We dined at República while visiting Portland. We were excited to try this spot, especially with its focus on Mexican cuisine paired with Pacific Northwest influences. We opted for the Dinner for Two, which we felt was a good value at $136 for six courses. The menu the night we visited included seasonal brassica, Tlayuda del Pacifico, Quesadilla Oaxaqueña, Tlacoyo, Birria, and a chocolate mousse for dessert. The meal was originally set to include seared seabass, but my partner asked if it could be swapped for the short rib. The kitchen was happy to accommodate, which we appreciated. There were some real highlights. The Tlayuda del Pacifico was my favorite savory dish of the night. Served on a crisp blue tortilla with hamachi, avocado, and pea tendrils, it felt light, well-balanced, and full of contrasting textures. I also really enjoyed the salsa macha that accompanied the quesadilla Oaxaqueña, it had great depth and flavor. The Tlacoyo, filled with chicken tinga and finished with tomatillo salsa, had good flavor as well, though it felt a bit heavy for me with the tamal-style base and crema. Dessert was another standout; the chocolate mousse was well done and a strong way to end the meal. The remaining dishes were good, but not especially memorable. My main critique was the pacing of the meal. Courses were coming out too quickly. At times, we were only halfway through one dish when the next arrived. For a tasting-style dinner, the pacing should feel more intentional and relaxed. When the kitchen moves too fast, it can take away from the overall dining experience. This is an area where reading the table better would really elevate the experience. Service overall was good and attentive, and the food itself was solid. Would we recommend it? Yes, especially for those looking for elevated Mexican cuisine that goes beyond the standard offerings. The Dinner for Two is a good value and worth trying. I dined alone at República and chose the ten course tasting menu with the paired wines from Mexico and it turned out to be one of the most rewarding dining experiences I have had. From the first course to the last every dish was absolutely delicious with bold expressive flavors that felt both thoughtful and exciting. Each plate arrived with purpose and confidence and it was clear how much care and intention went into every element. The wine pairing was a revelation. I had very little experience with wines from Mexico before this dinner and I was genuinely pleasantly surprised. Each pairing complemented the dish beautifully and added another layer to the experience rather than competing with it. The wines felt intentional balanced and memorable in their own right. Dining alone actually heightened the experience. It allowed me to fully focus on the food the stories behind the dishes and the craftsmanship on display. The service was warm attentive and knowledgeable making the evening feel welcoming rather than formal. I truly adored the entire experience at República. So long, República. I was resistant at first, on principle, but you showed there was value in splurging $200 for Mexican small bites and a history lesson. Collaboration dinner with salt and straw. Seven course tasting menu. Everything paired with ice cream. It reminded me of eating at Alinea- such as the cheese is looking like cheese, but actually being a type of ice cream. Or putting the dipping dots into a sushi style dish. The most memorable item was the green popsicle. Because it looks so non-descriptive, but had so much flavor and had the most discussion. That was the sugar snap pea Plata with housemate Tajin. We had an incredible Chefs tasting. The absolute best flavor coming from the beef short rib with pinko crust, served along side an absolutely amazing mole. To be correct.. the best I can describe it is.... A symphony on your mouth...to be politically correct ;) as this was another level! Every dish from the tasting course tasting was magnificent. How can carrots be a star? Carrots took second, but they all shined bright. With the chef specializing in the corn and mole sauces. The oyster was so well balanced with sweet, acids and heat that hits you at then end. A wonderful bright experience! We paired it with the wine flight that was impeccably matched to each dish. I came here a while ago but forgot to write about the phenomenal dining experience that I had here! Dining here is not just about the food but it's a journey through the history of Mexican culture through its food. The staff here are phenomenal at their jobs, educating about the background behind the dish, and super friendly. The inside of the restaurant is spacious, dimly lit, but warm and lively. My group did an 11 course meal and all of us loved it. Each of the courses were so fun and truly an experience to eat. We learned so much and even tried things that we've never had before. And to top it off... my fiancé was served RAW, undercooked pork! The waitress apologized but that was about it. I can't close out the year without giving some love to what was probably the best dining experience my husband and I had in Portland this year. Dining at Republica is truly a special experience, and if you're looking for a fine dining experience that is worth every penny, this is it! Republica offers a 7-course tasting