It was 110 degrees in hot San Berdu but I had a cold. I needed soup. Where can I get soup around here? Fellow Yelpers led me to Ramen Jo. And wow, they were right! Tontsuku with pork. Less noodles at my request. (I don't eat a lot of noodles). Me, humming a tune after tasting the broth. The broth is AMAZING!!! So full of flavor I just could not get enough! The service was good. And I guess because it was slow, I got lucky! The cook came out and asked me how the food was. I told him how much I loved the broth and that the noodles are made in-house. We chatted for awhile, such that I felt I could tell him the one area that could improve and he not be offended. So I told him how other Yelpers mentioned the meat wasn't tender but chewy. My wife and I were honestly surprised by how flavorful the broth was. Ramen Jo has the best tonkotsu broth in the Inland Empire, hands down. Kaz Ramen used to be our favorite, but ever since they went 24 hours, the quality and flavor just hasn't been the same. Ramen Koko in Highland is still pretty good, although I think the presentation and service could use some work. Sosogu Ramen in Redlands is another solid spot. After trying all of them, Ramen Jo's tonkotsu broth stands above the rest. It's rich, creamy, deeply flavorful, and the kind of broth you don't want to leave behind. So why only 4 stars instead of 5? The protein was the only thing holding this place back. The chashu and other beef in our bowls were overcooked and chewy. Instead of being tender and practically melting in your mouth, they took a bit of work to eat. If they can improve the quality of their protein, this would easily be a 5-star ramen spot. Stopped by this ramen spot on a road trip and was pleasantly surprised by how good everything was. The Tonkotsu Ramen was definitely the highlight. The noodles are made fresh in-house, and you can really tell from the texture -- they had a great chew and held up well in the broth. An amazing ramen place in San Bernadino I couldn't tell from the outside! This place makes their own noodle from scratch and you can see it through the open (glass window) kitchen. The cook was very friendly and they're proud to show the noodle making process from the kitchen. I can feel the difference here from packed noodles elsewhere. I'm here now. This place is legit. I had the fried chicken appetizer, that came with a lemon and a garlic paste as a dip. It came out quickly, HOT, and super crunchy. Squeeze of lemon gives it a pop of flavor and brings down the heat. I also had the ramen, not the tonkatsu or the miso, I forgot the name. But it's one of the 3 most popular ramen. Clear broth. It was fantastic! The broth was delicious, the noodles were soft and tasty, I hadn't tasted noodles like that before. I ordered pork as my protein and honestly, that elevated the already delicious dish. The pork was charred, either by intention or accident but it transformed the ramen. Most other ramen shops have boiled pork, this had a great char that changed the flavor of the pork and ramen. The price is reasonable and I would come back here. The service was excellent as well. Everyone was very attentive, and gave you space as well. They gave suggestions and brought out the spice tray to add as much as you'd like. The Serrano chili salsa in there was delicious. Okay, the people are nice but THEY DO NOT KNOW HOW TO COOK Ramen. Okay, first the noodles are spaghetti noodles. Newsflash, they are not the same as Ramen. If I find a Mitsuwa and get their noodles, spruce up some broth, add some veggies bok choy etc, this place has nothing on what I make at home. Also, Ramen is traditionally Chinese/Japanese and yes, we have been taking on other cultures food but there was not one Japanese person there.
