FANTASTIC ice cream. We were lucky to get to try Scoop at the Flavors of Colorado festival in Avon…read more This ice cream was so popular that by the time we were ready, he only had vanilla. I'm glad that was the case because it was, by far, the best vanilla ice cream I've ever had. On the second day of the festival he had cookies and cream as well, and we tried that. Again, just splendid. If I lived locally, this would be my ice cream of choice.

We hired Red Maple Catering for a welcome reception the day before our daughter's destination…read morewedding and were extremely disappointed with our experience. While the service and staff was courteous and professional, the quantity of the food was very far below our expectations. We had agreed upon a menu consisting of three appetizers and two stations, yet on the day of the event we were served five appetizers instead. This created an extremely embarrassing situation for us as hosts, as the food ran out far too quickly and guests left unsatisfied. Given the cost, the reputation of the company, and the careful planning that went into our event, this outcome was deeply disappointing. We definitely do not recommend this caterer based on our experience.

Everything was so delicious and the process of working with Shelby was completely painless and could not have been easier. She sent over a list of menu options with so many great choices that it was difficult to narrow it down. In the end we settled on crispy pork belly and eggs for breakfast, beef and lamb birria tacos for lunch, and a three course dinner including elk empanadas, oxtail osso buco, and pistachio tiramisu. We could not have been more happy with the experience. The food was spectacular, Shelby was a joy to work with, and it's clear she really loves cooking for people and takes great pride in what she does. It was fun to watch someone who is so good at what she does execute on some of the best meals we could have asked for. Highly recommend Eat Dank Food and will definitely work with Chef Shelby again without hesitation.

I learned about Mindful Roots when Carrie catered an event with jackfruit chili and all the fixings. It was *the best* chili I've ever had. Soooo many vegetables!! I decided to start ordering delivery from Carrie because I realized that my typical millennial diet (charcuterie) was not serving me and that I'd probably get scurvy. With grocery costs going up and fatigue at the end of the day, I just never found myself wanting to cook. The meals are soooo delicious and way better than what I could prepare on my own for three cost or with my skill set Overall, I totally 100% recommend checking out mindful roots because it's not only great food/quality, but we are supporting a local business!
