restaurant, I finally got to try it! It definitely lived up to the hype. It's not a fancy place, but that doesn't matter because the burger is so. good. You can't go wrong with the classic skirted heifer. My first bite was of the crispy cheese around the edge, and I was sold. Sweet potato fries are also delicious! One order of fries is enough for two people. It's a smaller space inside, and a lot of people came in for takeout while I was there.

What is a Skirted Heifer you ask? Why it is one of the best burgers I have ever ate in my life. Seriously! While touring around in Colorado Springs, we were getting a little hungry and my spouse recommended we check out this place. He had seen it on DD&D's so off went to find this location. There are two in town. This location is small but had a line out the door. Limited seating but we snagged a couple of bar stools on the outdoor patio. The place was packed which to me is always a good sign. Skirted Heifer serves a unique burger. The beef is Colorado grass fed and grass finished. Buns are homemade and the garlic bun is so soft and tasty. Condiments are made in house as well which adds to the flavor of the burger. The burgers are made to order and you can enjoy them exactly the way you want. We tried two of the burgers. Initially, we thought we could share a burger. HA! That was a joke. Once we both bit into our burger we knew we had to have a second one. The first burger was on the garlic bun with no skirt but with everything else and we both fell in love instantly with the juiciness of the burger. We went back and as we had to try the skirted burger. The skirted burger has an extra layer of melted cheese that surrounds the burger like a skirt. Again this was an outstanding smorgasbord of flavor. Service was fantastic, friendly and terrific! So glad we stopped here and I would definitely recommend trying either location.

A small burger joint that seemed to be a big hit for the college kids. I will not go back. I figured if a celebrity ate here it has to be pretty good. The Classic Skirted on a garlic bun with LTO and Heifer sauce. The Heifer sauce is not for me, it looks like 1000 Island, the flavor is a bit flat. The Garlic bun lost its garlic somewhere. The burgers may as well be smash burgers, they are way too thin (like McDonalds). The burger of the week - I tasted the honey once, I think they forgot the "hot". The goat cheese was the highlight, nice tang but the paper thin burger was lost. The fries are great and if you drink soda it is made with cane sugar. It was a little slow to get our food but the place was slammed with college aged folks.

Very very crowded and limited seating at this small restaurant in downtown Colorado Springs. The line moved quickly, but the food took quite a while to come out. Service was friendly and they recommended me to get my pueblo farmer burger skirted which is something I've never tried and was willing to give it a shot. I unfortunately was not a fan of the giant crispy cheese overflowing in my burger container. It really overpowered the taste of the burger and made it very greasy and messy to eat. I did appreciate them giving me a free drink after they asked if I was military. Always appreciate those kind gestures. If I do come back, I'll be sure to get my burger NOT skirted!

Build your own skirted burger, sweet potato fries

Stopped in at Skirted Heifer for our first meal in the city - we were starving. Walked in to the quaint spot, and immediately got local vibes. I decided to go with a skirted build your own burger with lettuce, tomato, fresh jalapenos, and beer mustard. This was a great choice. The skirted option is great if you want something a little over the top. The burger was well seasoned and had some crispiness to it. Fries were a good compliment and the ketchup almost seemed like it was made in house. Everyone here seemed really nice and helpful. Seems like their teas and sodas were a hit, but would've preferred a beer. All in all I had a great experience and would definitely come back to try some of their signature burgers.

