    Summer Roll with yummy peanut sauce

    Had a chance to stop in for lunch today. The Pho was amazing. The broth reminded me of the early days of Pho in the US. Back when the broth was the star. The Summer rolls were very lovely and the peanut sauce was the real deal! And the gyoza was super crispy and a delight. I might have to make the drive again soon. Just for the Pho alone.

But the market parking is always full, so parking is challenging here. First impressions weren't great in all aspects... there were 3 tables in total but we had to wait to order. Although we did get the complementary shrimp chips and water immediately. THE WATER TASTES FUNNY... like a hint of dishwashing liquid was still there, it was not just me, I asked the entire table and they agreed. It's a great space so definitely hip... but not without a cost... trendy location means higher burden for the business and higher prices. I didn't think I'd see a pho special priced at $24 yet in Oregon but here we are. Granted bone marrow is not cheap and it's a very unique rendition. The other problem is the volume of noodles... literally the cheapest part of the dish... there was very little for a $24 bowl. We asked for extra noodles and they obliged for $2. Also that bone marrow was DIVINE if you're into that... but yet again... it's "butter" so what do I eat it with? The tiny amount of noodles or the fried donut that has a lot of oil content as well... my answer is... MORE NOODLES! Oddly enough the bun xeo which usually is a lot of work to put together the omelette was a good value. Yet once again just the lettuce pieces. I'm comparing to pretty much every PDX joint... which gives more than 3 lettuce leaves... because honestly the omelette has enough protein to make at least 5. They need to rethink this. Certain herbs are harder to get and we're in Eugene, the palate is different but more than just mint would be nice. Flavor wise it was fine... and I enjoyed it albeit on the tame side. The Staff was very attentive on water refills and clearing dishes. A lot of potential... but some things are just off balance.

I set my expectations low since I live in the SF Bay Area, where there are multiple cities with "Little Saigon" districts. Upon entering, we had to wait a bit before any staff person saw us to and get seated. They didn't seem overly, busy, so I'll attribute it to being short staffed, growing pains and still relatively new. The restaurant was very open and spacious. We were eventually seated at one of the taller tables in the front of the house many of the other patrons were seated at tables in the back of the house. Once seated though, our server provided an overview of the menu, recommendations and his personal favorites. We were given a small dish of shrimp chips...a childhood reminder for me and it was a nice touch. They were freshly fried, crisp and not greasy. We ordered the pho bo tai ($19), bahn xeo ($17) and the com chien (fried rice). Firstly, the com chien, a family recipe, was amazing! I was really impressed with this dish and would order it again. The banh xeo was a bit lacking--it wasn't bad, but nothing really memorable about this dish. While it was generously stuffed with bean sprouts/veggies, pork and a couple pieces of shrimp, the downside was it made the batter a bit soggy and the crispness vanished--pretty at presentation, it did not hold up well and fell apart while eating. The Vietnamese coffee was strong but it had a strange aftertaste--kind of soapy. The pho was alright--nothing stand out about it. There was plenty of meatballs, sliced beef and lots of broth. With the exception of getting seen & getting seated, service was good. Our server was attentive, checking on us regularly. Overall, I may check it out again and try other menu items on my next trip to Eugene.

When they returned in 3 minutes they were ready to take my order, and were receptive to my requested modifications to the dish. My steaming hot pho arrived about five minutes after I ordered it. The broth has a great flavor, and didn't seem too salty or oily. The aromatics were fresh, clean and plentiful. My only critique is that the noodles were about 15% overcooked. The restaurant uses noodles that seem a little more substantive than what I'm normally served, which I really liked. Overall, I had an enjoyable experience and I'd consider returning to try their other dishes.

They had friendly wait staff. The Ramen came quickly since it was after lunch hours I do think they could take some time and repair the bench seat that are torn and the bathroom was pretty messy looking.
