If you have never heard of the movie, that is a lot of their problem. The hotel and restaurant are resting on their laurels from a movie from the 1950s. If you took a date to see Giant when it first came out, you probably need food you can gum. We were here two years ago and had a good experience so we came back and were sorely disappointed. Service was appallingly slow because there was one waitress (who was great) for the entire restaurant and patio. There was one bartender. Very short-staffed. We had drinks and chips and salsa on the patio before moving inside for dinner. Entrees on the menu were chicken and veggie burgers (no beef?) and chicken was out. The other entrees were the pistachio-crusted steak (basically fancy chicken fried steak) and a ribeye. They were out of the pistachio-crusted steak. So, it was a veggie burger or a ribeye. No chicken dishes, no fish, no pasta. A frozen veggie burger or a $45 ribeye. We started with a a charcuterie board which was tasty but not very generous. The ribeyes were served on mashed potatoes and very good, but there was no vegetable, no bread - just steak and potatoes. I don't mind the price of the steak but part of that price is service and if there is one server for an entire restaurant and the patio, the service is not going to be that good, and it wasn't. Drinks were not refilled, dessert wasn't offered (they might have been out!), so it was eat and run. So, staffing issues, inventory management issues and a restaurant that had a number of customers to serve so they should do better. Much better.

Accessibility and mobility concerns were a factor in our decision, and Hotel Paisano's website gave no indication that its elevator was out of service. Upon arrival, we were informed that the elevator was not working and would not be repaired during our stay. Every guest room requires climbing at least one flight of stairs, making this a significant issue for anyone with mobility limitations. What was most disappointing was not just the outage itself, but the fact that it was never disclosed before our arrival. We were also told at check-in that the restaurant was closed for renovations and no food service would be available. One of the reasons I selected this hotel was because the restaurant menu looked more appealing than those offered by other hotels in town. Again, this information was not communicated in advance. We were informed that the bar would remain open until 3 p.m. each day. However, when we visited around noon on Saturday, we were told we could not order drinks because the space was being reserved for a private party later that evening. That same party continued until 10 pm and the noise was loud enough to be clearly heard from our room. The party guests extended into the pool area. Event attendees were allowed to use the pool, and guests in formal attire were jumping into the water fully clothed. While that may have been entertaining for those attending the event, it created an atmosphere that felt more like a private venue rental than a hotel serving paying guests who were expecting a quiet and relaxing stay. The guests were also taking photos with a very bright flash camera. Every flash penetrated through both the sheer and formal sets of curtains in our room and made relaxing and sleeping impossible. Any one of these issues might have been manageable had they been disclosed before booking. Instead, guests were left to discover them only after arrival. I was particularly troubled by the apparent lack of concern regarding guests with mobility challenges. When a property has no practical access to guest rooms except by stairs due to an inoperable elevator, that information should be communicated prominently before a reservation is made so travelers can make informed decisions based on their needs. The hotel seems to rely heavily on its historic reputation and charm, but historic character should not come at the expense of transparency, accessibility, or guest service. The elevator outage, restaurant closure, restricted bar access, and late-night private event created an experience that felt far different from what was advertised.

It was a daily special but it needs to be a full time item. Hopefully if you're lucky they'll have it for you - prosciutto, brie, and some amazing jams. If you're not lucky, however, the award winning burger is always a delicious choice and the charcuterie board perfectly compliments an afternoon of drinking wine. Stayed at Hotel Saint George in Marfa and overall had a decent experience, but with a few quirks…read moreworth noting. First, the positives. The linens and bedding were so good--super comfortable and cozy (Hi, Marfa brand I think?). Honestly, I wanted to take them home with me... if anyone knows where to buy them online, let me know. The Aesop bath products were also a big plus, though they accidentally had the hand soap in the shower and the body wash at the sink--and since they're locked in, there's no swapping them. Minor detail, but a little funny. Rooms themselves are large, open, and feel spacious, which I appreciated. Now for the downsides. The biggest issue was noise. You can hear pretty much everything--people walking above, talking next door, doors constantly slamming. Not ideal if you're hoping for a quiet, restful stay. The lighting in the room was also a bit lacking--definitely could've used an extra lamp or two to warm things up. The overall design is nice but starting to feel a little dated... kind of like a W Hotel refresh from around 2015 that hasn't been touched since. And the bathroom sink... I don't know what's going on there, but without any kind of filter on the spout, the water splashes everywhere. I somehow ended up with a wet shirt and pants just from washing my hands. A couple other things to note: the restaurant and bar seem to close early (around 9:30), and when we were heading out at 10, nothing was open--so not sure if they offer breakfast or coffee in the morning. If not, that feels like a missed opportunity. All that said, the staff was friendly and welcoming, and for a small town like Marfa with limited options, it's still a solid choice. Would I stay again? Probably. Would I call it luxury? Meh.
