Of course it's pricey, it's the 4 seasons. Ordered a burger for lunch and it was great, I'm easy to please. My daughter ordered the chicken sandwich, she hated it but that's her own damn fault for ordering something without reading what was in it ;) I wasn't exactly sure what "smoked radiccho-herbs" were either. Sounded fancy. Took a bite and it tasted like smoked whisky, not bad. She's 12, wasn't her jam . Included photo of her face taking the first bit for fun. Now, I'm no snootie tootie ... but I sure looked like one when I rolled up to valet in a borrowed Bentley while staying at our friends mansion while they were at work. Proof is located in the Four Seasons Scottsdale at Troon North. This is a casual American Restaurant that serves an American Type Menu. Drinks have a whiskey bourbon theme and the ice cream is house made. The patio offers beautiful mountain views and the inside is very casual with a shuffle board. Short Story _ This is a really nice place and the food was good. I did experience a few major problems but based the star rating on the food so my rating isn't a solid 4 fours. Management does not maintain the space heaters- It was a spectacular sunset so I wanted to be on the patio but it was cold tonight. Someone tried to turn on a couple heaters and got a third one started but it ran out of fuel within three minutes so we moved inside since it was very chilly today and we used up all the nearby heaters. Our server took our order but ordered what she wanted to order. I told the server that we wanted to share a bowl of soup ($16.) not knowing the soup is very tiny here. Instead of telling us that the soup is too small to share she just orders two soups for us at 16 dollars each. LONGER STORY- We started out by ordering a bowl of mushroom soup to share. We received two small bowls that were only filled half way but with two large cheese crusted pieces of bread. At the time we thought that was very nice of the kitchen to split the soup like that and to give us all that bread. The soup tasted very good but had a just a pinch of grains in it that caught in my throat. I wonder if the soup was served correctly because it seemed odd to put such a minuscular amount of grains in a soup? The pieces of bread were very large, were very good and were topped with shattering crisp cheddar cheese. ($16.) I had the dukkah crusted salmon for dinner ($29.00). All is good here. My husband had the Shrimp and grits ($32.00) All is good here. Tried the house made ice cream sundae (the banana foster $10.) The ice cream seemed fresh and had a really rich nice texture but flavor wise it didn't taste like bananas foster. Not much here on banana cinnamon or rum flavors but a nice creamy texture. I looked down at the floor and I noticed train tracks in the floor but forgot to ask someone about it. Maybe a little kiddie train drives by sometimes? I'm a local to Proof, being right down the road. As I can't go out and spend on "resort living" all that often, I have to limit my nights at Proof. I would very much love to see a happy hour or something that can get us the Proof experience for locals at a local price. The food is exceptional. From the moment you walk up, and smell the sizzling beef and pork smoking on the grill outside the patio, you'll know you are in the old West. It's a great interior, but my wife and I love to sit on the back patio and enjoy the stars and the beautiful surroundings of the Four Seasons while we are sampling their wonderful fare. I had ribs the last time, and they were great. As I said, there's something to being able to see/smell the food smoking that makes it taste extra delicious. I usually get a nice Old Fashioned. I tried the really exotic "smoked" Whisky drink they have, where they come and fire it up at your table. That was very special, but only for unique occasions as it's not inexpensive. I would highly recommend PROOF for dining with out-of-town friends to give them a taste of the West and the way of life we enjoy out here. All that's needed is a couple of steers in a corral and a horse or two and you'd think you're eating at the ranch house on some very big ranch! read more