menu and a 10-course tasting menu; we enjoyed the latter. At $150 per person, the 10-course tasting menu is very reasonable, especially compared to other tasting menus at similar fine dining restaurants. Also you should know that gratuity is included, to allow the restaurant to offer living wages to its staff. Before I get into the food, let's talk location and ambiance. The restaurant is right in the Pearl District, and honestly, I always find street parking right around this area, so it's never been a problem for me. The Max also stops right out front. The restaurant is a large, mostly open space, with a wide open kitchen so you can see the chefs at work. I actually really enjoyed watching their interactions with each other throughout the dinner. Tables are well spaced apart, which is perfect for a date night out, especially if you are at one of the smaller tables closer to the open kitchen. Now let's talk about the food: it's exquisite. Each course is presented with a short explanation of the ingredients and a little history thrown in, which I love. Many of the ingredients I had never heard of or never tried, and the combinations were exciting and interesting. They also did an amazing job making changes to the dishes based on my milk protein sensitivity. Wine lovers will appreciate the wine list, which is well curated and focused on LGBTQ+ and women winemakers. We had two different wines which were suggested to pair well with our meal, and they both delivered. The service here is one of the best in the city. The wonderful people who work here clearly care about the work that they do, and they deliver the dishes with such warmth, kindness, and respect. This is food as art, as history, as storytelling, as celebration - at its finest. Yet they also make it all approachable, not stuffy; it could easily be pretentious, but it's not. And I think it's because the people make the whole experience so FUN. This might be my favorite restaurant in Portland right now. And that's saying A LOT! Alright here we go. I have waited many months to write this review as I knew it was going to be a long winded one and needed to be in the right moment to put it all down. Allow me to begin at the point of reservations. Reservations were seamless and they were willing to accommodate the dietary needs of those in our party so we were off on a great start! We came in for dinner on a weekday and nearly had the place to ourselves so it was a very peaceful vibe throughout. The dishes served to us were great. Flavors were excellent and the story behind each dish enhanced the experience that much more. Service was incredibly attentive as they joked around with us and ensured every need we had was met, just as any fine dining restaurant would. Now we get to the ugly part. Our service took a hard dip once we complained about a dish in our meal. The duck, which was set to be the main course, was so insanely dry that it could basically be categorized as jerky. All 5 of us at the table couldn't finish it because of how dry it was. It was slathered in sauce so we couldn't see the color but we were fairly confident it was burnt. Since it was just one course of the 10, we didn't pay too much attention to it assuming that the quality was intentional and that we just weren't fans of the preparation. The table beside us was one dish behind us in the tasting menu and when they got their duck, the meat was practically glistening and a different color than ours. The sauce wasn't dumped over the meat but rather beside it. This prompted us to think that the duck they served us was actually overcooked and not intended to be how it was served. We brought this to the attention of the waitress and all of a sudden, service completely went downhill. No more back story on the coming dishes, no jokes, no smile when coming to our table. This is an expensive meal and we didn't even get to eat the main course so we were hoping they would rectify the situation. Instead, they brought us shots as an apology... main course is ruined soooo how does shots of alcohol rectify? Also, 2 people in our party were not drinking alcohol so how thoughtless. We left the restaurant hungry since the dish with the most amount of sustenance was inedible. I wanted to give the management the benefit of the doubt so I emailed them directly that I wanted to speak with someone over the phone. I'm in the hospitality industry so I understand oversights and just wanted to give them the opportunity to correct it. I was told that the manager would reach out to me directly the next day. No contact. A week later, I reached out again and was met with no response. So yes the other dishes of the night were good but not nearly enough to justify the high price point. Service is excellent until you have anything to say that's not a glowing review. They also don't care about your feedback. Not only will I never come here again, but I'll also be spreading the word about the lack of professionalism here. Such a shame. read more