We visited Skirted Heifer for lunch after hiking in the morning. This is a tiny store with barely enough room to move given all the customers crammed inside. Ordering is pretty easy at the front counter and the employees all super friendly. I ordered our food to eat there but for some reason they packaged it up for takeout. We unpacked everything as quickly as possible to dig in - hopefully the food didn't steam too much in the bag! The Classic Skirted Heifer ($10.95) - Of course we had to start with the classic, the one that made Skirted Heifer famous. As the name implies, it's a pretty classic burger with the patty, lettuce, tomato, pickle, onion, and sauce on a bun. The specialty is the cheese skirt, which is basically a huge mound of cheese flattened and cooked on the flat top. When I ordered, I expected it to be similar to a crisp baked parmesan crisp, but it's not like that at all. Instead, it's super cheesy and caramelized, becoming a chewy, fatty, and almost leathery layer instead of developing much crisp. They use a ton of cheese in the skirt, making the burger extremely heavy and rich. The burger patty itself is cooked excellently. There's still a slight bit of pink inside, which leaves the patty fatty and moist. The exterior is charred well, giving plenty of flavor. The veggies all work well together, but can't quite manage to dampen the richness of the entire sandwich. Heifer sauce, which is basically fry sauce, a combination of mayo, ketchup, seasoning salt, and pickle juice, is slathered on the bun, adding even more richness. Speaking of the bun - the menu lists it as a garlic focaccia. I wouldn't exactly say it's focaccia. While it has some characteristics of one, it's more of a cross between a normal burger bun and focaccia. It's topped with plenty of minced garlic on top and is blistered very well, along with a great toasty crisp on the cut halves. The burger as a whole is a very enjoyable eat, albeit very heavy and filling. I actually wish I had gone with regular cheese instead of the skirt! (4/5) Burger of the Week ($10.95) - The Octoberfest, the Burger of the Week, includes beef, swiss cheese, sauerkraut, pickled red onions, beer mustard, and mayo all on a homemade pretzel bun. The bun is super chewy, kind of bouncy, yet tears apart with ease like a real soft pretzel. It's toasted very well, creating an almost blackened crunchy area especially along the edge. The exterior of the bun is nicely blistered, although I didn't find it especially crisp, nor was there any salt baked on top. It's definitely like a soft pretzel as the name states, but has some characteristics of a normal burger bun to be soft enough to work with the interior ingredients. As with the other burger, the patty is caramelized very well on both sides, giving it plenty of flavor on the exterior complementing the beefy taste inside. There's plenty of fat so the interior remains juicy rather than drying out. They add just a bit of sauerkraut on the bottom - in this case what seems to be quick pickled cabbage, adding a very slight tang but not much other texture. On top of the patty there's some pickled red onion, offering a bit more in texture and taste than the sauerkraut, and finally a bunch of whole grain mustard and mayo, adding creaminess and additional moisture. It all comes together into a great bite. This is an excellent burger, and way easier to eat compared to the Classic. (5/5) Belgian Fries ($3.25) - These are thin fries cooked nice and crisp. The put a ton of salt and sugar on top, making this a fun salty and sweet snack. They go well with any of the dipping sauces they have, which include ranch, heifer sauce, ketchup, and we also requested curry ketchup. (5/5) I do want to comment that all the tables (we tried several) seem to always be super sticky and disgusting. This is even after I saw them wiping down the tables. Also, I found all the food to be a bit on the salty side, but I would still visit again. They definitely focus way more on the food than atmosphere or cleanliness. Bathrooms - One tiny unisex room, very damp inside and not very clean.

This is my first 5 star review in a long time and it is well deserved. Pricing is very reasonable for the area and portion is generous. Staff is very friendly and quick. The burger place is casual but clean. Flavor delivered and I love the ability to customize each aspect of your burger. BEST TURKEY BURGER I have ever had hands down. Worth a try and worth your money!

2. The Classic Skirted Heifer

Heard of this place due to the fact it was on the show triple d.... With that being said I had high expectations, starting with the restaurant itself it was more of a walk up and order with limited seating inside with a patio with some hightop seats. The service was great we ordered exceptionally fast. The fires I think were the best part of the entire meal!! They were made fresh and perfectly seasoned with salt, the burger was a good sized patty and the skirted cheese on it had so much flavor.

I really loved the burger and fries I got at the Skirted Heifer. I went with the build your own with lettuce, tomato, pickles and the cheddar skirt on garlic focaccia plus the belgian fries. It was AMAZING. I personally loved just eating the crispy skirt of cheese all on its own! Fries were skinny and crispy. They do natural sodas, but I just opted for iced tea. On the food front is a home run. The space is SMALL. It is counter service so I didn't expect a giant place, but it is tight with a few tables that get absolutely overwhelmed with customers waiting in line or for their food (not pleasant when trying to eat). I also went on a weekday and had no idea that the High School kids basically line up for fries here in the lunch hour. I mean in the less than an hour here I think 2 dozen high schoolers came through). So I would only come back when school is not in service - trying to eat with dozens of backpacks in your face sucks. It is downtown so parking is on the street and metered. We had no problem finding a spot, but judging by the signs around at other businesses you should definitely be sure you are aware of when your meter is up. At any rate, it is an awesome burger. The ambience brings it down.

Wow!!! We got the hangover and classic burgers and sweet potato fries and it was phenomenal! Super cute store and great staff. Definitely one of our best burgers ever. We will definitely stop in on our next trip to COS.

We celebrated a birthday of a little one and Karen brought out a mini sundae for her to end our meal. It's a very cute place to walk into, as it has warm lights and greenery lacing it's exterior. The first site, really, is the counter of delicious sweets.
