The food has improved a lot in 6 years. We stopped by for dinner and ordered the pretzel knots, salad, and short ribs. The knots were just as good as we remember. Soft and sweet, and pairs great with the cheese dipping sauce. The short ribs were very tender. Our last trip here we were unimpressed with the meat--it was tough and dry. So, we were pleasantly surprised with how good the short ribs were. We would gladly return to Proof on our next visit. read more

We came for happy hour drinks and some food before our departing flight. The food was all raved about by our other guests that had all been here before. They raved about the appetizers and burgers. I had the burger which was possibly one of the best burgers I have ever had - juicy, well seasoned, perfectly toasted bread, good sauces that didnt overwhelm. The staff was great. Our party knew the head chef and he was so friendly and kind when he came to visit our table. The waiter also helped us pick a lovely dessert for my husband's birthday - it was a chocolate mousse dessert shaped as a cactus desert landscape with all elements edible. Absolute perfection! Absolutely outstanding meal. I'm usually underwhelmed with resort food; Proof certainly changed my mind with that opinion. We're foodies who love to cook, especially smoked meats. I'm always hesitant when a menu says smoked as it's usually artificial smoke or grilled. The smoked half chicken was phenomenal, great flavor, moist and juicy. It wasn't spicy to me despite the "Arizona hot sauce", very subtle. The charred vegetables were excellent, I couldn't believe it was kale. Carrot purée was the perfect complement. Our server Ema was so patient and attentive and personable. Such a great start to our vacation! American pub style ambiance, at the Four Seasons. Here's the ugly truth: the food was excellent -- my avocado toast was flawless -- but excellence stops mattering when the service makes you feel like a trespasser in the hotel you're actually paying to stay in. We walked in casually dressed (because, hello, it's breakfast, not a gala), and before we could sit down, we were asked to prove we belonged by showing our room keys. That's not hospitality, that's humiliation. And then, with a dining room barely 10-15% full at 11:00 a.m. on a Sunday, we weren't seated in the elegant space that sells the Four Seasons dream -- we were dumped in the service area like second-class citizens. This isn't "luxury." This is a bait-and-switch where your money is good enough, but you aren't. On the very Sunday of Charlie Kirk's funeral, a day already carrying grief, we were treated with suspicion and disregard. Four Seasons likes to brand itself as a sanctuary of dignity, but dignity doesn't come with a side of shame. Asking paying guests to prove they belong is the opposite of luxury -- it's profiling with table service. A restaurant at 15% capacity doesn't seat you in Siberia unless they want you to feel small. If this is hospitality, then I'm the Queen of Egypt. You don't pay Four Seasons prices to be treated like you're crashing breakfast at a Holiday Inn. Food won't save an experience when respect is stripped at the door. We belong here, we paid to be here, and this hotel forgot that. My husband and I were excited to go to this restaurant because we were celebrating a birthday and we like smoked food. It's also in a really lovely location in the desert. The dinner started ok but the pacing of the whole meal was so fast we were done with our dinner in 40 minutes. The place wasn't even full and I felt like we were rushed through each dash. We did order some bread which we didn't know cost six dollars and it was hard as rock and inedible. I did order a ribs which tasted well, but there was barely any meat on it. The coleslaw had literally no taste. The ambience is very nice and the service was only OK. I noticed other tables where the servers were coming by a lot more often, but there was no checking in whether or not we'd like the meal or not. I would not recommend going to this restaurant, especially due to the high prices. read more

This was my first experience at Proof- we came for a little lunch with the kiddos. I'm a nanny and I accompanied the family I work with. It was a pleasant experience for the most part- the ambiance is lovely and it's beautifully decorated. The restaurant was very rustic in theme and we were seated on the patio to admire the views! Our littles enjoyed the appetizers of guacamole & chips... We had salads and soups- they were freshly prepared and quite good. The soup I had- pumpkin squash was a disappointment...not much flavor. Our service was attentive and very friendly. I just figured for a Four Seasons- I would have been more impressed. Yet another amazing visit to Proof at the Four Seasons Resort @ Troon North. While they don't bill themselves as a BBQ joint, they have a giant smoker outside and really do make some top notch BBQ. Their updated menu now includes Burt Ends which are hard to find this side of Kansas City, and even harder to find done correctly. But Proof does them right, just like they do with so many other things. Very much enjoyed my old fashioned smoked tableside and my Burnt Ends dinner. Service was friendly and expedient, as always, and was able to watch some college football while enjoying my meal. Awesome place! And bonus for the locals, valet for dinner is complimentary and you can usually check out several exotic cars parked in the roundabout. Proof has never disappointed us! read more

