It's in a very small town, hardly anything at all but it seems this is the best place to come. We came in on a Friday night at around 6 and it was just starting to get busy. We did not have reservations but they were still able to get us in with no wait. The hostess was very friendly and informative. It didn't take long after we were seated for our waitress to greet us and take our drink order. Soon after our drinks were delivered we were brought bread and our food order was taken. I ordered the Cowboy Ribeye which according to the menu is a "20-22oz bone in Ribeye". However, there was no bone in the Ribeye I received. I also added 2 quail medallions which are quail breasts stuffed with cream cheese, jalapeños and wrapped in bacon. As my sides, I ordered a side house salad and cowboy potatoes. Over all, the meal was very tasty, every thing I ordered, especially the steak (even though I think they gave be a regular ribeye instead of the Cowboy ribeye). You can tell they cook the steaks over an open flame, rather than just a flat top grill. A suggestion to the restaurant is with the steak knives. Both my wife and I got dull knives, which made cutting our steaks very difficult. My wife ordered the New York Strip. I won't write out my wife's opinion of her steak, but the only thing I will say from my perspective is that it was undercooked by about 2 temperatures. Overall, we enjoyed our date night here and are glad we came, but the in our opinion, although the food was good, there was nothing that just really stood out that we felt we could only get from here, that we would want to drive an hour out here again. If we are ever in the area though, we would definitely come back again, the food was good, just not extraordinary. The reason for 3 stars is that although my steak was good, it was the wrong steak. The knives were really dull and made cutting the steak very difficult. My wife's steak was two temperature undercooked and the bathrooms were very dirty.

Asparagus is our favorite side, but we are working our way through the sides and deserts. Service is very prompt and professional. Excellent service on all visits. If you are staying overnight in the area, book a room at the Fredonia Hotel. Restaurant and Hotel are together. The quietest hotel room I have stayed in over my 40+ years of travel. So happy that we've been able to pass through and enjoy dinner at the hotel. Small college town, with some super nice people. Put it on your to-do list if you are passing through.

We were seated in the bar section in some very low and comfortable seats that became significantly less comfortable when trying to lean forward and eat. That did wonders from my usually sore back, let me tell you. I had their stuufed flounder and even though it looked more like two crab cakes than a fish, it was actually pretty good. I was happy with it. My wife, on the other hand, ordered a sirloin cooked medium (pink center). What she got was a well-done steak. If this were Denny's and this happened to a $18.99 steak it wouldn't be a big deal but this was at a prime steakhouse and the stead was about $60. My wife went ahead and ate it because she said it still tased good even though it was not what she asked for but the last quarted of the steak because so very grey and dray that she could go no further. She pointed the issue to the server (who didn't even apologize or even seem bothered) and asked that he show the remainder of the $60 boot sole to the manager. Now, we were not looking to recieve any sort of compensation or anything like that. My wife simply wanted the issue acknowledged by the manager since the steak was so expensive and was not cooked correctly. The manager never bothered to show up. This is a clear indication that the management of the Republic Steakhouse doesn't really care about either the quality of the food or the satisfaction of the guests. This is a shame because there is alot to like otherwise. Unfortunately, it doesn't look like we will be visiting them again. One final tip for the bar staff: If you are going to charge $18 for an Old Fashioned, you either have to make it good or fill the glass. Pick one.

Even the "bar wines by the glass" are good and the "pours" are generous. If you like red snapper, and who doesn't, their choices are all worth your time. The bread was warm and tasty. Bartenders Paige and Kelsey kept our wine glasses full and made our time there memorable. We split a strawberry cheesecake for desert - a huge piece, very good.
