    Summer Roll with yummy peanut sauce

    Had a chance to stop in for lunch today. The Pho was amazing. The broth reminded me of the early days of Pho in the US. Back when the broth was the star. The Summer rolls were very lovely and the peanut sauce was the real deal! And the gyoza was super crispy and a delight. I might have to make the drive again soon. Just for the Pho alone.

    Spicy Chicken & Korean Fried Rice. Chicken was great.

    Great service and great food. Never disappointed. The stir fried cabbage salad is so delicious. I can't get enough of Mark's Favorite, it's very delicious.

The second bite included nicely herbed noodles with fresh, good quality lettuce, mint and cilantro. The third bite, and majority of the dish unfortunately, contained overcooked, chewy chicken. The fish sauce mixture lacked birds eye chili, acid and seasoning. Dry chicken dominated, but ironically components that require more delicate treatment were prepared well. The fried spring rolls (cha gio) were greasy, missing that blistered, bubbly skin.. My companion ordered a strawberry matcha and the vegetarian bún: nice and herby and green, but lacking that good flavor (chili, acid) in the Nước Chấm fish sauce. It shouldn't be solely up to sriracha to get a dish to the right flavors. In all, a nice spot aesthetically and friendly staff but while dishes had super fresh veg and some solid proteins, other proteins were overcooked and our dishes were missed some of the flavors we love to see in Vietnamese food.

I dislike when restaurants skimp on the fresh ingredients, but this was perfectly balanced. The broth has a great flavor, and didn't seem too salty or oily. The aromatics were fresh, clean and plentiful. My only critique is that the noodles were about 15% overcooked. The restaurant uses noodles that seem a little more substantive than what I'm normally served, which I really liked. The outside is crisp and flaky while the inside is soft and chewy. I asked for chicken as the meat choice. I enjoy how the carrots and cucumbers are sliced in a square straw. I think that provides a nice texture in every bite. The wonton noodle soup was delicious. I've never had soft wontons before. They've always been crispy nibbles on a side plate. I like that in this dish they were part of the soup. I was a little disappointed in the vermicelli noodles though. Since she is quite sensitive to hot spices, we are careful to order the lowest level of chiles offered in dishes we order. I, then, increase the heat level by using the chiles available at the table. In that way we are able to share different dishes served "family style." My own favorite dishes are the egg rolls (Chả Giò) and the vermicceli salad (with grilled pork and egg roll). We also dislike the fresh coriander so ask them not to use it in dishes we order.