I am finishing up an unbelievable meal at Proof At the Four Seasons Resort in Troon Arizona! Appetizer was a salad with Burrata Cheese , Tomatoes, and Pesto and Croutons. Followed by Medium Well Salmon with an incredible Coke slaw. The service throughout our meal was Impeccable. A Gastronomic Event I have not experienced in the 3 Years I have lived in Arizona. I visited Proof a couple of times during my vacation. It's a family friendly restaurant with a great outdoor eating area. For breakfast I ordered the Churro Waffle and it tasted as good as it sounds. It was topped with dulce de Leche, whipped cream and raspberries. I perfected the meal by adding crispy bacon. I stopped in a couple of times for a late dessert and especially loved the Apple Bourbon Upside Down Cake. It's served with vanilla ice cream and is delicious. I had my birthday dinner here last night and it was such a treat! The menu is very American with a big mix of things but nothing was really jumping out at me. Luckily we had a fantastic server. I think his name was Giovanni. He was super passionate about his job, the food and people having a great experience. Helped us pick some great drinks (highly suggest the Scottsdale shandy. Might be the best cocktail I've ever had) and food. We shared the oysters Rockefeller which were a little small but very yummy. He also treated us to the pretzel knots that they are known for. They were the best I've had too. My man got the chicken and waffles. The waffles were a little on the cakey side so not my thing but the chicken was lovely and the mango pepper jelly was a really nice touch. Would have loved the option to make it spicier but really good either way. I had the lobster roll. Drool. Omg. So many big chunks of lobster and the bun (which they made in house) was tender and buttery and perfect! The fries were lovely too. We were super full but had to get dessert because LOOK AT THERE MENU!!! All in house made ice creams I had the stout molasses cake with yellow raisins and fig and my man got the mint chocolate chip shake. Both were fantastic. Two things: food and service. We went to Proof on what was a very quiet night for them, and at s as time they should have been easy to serve a group -- a weeknight reservation for 7:00 pm. Proof failed on many levels-- dishes that arrived not as described, a cold mushroom pasta, a salad that did not contain the ingredients and in the quantities described on the menu. And, the service-- including poor communication -- added to the aggravation. What's especially annoying is that this restaurant is one of only two at the Four Seasons resort in Scottsdale. Because it's in the heart of a Four Seasons, your expectations for great food and phenomenal service are elevated. Proof does not live up to the Four Seasons experience. read more

Ordered the chicken and waffles that comes with fries. I asked if I could get the sweet potatoes instead of regular fries and was notified it would be an up charge. Ok no big deal that's fine. The chicken came out dried and the batter had been almost burnt. Waffles were really good. Check comes and I was charged $10 for the sweet potato fries which is the cost of a stand alone side. So it was not an up charge but just paying for a completely different side while not getting the side that comes with your meal. read more

Stayed at the Four Seasons and went to breakfast each morning at Proof. The serving staff, along with the entire resort staff, were 1st class! The patio is a great place to start your day with the early morning sun hitting the Mountains and before the Arizona heat set in for the day. For breakfast day 1: eggs and bacon. Super simple, as we had a long day of visiting surrounding restaurants ahead. For breakfast day 2: the Johnny Cake Benedict. This is about as Arizona/Western twist on Eggs Benedict as you'll get. It was superb! A little spicy for anyone who isn't expecting that breakfast kick 1st thing in the morning, but I'm not your average bear. According to our server it was wasn't the green chili pork that had the seeds roasted in, but rather the Pickled Fresno Peppers that packed the punch! Trust me even for a early breakfast I joined the clean plate club. 10/10 and my 3 year old went with the kids pancakes each day!! read more

Proof is a family friendly restaurant on the Four Seasons property... We didn't know what to expect when we walked in and dined here on a recent Friday night, but we liked it immediately. From the rustic decor, comfortable seating and super friendly staff, what's not to like?! Add to that an awesome live musician, delicious comfort food, a solid wine list, and we had a dinner to remember. We started with an order of pretzel knots for the table . The kids enjoyed mac & cheese and chicken tenders. My husband and I shared a salad with fresh locally sourced ingredients and a burger + roasted veggies. (We also ate plenty of the kids' french fries). My MIL had rib bites... We found the prices to be moderate for the Four Seasons but a bit pricey in general. Nothing too crazy though. We had a bit of sugar for dessert in the form of their candy bar and decided that the next visit, we'd definitely go for the ice-cream. Turned out that next visit was the next night... we went without the kids because they were watching a movie with their grandma. We dined with another couple, our friends Angela and Rick P, and this time the food wasn't as awesome, but still good. We had the masa cauliflower and wings as starters and then the Garbage Can Chicken entree, an Ahi Poke, Chicken sandwich, and rib bites. The appetizers and Chicken Sandwich were the winners on night two... And perfectly timed as we finished our meal, the kids walked in and we all had ice-cream together... vanilla bean, mint chocolate chip, and a coconut sorbet... all delish! Wow was this a horrible experience... Not our first time here and have frequented all the restaurants multiple times as we live down the road. We usually know that outside of the burger everything's hit/miss/mediocre but the view tends to compensate. Not this time. Only 4 tables at lunch + 1 sat outdoors. Maybe 5-6 service not including kitchen staff - all nice all lovely people just shouldn't be working at a 5* resort where service SHOULD be key. Maybe it's my expectations. First we saw all of our plates placed under the heat lamps and they just sat there while ALL staff were at the far end of the bad chatting/laughing. Again, lovely but get the job done. Had to go up and ask them to bring down the meals. Asked if we needed anything and we gave the usual: ketchup, mayo - they never brought ketchup even after asking twice. Asked another for second round of ice teas...again needed to ask twice before it was brought. Cannot stress that there were at this point now 3 tables - none outside. Food: fish and chips were so over cooked the fish was loose inside the fried batter; French dip with overcooked beef that was like a dried jerky with a film of grease, flavorful though; chicken sandwich couldn't have been more dry/bland.. Have no idea how they will function with a full house - and we don't intend to ever find out. read more