Its funny how I thought República was so popular before I dined with them ,and now that I have visited them, I feel that they are not popular enough because they need more hype than a cat video on the internet! Everyone needs to go and experience the gastronomical delight that this place is . I made reservations a couple months in advance for the 10-course menu and so glad for that since I got the exact time and date I wanted. Sitting down to a tasting menu at República, each course is introduced with a story: An explanation of an ingredient's origin, a history of a dish and its influences. The restaurant is big and spacious but it does look a little barren .. like lots of open space which kind of takes away from the place being a little more intimate . They started us off with some drinks and proceeded to introduce one course after the other. Every dish comes with a story and the way the staff narrates it adds to the whole experience. What we truly loved was that the restaurant is based on a collaborative model where no single chef is the star, and dishes from various regions of Mexico make an appearance. I wouldn't go into the details of each course because honestly you can't pick and choose anyways and secondly because almost everything we had was fantastic . The Desserts sealed the deal and knocked our socks off. Hell, they even sent us back with a small take-home dessert . It was so fun to unwrap and have it the next day. We didn't get the wine pairing but ordered a few high end Mezcals to taste as well as wines. The drinks went very well with the food. The waitstaff are incredibly attentive and kind. They teach history through ingredients and techniques brought from different cultures. The entire staff is knowledgeable, helpful, and approachable. Ask them questions about anything on the drink menu or the plate and they'll give you a surprising amount of depth that highlights how much thought has gone into sourcing and preparing each item that hits your table. Pacing is great, so the meal doesn't go overly long. Because we were afraid of the 10 course being a long, drawn out affair with too much food, we opted for the 7. I finally got to try Republica when out of curiosity I checked on reservations a couple of months ago and found some availability. I dined on a Saturday night and went with the 7-course tasting menu. You let them know after you reserve whether you want to do the 7 course or 10 course. I opted for the 7 course because I wanted to get home early, but have to say the kitchen is so efficient the 7 courses just flew by. So now I regret not doing the 10. (They budget 1.5 hours for the 7 course and 2 hours for the 10, but I was done in an hour.) The ambiance and service is what you would expect from a high-end restaurant with tasting menus, and the food actually matches that standard. The quality and creativity reminded me of tasting menus in San Francisco and New York. Everything was refined and perfectly cooked, and I appreciated the Mexican infusion into the creations. They're great with explaining the concept of the dishes, which can't really be traced to any particular Mexican dish because these are all new creations, but pieces of it have memories of a particular Mexican ingredient or flavor. Opted for the 10 because why not~ Now the restaurant itself is so cozy and quiet inside; I love that it is more of an open kitchen so you can peek a bit at what's being prepared. The staff and their level of service is seamless and honestly every single person was so kind. My husband grabbed a non-alcoholic drink while I decided to the wine pairing -- we both enjoyed our choices and would do it again. Foodwise, gosh where do I begin? I am always so cautious with tasting menus because the vegetarian version will either stand up to the meat or be a complete afterthought. I honestly say that my omnivore husband and my leaf eating self both loved our food to death. Every dish was delicious and I have 0 complaints. Every single ingredient was treated with care and it was honestly humbling to learn about the origin and history of the food and the wine. I dine out at a table-service restaurant about twice a week, and it's been a looong time since I've eaten someplace in Portland that I was excited to tell my friends about. Republica is amazing because it actually is FINE DINING! Puts so many trendy and busier restaurants to shame. Menu was creative and different w/o being weird. Service was attentive and informative, but unobstrusive (you know, like you used to be able to count on when you were paying for a nice dinner out). Lovely ambience and lighting. I wasn't crammed in next to other diners. My chair was comfortable. Music was exactly what restaurant music should be -- pleasant, suited to the place, and played quietly in the background. Beautiful place settings. And the food was unbelievably good. I've grown weary of $$$ meals out where I have to wear earplugs to blunt the "music", am served myeh food, the chair seems to have been chosen so as to get me out of it as soon as possible, and the server does not seem to understand that the job requires more than dropping off plates. The food, mixed drinks, and service were all fantastic. I really enjoyed what they did with the dishes (some were very small however not unexpected) and some of the best mixed drinks I've had. All the flavors were very well balanced and nice transition from dish to dish as going through the meal. The space is also really nice with the taller ceilings and open plan yet still a cozy intimate feel. (Loved their table lamps) Unfortunately I would have a quite difficult time recommending someone head here as it is about a 3 hr experience so you never really get satisfied due to the smaller dish size and such a long timing between them. If they reduced the overall timeframe to 1.5 or possibly 2hrs (could just do two seatings per night if that helps with efficiency) then would highly recommend. I don't think you should go to a place like this where everything is great and expensive but then the experience is brought down by needing a burrito or pizza slice after. Would also be awesome if they had a few bar seats at this location for anyone to come in and just enjoy the mixed drink offerings while in the pearl. read more

