No less than Victor Hyman, a great-great-grandson of the founding Hymans, stopped by our table to make sure we were enjoying everything the restaurant had to offer. Check the brass plaque on your table or the plates hanging on a nearby wall to see the names of celebrities who have eaten there before you. But the biggest gem of all was Clifton, who managed several tables, but never let our water glasses drop below half full, who explained the restaurant's donation program (you select the charity, they give the money), and who pointed us to a sign on the wall that each employee passes every time they enter the kitchen: "Kindness matters.
