If I could give more stars, I would. I called Matt (the owner) around 10 am asking if I could make an appointment around lunch time to bring over my set of knives (18 total) and a set of scissors. He said I could stop by at any time, so I told him I'd be there within an hour. Once I showed up we shot the shit for a few minutes and I was on my way. Less than an hour later he let me know that my knives were ready to pick up. Once I came back he walked me through the process of sharpening and how he takes it a couple extra steps further than most...extra sharpening and polishing belts. Overall Matt is extremely polite, responsive, reliable and accommodating with your schedule and I would absolutely recommend him to any of my closest friends and family. read more

And Matt is very nice too! He followed up with me to make sure I was pleased with the sharpness of my knives and also to remind me to "BE CAREFUL. THEY ARE VERY SHARP NOW" :-) read more

As you can see by the consistent 5 Star reviews, Matt is amazing when it comes to sharpening knives! I have a Henckel set that is 25 years old that were pretty dull. He assured me that after he sharpened them they would most likely be sharper than when I first got them. Sure enough, they are now razor sharp! Matt is very kind, super fast (only took less than 30 mins to complete the job), super responsive, and very reasonably priced. I even got to sit in his work area while he sharpened them and learned a few things about knives (like where to buy more knives for a good deal). I highly recommend Shear Performance Sharpening! read more

I purchased a set of very good knives (Shun Premier) - but then hesitated having them sharpened. I know I can ship them up to Oregon to the factory for sharpening, but then who can live without their knives? I got to the point where cutting things became frustrating, so I finally Yelp'd knife sharpening near Irvine and found Matt! After reading reviews and visiting his website, it was clear he was familiar with high-end knives, which was comforting. Then, I realized he could turn them around within the hour - what a bonus! I took my set, and my daughter's set of Shun knives over this afternoon and I couldn't be happier! Time to make some salsa! read more

I have two wusthof knives, two really good knives. And I am very picky when I need to choose a knife sharpening service. I'm relatively new to this area, and so far I knew only one knife sharpening service at South Coast shopping mall. This morning I realized that I can't wait any longer and experience frustration because of the dull knives again and again. I opened yelp and did a quick search for the service, didn't read the reviews, needed something quick and close to my place. sort of had to trust my fate :) and it worked out really really well! Matt did a great job sharpening a chef and a pairing knife, and what I loved about it that I didn't have to suffer couple days without knives at my kitchen: I dropped the knives around 8am and picked them up at 5pm, same day. Excellent location nearby your home. Don't be dull! read more

After reading other Yelp reviews, I decided to bring my dull as stones knives to Matt. What a fantastic decision and experience! My knives were in such bad shape that I was a bit embarrassed, but Matt didn't blink an eye and had them sharper than they've ever been in record time! Incredibly friendly, affordable and professional I won't go anywhere else to get my knives sharpened. Thank you Matt!! read more

I contacted Matt on an evening before the Thanksgiving holiday to have some knives sharpened for my Aunt. He responded surprisingly fast. I dropped off the knives to be sharpened the next day, went to run a quick errand, and before I finished, he had contacted me to inform me the knives were finished! My aunt swears they are sharper than the day she bought them. I will definitely be returning and referring friends and family! Awesome job. read more

I have a Shun Santoku kitchen knife and a Wusthof meat cleaver and over the years they have become quite dull. I tried sharpening them myself (after watching numerous YouTube videos) but did not see much improvement. At one point I was finding it difficult to cut a tomato with the Shun; that's when I knew I needed to find some professional who knows what they're doing. I then found Matt on Yelp and decided to give him a try. Matt was a delight to deal with. My Shun is now as sharp as a surgical scalpel, the way I remember when it came out of the box. The Wusthof cleaver is also very sharp, almost feels sharper than out of the box because the cleaver was never that sharp to begin with. The price was was great and Matt was really quick. I will definitely go back. My knives work so well now that I find myself looking for things around the house that could use a good sharpening to take to Matt. read more

Matt is very professional and affordable. He knows his trade well. My knives are the sharpest they have been since I purchased them. There was a quick turnaround; I received all 7 knives in less than an hour. In addition, he was able to fix a bent tip on a serrated knife. When I picked them up, he offered to do my two Shun knives for free since he had forgotten to tell me that all Shun knives qualify for free lifetime sharpening (although there is some wait time). I opted to pay him the full amount because I would not have wanted to be without them for a period of time. His honesty was refreshing. I highly recommend Matt for all of your knife sharpening needs. read more
