    Wow, what an experience. A tour through the history of Mexican cuisine. We got the prix fixe menu. Loved it. Great hospitality So much detail on history and well thought out dishes. I did the wine pairing which interestingly was only from producers of minority / underrepresented groups. Just go check it out

    Collaboration dinner with salt and straw. Seven course tasting menu. Everything paired with ice cream. It reminded me of eating at Alinea- such as the cheese is looking like cheese, but actually being a type of ice cream. Or putting the dipping dots into a sushi style dish. The most memorable item was the green popsicle. Because it looks so non-descriptive, but had so much flavor and had the most discussion. That was the sugar snap pea Plata with housemate Tajin. However, everything we ate was amazing. Once in a lifetime experience. Incredible service, and beautiful location. Looking forward to trying it again in the future.

    We had an incredible Chefs tasting. The absolute best flavor coming from the beef short rib with pinko crust, served along side an absolutely amazing mole. To be correct.. the best I can describe it is.... A symphony on your mouth...to be politically correct ;) as this was another level! Every dish from the tasting course tasting was magnificent. How can carrots be a star? Carrots took second, but they all shined bright. With the chef specializing in the corn and mole sauces. The oyster was so well balanced with sweet, acids and heat that hits you at then end. A wonderful bright experience! We paired it with the wine flight that was impeccably matched to each dish. An experience worth every bite. Thank you Chef!

    If you are looking for an exciting and delicious dinner then I highly suggest the tasting menu experience at República. Beyond the delicious food and wine, you are treated with stories of how Spanish colonialism transformed the ancestral food of Mexico. Phenomenal ambiance, I love how everything is directed towards the chefs and bartenders creating your meal. It is like watching a Broadway play. The experience is incredible and is equal parts history lesson and Michelin style service. This restaurant should definitely be on your Portland culinary bucket list.

    I came here a while ago but forgot to write about the phenomenal dining experience that I had here! Dining here is not just about the food but it's a journey through the history of Mexican culture through its food. The staff here are phenomenal at their jobs, educating about the background behind the dish, and super friendly. The inside of the restaurant is spacious, dimly lit, but warm and lively. My group did an 11 course meal and all of us loved it. Each of the courses were so fun and truly an experience to eat. We learned so much and even tried things that we've never had before. Genuinely had such a great time here and I highly recommend everyone to try this spot out!

    Sorry to say... this place was a disappointment. The price for the tasting was not worth it. The presentation of the food looked so good but nothing stood out to me. And to top it off... my fiancé was served RAW, undercooked pork! The waitress apologized but that was about it. And I was so annoyed at the couple sitting next to us because I could hear the dude mocking my fiancé about the raw pork. Mind your own business.

    I can't close out the year without giving some love to what was probably the best dining experience my husband and I had in Portland this year. Dining at Republica is truly a special experience, and if you're looking for a fine dining experience that is worth every penny, this is it! Republica offers a 7-course tasting menu and a 10-course tasting menu; we enjoyed the latter. At $150 per person, the 10-course tasting menu is very reasonable, especially compared to other tasting menus at similar fine dining restaurants. Also you should know that gratuity is included, to allow the restaurant to offer living wages to its staff. Before I get into the food, let's talk location and ambiance. The restaurant is right in the Pearl District, and honestly, I always find street parking right around this area, so it's never been a problem for me. The Max also stops right out front. The restaurant is a large, mostly open space, with a wide open kitchen so you can see the chefs at work. I actually really enjoyed watching their interactions with each other throughout the dinner. Tables are well spaced apart, which is perfect for a date night out, especially if you are at one of the smaller tables closer to the open kitchen. Now let's talk about the food: it's exquisite. Each course is presented with a short explanation of the ingredients and a little history thrown in, which I love. Many of the ingredients I had never heard of or never tried, and the combinations were exciting and interesting. They also did an amazing job making changes to the dishes based on my milk protein sensitivity. Wine lovers will appreciate the wine list, which is well curated and focused on LGBTQ+ and women winemakers. We had two different wines which were suggested to pair well with our meal, and they both delivered. The service here is one of the best in the city. The wonderful people who work here clearly care about the work that they do, and they deliver the dishes with such warmth, kindness, and respect. This is food as art, as history, as storytelling, as celebration - at its finest. Yet they also make it all approachable, not stuffy; it could easily be pretentious, but it's not. And I think it's because the people make the whole experience so FUN. This might be my favorite restaurant in Portland right now. And that's saying A LOT! I'm so grateful dining experiences like this still exist, and I'm glad it's so close to home. My husband and I cannot wait to go back!!!