I made a reservation based in large part on the fact that they list dog friendly. I got a call (voice mail) from someone at Proof shortly after making the online reservation, stating that they only allow service animals. I'm at least glad we found out before heading over; our dog is recovering from minor surgery and needs to be monitored so we have to bring him along tonight. I called back to suggest that they change their yelp listing and remove the dog friendly and perhaps add service animals only somewhere else in the listing. The woman I spoke with didn't even acknowledge my suggestion or frustration about the misleading "dogs allowed". read more

I wish I could give a better review...but I can't. We three were seated at a table near the door and the constant traffic left us cold. We asked to be reseated and were led to a table in front of another door! After protesting we were seated in a table away from the ice cold draft. All 3 of us ordered the Birria Grilled Cheese Signature sandwich. There was no cheese on any of them! We had just finished a 6+ mile hike and were ravenously hungry so we didn't send the plates back. The brisket and short rib meat was delicious and the au jus accompaniment was perfect. But there was no cheese. The check came and we asked the server to give us separate checks instead. We were informed the check could only be split 2 ways...not 3. What?! We scraped up the $137 cash and left. On the way out I mentioned the no cheese gaffe to the hostess and received a comp card for an appetizer and dessert. I doubt I'll go back to claim those freebies. :-( read more

I've been wanting to try Proof for a while. I stopped by a while ago just to check out the space to see if for myself. I had family in town this weekend so i pulled up their breakfast/brunch menu online. Unfortunately, the menu at Proof Canteen needs serious help. Proof does not offer a traditional eggs benedict (only short rib benedict) and they don't have any normal buttermilk pancakes (they only offer a citrus pancake with strawberry compote) or traditional french toast (they only offer stuffed churro french toast). If you want to offer a unique twist on traditional breakfast items please also offer the basic/traditional version, otherwise, those of us with families that include kids, teens, or elderly people won't ever be able to bring our families to your restaurant because they won't eat your funky Proof versions. Please let me know when you've fixed your menu and i'll update this review. mahalo read more

Proof has to be one of my favorite places in the valley! It's upscale because, well, it's in The Four Seasons resort in North Scottsdale Troon. However, Proof still feels like it's a casual place and I have worn jeans and even flip flops to dinner here! I love the shuffleboard in the dining room! The patio has a perfect view and walking up you can smell the smoker cooking up something amazing. There are always specials that change often! We usually start with a drink on the patio at Onyx, where the service is a bit slow, BUT Proof is always spot on! Jackie makes THE best French 75 , that I have affectionately named , 'Jackie's 75' because it's pretty & lavender and perfect.. and I can only have one! Kate, the manager, is always so sweet and makes sure that everyone is happy! We have always had great service from Aaron; Kaylin; Alexa; Autumn; .. the food is amazing, this last time I had the Surf & Turf special which was a Flat Iron Steak and Poached Prawn. I was on the fence because I wanted a steak and I was afraid this being a thinner cut it would be tough. It was not. It came atop these rich potatoes and was melt in your mouth tender. I also love the salmon that seems to come around in the fall. I'm waiting ! Proof has been a favorite before it was Proof. Being lucky enough to live close to the Four Seasons resort, we go here for breakfast, lunch, and dinner, often and it is always a treat. Dinner during BBQ Season is a delight. Yes, a DE-Light! Every bite of my dinner was amazing. The kind of food you chew slowly and really enjoy all the flavors. The space is super casual but still has that Four Seasons vibe. Starting with the pretty and short stroll from valet to door with a quick view of the pool. Once inside there's enough to keep you entertained besides the food - shuffleboard, TVs, and, on the weekends, some live music. The Four Seasons is a great place for a special meal or a fun night out away from the crowds. Take an extra minute and spend it on the balcony off the main lobby. We stayed at the Four Seasons for my husband's annual award trip. This was the first time the event was held in Arizona. We visited the restaurant three times during our stay. Once on our arrival day for lunch and twice for breakfast. First of all, the servers are all amazing! So friendly and accommodating to special request. The first day we had Manny and he was awesome. I don't remember our server the second time but she was very nice and on our last day we had Amy and she was awesome and makes a dang good spicy Bloody Mary! For lunch we started with a sangria, a beer and the pretzel bites with cheese and they were so delicious! Manny told us they were the best starter and he was right! For entrees, I had the hummus plate with veggies and pita and it was huge. It was tasty but not my favorite hummus ever. The hubby had a chicken sandwich and he did not care for it. He didn't like the toppings or the taste of the chicken. He thought the fries were good. Breakfast is their shining star in our opinion! They offer a buffet and several of the men chose that. It has both cold and hot sections and is very large. I chose the huevos rancheros minus the meat and they were excellent! Some of the best I have ever had. I did that both days. One of the ladies had the pork Benedict and loved it. Hubby had a traditional egg platter on the second day and thought everything was really good. Another great experience. I've been here a couple of times and have always been impressed. To their classic margaritas to their guacamole with salsa appetizer, their beet horchata is amazing especially if you love vegetables. Their tortilla soup is cream based and comes with 3 shredded chicken taquitos and their burger is pretty good( as rated by hubby). Their lemon meringue cheesecake is probably one of the best. Reservations is a must for dinner but for lunch not necessary. Service is always quick and the atmosphere is nice and relaxing. Kid friendly read more

