When you walk in to this very small meat store, you'll notice wine, craft beer, a cooler full of eggs and homemade pickled items, and the mecca- the MEATS! Don't let the name fool you, you definitely don't have to have sausage here. But why wouldn't you want to? They make a variety of sausages from a variety of different types of meats: chicken, lamb, venison, pork... and all are seasoned with very interesting ingredients like the fig and blue cheese, maple foie, chicken tikka, harissa lamb, etc. They are constantly rotating the choices! In addition to sausages, they have the BEST WAGYU meat ever. It mostly comes from Jackman Ranches in Florida (Clewiston, Fl I believe) and these cows seriously just taste happy and clean. We have purchased and love: bone-in Ribeye, filets, NY Strips, beef cheeks, boneless short ribs, etc. All cuts have been the most delicious, high quality wagyu meat we have ever had. Their bacon options are also not to be missed! How can I ever eat other bacon!? I just cannot. Also the BURGERS- OMG!! They are preformed patties to take home and cook. Lastly, Their selection of craft beers is small but amazing. They always have Prairie brand beers which we love and many other options. Their wine selection is noteworthy. They specialize in lower sulfites, natural wine production, and just wine that you typically wouldn't find anywhere else but on a menu in a good restaurant. They even carry cold sake which I so appreciate and love as well. I cannot leave the store with less than 4 to 5 bottles every trip. The prices do reflect the quality. Without a doubt, the best bacon in town, and pretty good sausages too. If you come to Proper Sausages looking for bacon, you'll find this cured meat (bacon) in three types: the proper bacon, the Italian, and the Dub. The proper bacon is smoked and has maple. It is the crowd's favorite. I myself normally go for the Italian, in my opinion the most versatile and easy to use. It is seasoned with Italian herbs and thyme, smoky, and salty. It goes well with eggs and egg dishes. And then I also get the Dub, which is cured in habanero peppers, if i'm not wrong, and is pretty spicy. The Dub goes well on burgers, BLTs, and anywhere a little bit of heat is welcomed. I am not a huge fan of the sausages lately, I seem to have lost my love for sausage in general (don't laugh), but I have to say that if I ever want something extremely exquisite and shaped like a sausage, I would go for the prune sausage, or the fig and cheese sausage. Those are the most incredibly tasty sausages you could ever eat. I'm not playing around. Another thing that I get occasionally here are the bacon burgers. I was never a big fan of bacon burgers (beef and bacon patties), but these absolutely are worth trying. They are soft, juicy, and super tasty. They basically save you the time you would spend frying bacon. If you can cook them properly on a pan, you will have yourself a nice dinner sandwich for sure. There are also many other things in this little butcher shop, some only available if you visit. I once was able to get some pate de campagne (country pate) and it was one of the best pates I have ever had. But more often you will find fine meats, like Wagyu beef, pork, organic chicken, racks of lamb, turkey burgers, etc. Also, you will find pickled vegetables, mustards, duck fat, etc. And all of this, I should add, is of the best quality available anywhere. Aside from the meats, Proper Sausages also has a very nice selection of craft beers and imported Belgian beers. And, on my latest visit, I discovered that they were getting big into wine. I saw lots of bottles from small wineries available here, and all at good prices. Finally, this place makes quick lunches too. They serve salads and sandwiches, at least that is what I have seen here. I used to come here just for the BLT, but now that I have been buying the bacon and sausages, I guess there is no point of paying them to make it if I could make a perfectly good one at home. Of course, if I am hungry, or if they have some Wagyu beef cheesesteak subs available, I'm going to be all over that. So, if you want to elevate your cooking and please your palate, actually, pamper it, get some meat cuts here. Or if you are looking for some really good bacon, come here. Let's just start with BACON!!!! This is, by far and away, the best bacon I have ever eaten in my entire life. And let tell you, people, I have eaten a LOT of bacon. Because if you are a lover of bacon, let's face it, no nutritionist is gotta be able to stop you. And this stuff? Well, in my opinion, it's good for the soul - and what can be wrong with that? The food stuffs are all from FL - so cool. The other meats I've eaten from here are just amazing. It's what meat is SUPPOSED to taste like. Yes, it's pricey. But honestly, your body is worth quality product. They have wine and beers in here as well. There's a chocolate peanut butter porter that has my name on it. They have a good range of wines to choose from, which is nice (from about $12 and up - I think that's the lowest price I saw in there). Anyway, this place is simply amazing. DO NOT BUY FROM HERE, EVER!!!!! I ordered Mishima Reserve beef through Proper Sausages as they advertise products from them. They fulfilled the order with products from another farm (Niman Ranch) and sent the delivery to me. I thought it was strange that the ribs were "notched" as before I ordered I looked up Mishima's website which stated "never notched". Upon looking closer at the packaging I noticed a small stamp from Niman Ranch. I called Mishima Reserve and asked if they maybe sub contract out to Niman Ranch somehow as to get to the bottom of the mix up. I tried calling Proper Sausages and left messages and never got a reply. Mishima Reserve do not supply Proper Sausages. They charged prices to reflect Mishima and gave out product from a different farm. Absolutely disgraceful. read more

If you have never been to Proper Sausage then this is a place you must try. The sandwiches are fantastic and so are the sides and more. The deli offers some of the best meat, sausages and poultry in town. I would love to give them five stars but the service at time leaves little to be desired. When you pay $48 per pound for wagyu it needs to be cut perfect. When you ask for items to be sliced a certain way that is how you should receive it. As a customer who loves this place and is happy that we have them in our neighborhood I hope they appreciate my review. Based on recent service they seem to be short staffed. When you place an order and you are told to pick it up at a certain time it should be ready and you should not need to wait another 30 min in the heat.
