Heard good things about this place through a friend so had to take a trip to try it out. Really nice guys who helped me figure out the best combo for what I was looking for. I usually judge barbecue joints by their potato salad and this one passed the test. The apple slaw was awesome, great flavor. The jalapeno cheese sausage was my favorite. I heard the barbecue chicken was amazing here so I had to drive over. With chicken, I'm looking at two things: Is it smoked with a crust or is it barbecued with slathered sauce that's got a sticky bake. Both are fine, I just don't want a limp skin that falls off when I pick it up. When I opened the box, I was so excited. The seasoned bake on the half chicken was the perfect crust to keep the juiciness inside and I loved every bite. Even the next day, the chicken was still juicy, not dry. The smokey flavor was what we all aspire to achieve when barbecuing chicken but I'll leave it to the professionals at Pustka because they've got it down. I ordered the potato salad and green apple slaw but sadly, the slaw didn't make it into my bag. I am open to all different types of potato salad, just need a good binder and not too much celery. This one is smooth and I didn't taste celery so it was fine to me. It was 3pm and the sun was beating down so I chose to go home and eat in the cool instead of snagging a picnic table but the outdoor dining yard is perfect for a group. I can see coming back on that first cool weather snap and eating my half-chicken plate outside unless I go for the Wildcat sandwich instead. The guys serving were nice and quick to get my order out. One of the 2019 Texas Monthly interim top 25 'cue joints-- and still worthy of a spot today! $25.71 purchased a quarter pound of fatty brisket, a jalapeno cheddar sausage link, sides of elote (cold) and jalapeno apple coleslaw, with two refillable iced teas. Everything was top notch. The well-smoked brisket featured the classic central Texas rub, and was so buttery that you could cut it with a fork. Working my way through local BBQ joints to figure out my go to places I came across Pustka for lunch. It was amazingly tasty and fit my pallet. The mustard potato salad was literally like my mom used to make. The brisket and sausage sandwich and the pure brisket sandwich was juicy without being greasy. The slaw on top was incredible. Pustka Family Barbecue is another of the ubiquitous Texas trailer restaurants. The owner prepares the meat, does the smoking, and carves it up for hungry diners. There is seating at outdoor, wooden picnic tables. We ordered brisket and pork ribs. Unfortunately, even though we got there about an hour after opening, he was sold out of sausage. The ribs were delicious, probably some of the best we tried on our barbecue safari. They were meaty and flavorful. The same could not be said for the brisket, which was dry and cool enough that the fat cap had reset and turned white. Darrell also makes his own barbecue sauce, which was fantastic. Hutto may be off the beaten path, or a town you pass through on the way to Taylor and Louie Mueller, but it's better than Mueller and well worth a stop. read more

Every few months we travel to Temple for medical treatments. We live in Caldwell about an hour away While in Temple we always look for new restaurants to try. Wow. Did we ever luck out. BBQ can be a hit or miss thing depending on the meat and the weather. These guys know their meats. We tried the sliced brisket and the ribs. BEST EVER. Therefore for our party the following weekend we ordered brisket and ribs. Two briskets and two slabs of ribs. The sauce is so so good. A hint of heat but nothing HOT If you stop at their place on the highway. You can eat outside(which we did) or inside. These folks know the service industry. We were told to place a call to Patti Pustka to order the meat for the party We left a message and she returned the call before we made it home that day. Picked up the meat the morning of the party. There was only enough beef left for maybe two sandwiches and no ribs. So so good. We got many compliments - passing those on our next trip to Temple!! Will definite go again for excellent food and service. Matter of fact my husband just asked if I wanted to make the drive to "shop" and maybe grab some BBQ at Pustka's !!!!! Yesterday we picked up some brisket, sausage, and half a chicken from the Pustka Family Barbeque trailer in downtown Hutto. Today I'm bummed we didn't get more. :) The brisket was classic Texas style, moist with salt and pepper, and delicious. We've been to a lot of Texas BBQ joints and Pustka brisket ranks with the very best. Their sausage was juicy had that "just right" grind with the right amount of heat. Then there was the chicken . . . the chicken was incredible. I don't know what the spice blend is but wow, just wow. The chicken was just a bit crispy, smokey, and had a good amount of the spice blend, so good! And the sauce . . . Right! I know! Who wants to mention sauce when we're talking Texas BBQ? I do! Putska's BBQ sauce is downright amazing. We were trying to figure out "what's that flavor we get right up front? Is that Chipotle? And yeah, is there an Asian flavor in there too?" We're still trying to figure out what's in the chicken spice blend and what's in that sauce, but one thing is for sure, we'll be going to Putska's Family BBQ again soon! read more