On a Tauck tour to the Grand Canyon and so we had a fixed dinner menu with three entree choices. Chicken, fish or beef. Took the agave nectar glazed salmon. Started with a baby gem lettuce salad which was delicious. Then the salmon plate arrived and was a joy to devour. Desert was strawberry cheesecake shortbread biscuit. Yummy. We had breakfast here every morning during our stay. They have a nice menu with a range of options to satisfy everyone. Traditional eggs and bacon and toast or açaí and berry bowls and smoothies. So all people can leave pretty happy. We tried the egg white frittata, avo toast, lox and salmon bagel, blueberry pancakes and the oatmeal bowl. Service is very friendly and there is a beautiful view from the covered patio area. Not impressed with the egg white frittata. It was just bland and had veggies thrown on top. The avo toast was also somewhat disappointing. The buttermilk pancakes were delicious. As was the oatmeal which is a huge serving with loads of fresh and dried fruits. We just went for an after dinner dessert. We got two desserts and two coffee. The smoked cheesecake had a wannabe impressive presentation with smoking little ritual on our table. It was kind of fun though the smoking gave to the cake a burnt plastic smell and taste (we couldn't finish). One and done.... Full disclosure, the establishment did offer some compensation for this situation. And this review is not to recommend they do not patronize this restaurant, because I hope our dining experience was far from the norm. Here we go! Wednesday we hiked Tom's Thumb and picked Proof at the Four Seasons to have lunch with our group of 8 because of its location. So when you think of Four Seasons you have a level of expectation for quality, service and attention for the money you are going to be spending. And we know we had a large group, but they have to be used to that size of group and larger. When we arrived our in-laws were already seated out on the patio so were able to join them straight away. A few minutes later our server came to the table to get our drink order, one Diet Coke. Everyone else was fine with water. A bit after he delivered the Diet Coke my daughter ordered some appetizers for us, the pretzel knots. They did not arrive at our table for almost a half an hour. But I have to tell you, they were absolutely the best pretzel anything I have had. So delicious! And it took a while after that to get our entree order placed. And the place was not that busy that we could see. After we placed our order, we sat. And sat. And sat. It was getting kind of ridiculous. So my wife went inside to find our waiter to find out what the status of our lunch order was. It wasn't till after the fact that she also noticed who we later found out was a woman from management. Our waiter told my wife that he would have to check on our order and speak to the manager. So after we were there for over an hour they finally brought out our order. And they stated they were short a couple orders of French fries, because when they set my plate in front of me all I had on this huge plate was my order of the Proof Burger. So once everyone had there entrees it was time to dig in. I grabbed my burger, top bun was pretty warm and I found out why. When I squeezed it and turned it over to take a bite the whole top of the bun literally just crumbled to the plate. I ordered the burger with some pink, which it had, but that first bite was so dry I drank an entire glass of water to get it down. I opened the bun to just eat the burger and it was cold, and not even juicy in any way. I took one bite of just the burger and that was all I could eat. There were 2 dishes of pasta at our table and I heard they were also cold and dry. The other sandwiches the others had, they said "were okay". They were the crispy chicken sandwich and the pulled pork sandwich. We were not impressed and for my $28 hamburger I had 2 bites of, awful! The only thing I heard anyone say something was good about was my niece who got a side of mashed potatoes, not sure how that is a side dish for pasta but at least she filled up on them. After everyone else was about done the manager comes out to talk to my son-in-law who had already given them his credit card, and offed a discount on the tab and something about desert, I was not able to catch the entire exchange. So when the manger came back to give my son-in-law the receipt she said she took off 50% and was going to give him a dozen cookies to go. Good because we had been there for over an hour and a half already. Here was my thought, I had 2 bites of my $28 hamburger that sucked, they should have removed that from the tab and then given 50% off the remainder of the tab. But that was not the case. Here are some thoughts on what should have happened. Our waiter should have kept us informed on our order, good or bad. At least we would have had an idea of what we were up against. My wife and I were actually discussing just getting up and leaving because we were running out of patients. But decided to stick it out because of the group. If is was just the 2 of us we would have been gone. Considering our wait, our waiter should have informed the manager within the first 30 minutes so she could come out to find out what was going on. And, with as long as we were waiting the waiter should have offered us something to tide us over, some free appetizers or drinks, but nothing. The manager was apologetic but it was too little, too late. Needless to say, it was the first and last time we will dine at this restaurant. read more
