My first time at Seven Caves was December 2024. We went to celebrate our friend's birthday. Seven Caves is located directly next door to Embolden Brewing Company. The signage is small so keep an eye out. The owner, Jeff, is a riot! We did a tasting that was curated by him and our love for libations. He makes all of his spirits himself. His distillery started with gin which is why I'd never been because I don't like gin for any reason. I would love to say that I remember the different cocktails that he whipped up for us but we drank a lot and that was months ago. LOL. I can say everything was outstanding! My favourite was this fluffy daiquiri ice (Baskin Robbin's ice cream I love) flavoured cocktail that was indescribable but so stinking delicious. When our tasting was done we all lined up to purchase bottles. I bought a bottle of rum which was my favourite libation of the evening. This place is absolutely amazing!! They only do private tastings and they are incredible. You must go online to reserve a time. The owner will guide you though all types of his distills. He has all different types of Rums, Gins, Whiskeys and even battle aged maple syrup. You will be able to try the distills on their own and also mixed in a mini cocktail. After your Incredible tasting you have the opportunity to purchase bottles and if you are lucky, his canned ready to drink cocktails. The Seven Caves canned cocktails are some of the best canned RTD's available. I challenge anyone to prove me wrong. Will go back and often, can't wait to go again. read more

Jeff, the owner, distiller, accountant, HR manager,ect, is magical and fantastic. You can tell he's just doing this for fun. When we were there, there were 10 of us and we tried gin, rum and whiskey. But I feel I need to go back soon because he always has something new coming. I saw soy sauce in a barrel. I got two bottles of the rum aged maple syrup. Cans of his cocktails are at the local Total Wine. He didn't have a ton of the cans to sell. But I did get the Jasmine Tea rum and I'm looking forward to mixing with that. Suggested to come into this place by my cousin. After a hike near Poway we decided to stop in during our trek home. The distillery was closed to the public, but you could buy goods from the door (dec 2020) but we were greeted by a wonderfully aged German Shepard. It took a bit for us to be greeted by a human but the dog was a wonderful distraction. Especially the week before Christmas. The team seemed busy with orders. When we were helped we got nearly 1 of everything. No regrets. The spirits we purchased were incredible. The seasonal gin was spicy and perfect for Christmas cocktails. My husband mentioned that his drink had an almost eggnog flavor (I don't remember what the mix was). The whiskey was smooth. The Orange rum was my favorite. I gifted the agave spirit so I didn't get to try it but I'm sure I will be back for that goodness as well. This man is a wizard. I almost don't want others to know but the spirits deserve all the praise. Stop by and buy some quality locally made magic liquids. read more

A group of friends and I did the 1.5 hour, $25 per person tasting, a highly interactive session which is more than worth the money. We got to sample many different spirits, and then enjoy a mini cocktail made with that spirit. We were all super impressed with the experience and want to come again with new people. You have to book the tasting in advance with an online reservation, and you might have to wait a while for a free timeslot, but it's very fun. Most of us purchased bottles of alcohol and canned cocktails after the tasting because they were so good. The gins impressed us most here. read more

Coolest tasting experience I've ever had. At first, I thought I was in the wrong place because the location does not have any signs, but after searching around the side we heard Geoff telling us to come in. Geoff is the only owner/distiller/worker, a one-man operation, so you get insight on every part of managing a distillery. The warehouse is also really small but it's nice because you get to see all the machines and barrels while your tasting. For the tasting, Geoff started us off with Gin and would usually pour it raw first and then as a mixed drink after. Gin is not really my or my girlfriends spirit of choice but after this tasting we definitely have more of an appreciation for it. The tasting was very relaxed and kind of like a Q&A. Sometimes our questions even led to experimenting with ingredients so it was cool that he was flexible with the tasting. Geoff also had us try some Rum which he paired with some legit maple syrup that you just have to try. We learned so much from the tasting and it was such a surprisingly good time! read more

My boyfriend and I came here to celebrate his birthday with seven other people. We contacted Geoff beforehand via email to make an appointment and he was super helpful. We ended up opting for the $25 cocktail plus spirits tasting, and it was SO WORTH IT. Pro tip: Eat a big meal beforehand. I would definitely recommend the cocktail plus spirits tasting, because I think otherwise you'd miss out on some of the complexities and unique aspects of Geoff's spirits. We had multiple gins, rums, and whiskey's (and cocktails with each). The best part was that a lot of cocktails were seasonal, so you get a different experience everytime you go. During the tasting, Geoff was friendly, helpful, interesting, and informative. It's clear he loves what he does, and he's damn good at it. We loved everything we tried, and a few of us even bought some of his spirits and maple syrup after. I would highly recommend booking a tasting with him! We definitely plan on coming back! read more