Having a dinner experience at Republica is unlike any other. You experience the food of Chef Jose Camerena through storytelling, with each dish curated and inspired by Mexican history. Given that it is tasting menu, each dish builds on the last dish, and the intention of flavors is deeply routed in Mexican ingredients. On a recent trip to Portland, I surprised my partner with a birthday dinner to Republica. Given that we had reservations, we were seated at a table, and we were quick to notice that all of the tables and chairs faced the kitchen, giving the feel that you were experiencing your own chef's table. Watching the kitchen, it was clear that all of the chefs were working in tandem, and it was a beautiful thing to see. The restaurant offers a wide range of unique cocktails and wine selections. On the night that we were dining, they had an option to participate in a wine pairing with dinner that featured Mexican vineyards that also were women-owned. Given that we wanted to try some of the cocktails, we opted out of the wine pairing, but it was amazing to hear that they were featuring women-owned vineyards. The staff are extremely knowledgeable and were able to guide us to cocktail selections that we would like, and they were amazing! As for the food, I don't think my partner and I have experienced anything like it. Everything was elevated, intentional, and again, rooted in Mexican history storytelling. As our server brought out a dish, they would indicate the inspiration behind it through Mexican history, and they delivered each dish with such passion and excitement. Some of my highlights were the stuffed quail with a tomatillo and leek salsa, a cured salmon with hibiscus water, and the puffed blue corn tortilla with vegetables and goat cheese. There was also a salsa verde to begin the dinner that I wish they sold because I would have purchased 10 cans of it. Overall, this was an incredible experience with a unique flair to it. They totally forgot one of our courses... Sometimes the person really explained the food, sometimes they knew next to nothing. Like a see-saw- so up-and-down.... However, for 4 people for the 10 course meal and about 2 drinks each it was $1000. It was not worth $1000. The double whisky was $30. I only enjoyed one plate, the fish. The rest were not good at all. Also it was not enough food. One tablespoon plates so 1-2 bites per dish. I am adventurous. I like sushi and food from all over the world. This food is not good here. For that, it was a unique and enjoyable experience learning the cultural background to each tasting presentation. Wine pairing was interesting to enjoy from areas we would have never thought of trying. Service ~ every tasting was explained in extravagant detail from parts unknown to us which made it a bit complicated to follow. The wine pairing was presented in more of an easier to follow tone. Ambience? Looked like a pop-up bar setup. For the money, the use of plywood alternative OSB counter and walls did not match their mission to share about the culture. The open kitchen was a hectic distraction of employees stocking supplies and moving equipment, not the art of cooking. Our 7 course dinner was really enjoyable. We loved the history and informative explanations of each dish. The wine pairing was fantastic and very interesting, it really added to the experience. The service was phenomenal, everyone was very attentive. The food was really good, some unique flavors and preparations. The plating was done very thoughtfully. Our only complaint is that the portions were too small. Granted it is nice to leave a dinner not feeling so full that you can barely walk, but it's disappointing to leave still feeling hungry, which all three of us did. Especially for the amount we paid. This is really difficult for me to write purely because we made reservations 2 months in advance and were so excited to try this place. Each of us got to enjoy a different dish, and each dish had its own story. Hubs and I enjoyed the story telling. We enjoyed the service and special care and attention the waiters and waitress' took. The food was displayed like a Michelin-star place (we've been to our fair share just for comparison, not for bragging), but the food felt like it fell short in terms of taste. Nothing stood out to us, like "wow, this is Amazing," and we would have def left hungry had we not been half-filled from pizza we had at home an hour earlier. There were a number of spicy dishes, so if you are not a fan, would def recommend mentioning to them. We did see their lunch menu and felt like that would've called to us more.