    An exquisite and thoughtful experience! I absolutely enjoyed every second of it. The 10 hour tasting menu was about 3 hours so keep that in mind, but time flew by trying all the amazing dishes. The staff anticipated our every need. I dropped a napkin and not even a sec or two later, a new set was on my table. The space itself was immaculate. The drinks were an artwork. The food was exquisite.

    An excellent experience here. You come for the food and stay for the storytelling. No really, you do have to stay because it's a 3 hour dinner for the 10 course meal. We were in for a treat because they took us on a wonderful with each dish. It's carefully crafted and beautifully executed. Some dishes were good but others were phenomenal. The cocktails were a tad pricey but delicious and strong. The ambiance was immaculate and every staff member nailed it on guest experience. Make sure you make a reservation!

    My husband and I had the most incredible experience at Republica! We had the ten-course tasting menu and they fully accommodated our dietary restrictions and preferences (I'm a vegetarian). Every dish was delicious and came with a story behind the meal. All of the drinks came from wineries that were women, lgtbq, or biopic owned. The service was amazing and we felt cared for the entire time we were there! We can't wait to be back the next time we're in Portland!

    Alright here we go. I have waited many months to write this review as I knew it was going to be a long winded one and needed to be in the right moment to put it all down. Allow me to begin at the point of reservations. Reservations were seamless and they were willing to accommodate the dietary needs of those in our party so we were off on a great start! We came in for dinner on a weekday and nearly had the place to ourselves so it was a very peaceful vibe throughout. The dishes served to us were great. Flavors were excellent and the story behind each dish enhanced the experience that much more. Service was incredibly attentive as they joked around with us and ensured every need we had was met, just as any fine dining restaurant would. Now we get to the ugly part. Our service took a hard dip once we complained about a dish in our meal. The duck, which was set to be the main course, was so insanely dry that it could basically be categorized as jerky. All 5 of us at the table couldn't finish it because of how dry it was. It was slathered in sauce so we couldn't see the color but we were fairly confident it was burnt. Since it was just one course of the 10, we didn't pay too much attention to it assuming that the quality was intentional and that we just weren't fans of the preparation. The table beside us was one dish behind us in the tasting menu and when they got their duck, the meat was practically glistening and a different color than ours. The sauce wasn't dumped over the meat but rather beside it. This prompted us to think that the duck they served us was actually overcooked and not intended to be how it was served. We brought this to the attention of the waitress and all of a sudden, service completely went downhill. No more back story on the coming dishes, no jokes, no smile when coming to our table. This is an expensive meal and we didn't even get to eat the main course so we were hoping they would rectify the situation. Instead, they brought us shots as an apology... main course is ruined soooo how does shots of alcohol rectify? Also, 2 people in our party were not drinking alcohol so how thoughtless. We left the restaurant hungry since the dish with the most amount of sustenance was inedible. I wanted to give the management the benefit of the doubt so I emailed them directly that I wanted to speak with someone over the phone. I'm in the hospitality industry so I understand oversights and just wanted to give them the opportunity to correct it. I was told that the manager would reach out to me directly the next day. No contact. A week later, I reached out again and was met with no response. So yes the other dishes of the night were good but not nearly enough to justify the high price point. Service is excellent until you have anything to say that's not a glowing review. They also don't care about your feedback. Not only will I never come here again, but I'll also be spreading the word about the lack of professionalism here. Such a shame.

    We have sat outside. Patio is covered. They have heaters. Dress in layers in case of cold weather. Only bad clothes. Chow!

I have been craving Pozole for a long time, and they had it as a special chicken with green sauce, and pork and a red sauce. Both simply amazing and a great deal. This restaurant is very reasonable, and you get quite a lot for the money. Last but not least I can't forget the ambiance which felt very authentic, and reminded me of being in a Taqueria in Mexico or Southern California. the place is decorated very thoughtful with a lot of candles, and many shrines. They also have a love of Mariah Carey and saw many photos of here in the restaurant. They have both outdoor seating and indoor seating. Guero also has fantastic drinks and their destilados offering is truly outstanding. Whether you are exploring mezcal tequila or other agave spirits the selection here is thoughtful and exciting. I have had some meals at the bar where the bartenders were genuinely engaged knowledgeable and happy to walk you through their agave list which only enhances the whole experience. I will be honest and say that the service can sometimes lean into the typical Portland vibe of aloof and uninterested but there have also been moments especially at the bar where the staff really shines and makes you feel welcome and taken care of. Even with that quirk the overall experience is fantastic and it does nothing to take away from how much I enjoy eating here. If you are in Portland and love great tortas bold flavors and exciting drinks Guero is absolutely worth a stop. I will continue to come back every time I am in town and I would recommend it to anyone looking for a memorable meal.