Amazing tasting and cocktails experience for groups! Geoff is a thoughtful cocktail artist with an amazing ability to pair flavor and spirits. Range of cocktails we tried were traditional gin and tonic elevated by his delicious gin to the tiki inspired Fancy Poolside Punch (personal favorite, although hard to choose) capping off with a house made maple syrup (worth the trip alone) and charred oak rum old fashioned. My daughter scheduled a tasting as a birthday present for my son. Our family went and had the best experience ever. Geoff is very knowledgeable not only with his products but with the most amazing mixed cocktails that just blow your mind and open up your taste buds. My son in law brought some beers and hard tea for Geoff and he made some cocktails with it just from the top of his head. I highly recommend scheduling a tasting and buying some of the products. I visited Seven Caves today and was very impressed! Geoff (Who owns the place) greeted me and offered free hand sanitizer which is very hard to come by these days! I was looking for something to impress our guests with and Geoff recommended the rum. Served it to the guests and it was a home run! I am normally a Vodka Martini guy but after tasting Geoff's Rum I may switch my allegiance. It was outstanding! Also came home with 2 bottles of the Rum Barrel Maple Syrup.. This was the surprise of the night! The kids that were in attendance were served vanilla ice cream and had the syrup poured on top.. I'm sure it's good on pancakes, but served over vanilla ice cream was insane!! Can't say enough.. Reasonable price! Local San Diego business! Can't go wrong! Highly recommend. read more

Placed an online order for a maple syrup. The bottle looks beautiful, its delicious...the product itself is great. In a customer experience perspective the experience sucked. I work in the area Mon-Wed only cuz of covid, so when I placed the order for pickup I thought I would go grab it any day. I discovered in my email receipt that I can only pickup Thur-Sat 12 to 5pm...ok sucks cuz I live 30 miles away and if I dont have to come into the office, i dont drive down. I decided to call and ask if it could be shipped instead..No answer...this was 2 weeks ago. I called fri and sat no answer so I decided to email and ask about details on pickup or delivery options. Another week went by and still till today no answer. Already annoyed I just decided to drive down there. It was hard to find, from the front it looks like a warehouse, no signs to pickup door. I walked around and saw a lady waiting so I finally found the tiny delivery door thanks to a customer waiting. The lady btw was not wearing a face mask whole time she was interacting with im pretty sure was the founder. The only separation between him and the customer was a small table so since we are at 0% ICU capacity, she should have been wearing one but i guess. As I am waiting there for quite awhile because the pickup orders are not ready to go. The person in charge has a list with orders so he looks through and picks up your stuff...again this should be already prepacked but again ok...since I am waiting there for what feels like for ever I notice the many other lost customers having a hard time finding this place. I saw a man turn around about 4 times...stopping..looking at his phone...looking around lol so ya I wasnt alone. Anyway there is my rant...I understand things are hard, I understand we are rolling w the punches but because of this I feel like customer service should b key and this was lacking. I don't even know where to begin! Geoff was more than a joy and graciously hosted me and my friend while I visited from Long Beach. His distillery was my favorite part of the weekend. He is incredibly knowledgeable in every realm of the spirit's world. His product was phenomenal, but his genuine, whole-hearted run through of the complex distilling process sold me the dream! If you are even remotely close to this area, it's worth the pit stop. Make sure you make an appointment ahead of time so you don't rob yourself of the experience. 10/10 would spend countless weekends at this place if I lived closer. read more

What a unique experience. I've been to countless distilleries and breweries, and this place is a first among them. Rather than an hourly tour, Geoff basically invites you into the distillery like as a house guest and takes you through their history and products. Great, intimate experience with great rum and gin offerings (as well as maple syrup). It's a little hard to find, so look right next to Aquaneering (there's a small door on the side with a doormat that said "Not a meth lab"). read more

Highly recommend! Stopped by Seven Caves during an impromptu craft distillery crawl on a rainy San Diego winter afternoon. Geoff, the owner, invited us in and we sat around the tasting table as he regaled us with stories and explanations about every phase of his grain to glass process, from his very specific ingredient sourcing to the hand selection of the barrels he ages and finishes his spirits in. The tastings ran the gamut from unique new gins to a rye whiskey barrel aged rums and everything in between. The quality of the spirits was incredible. Geoff's enthusiasm for the craft, and hearing the stories behind each flavor profile, made them even better.