This is a restaurant inside Four Seasons Resort in Scottsdale. This review is only for improvement's sake. I loved my experience here and everybody was lovely. My only criticism here is, at the time, we had a waitress who couldn't make a cappuccino or didn't understand what a cappuccino was. We received a big mug of drip coffee with over-steamed milk and foam three times in a row, trying to pass as a cappuccino. Even after explaining to her what a cappuccino was, we got the same result each time. This has nothing to do with her. She clearly wasn't trained on coffee. Not everyone understands or drinks coffee. Please make sure your staff who's working breakfast can make a cappuccino or a latte or understand how to construct the beverage. For a high-end, luxury restaurant, that's the least you can do. read more

If you are in the mood for "comfort" foods and sweets, try Proof's variations on traditional menu items. I have not been disappointed at my dining experiences here. The atmosphere is casual and fun, with dining either indoors or outside in the patio. For evenings and weekends, I recommend making reservations. At this visit, I enjoyed their Southwest Corn Bisque, a mildly sweet pureed soup topped with black beans. Of course, I had their Proof Burger which is cooked to order. The patty was most and flavorful, and accompanied by my selection of fries. You can substitute onion rings or other sides. My family ordered the Crab Mac 'N' Cheese, and I tried a helping. You can order it as an entree. I may next time! It was superb, with its King crab and Danish Dill Havarti cheese. Others in my party had the Superfood Salad which contained a tasteful combination of heirloom tomatoes, baby eggplant, ancient grains, and goat quark (a soft curd cheese), mixed with a vinaigrette dressing. Proof is the more casual restaurant up north at the Four Seasons in Scottsdale. It's not bad, but I prefer Talavera if I'm going to make the hike that far up north. It's got a sports bar vibe going and has a shuffleboard table in the middle of the restaurant. The food is not bad, but feels vastly overpriced and reminds you that you are at a fancy hotel. I ordered the lobster roll and it was good, but portions were pretty weak given the price. I would probably rather go for a drink than for dinner. read more

Last night, my hubs and I wanted to go out to dinner since we were semi-bored and thought it'd be fun to sit out on a patio with gorgeous views. I'd been to Proof quite a few times after hiking Tom's Thumb Trail on weekend mornings but I still had yet to come for dinner, so I could finally meet that Chicken and Waffle dish I've heard so much about. Trust me, I've begged them in the past to make this dish for breakfast because it just makes sense to me that way, but the "stubborn" dish remains a dinner time staple! The Proof Manhattan is one of the best Manhattans we have ever tasted. My favorite cocktail is typically an Old Fashioned but this Proof Manhattan may have changed my mind. I know they are nearly the same except Manhattans have Vermouth, but wow, so good! The Clint Eastwood Cocktail. Single Proof Russell's Reserve Bourbon. Chocolate bitters. Aged Whiskey Bitters. Tobacco Smoke... All I can say is this cocktail is a powerful one and it burns just like Eastwood's stone cold stare. If this one doesn't put hair on your chest, I'd be surprised. The tobacco smoke is in an upside down glass and the whiskey cocktail is poured quickly into the glass with the smoke. I'm such a nerd and I wish I could be as cool as this cocktail is! Duck fries. Decadent and rich. Arizona cheese curds and gravy cradled on top of succulent shredded duck with tasty fries. Beef Short Ribs - Tender beef "pot roast style" with marble potatoes, squash, grilled onions and Poblano Corn Biscuit. Not one inch of beef was over cooked. Each piece was soft, familiar flavor, and comforting. The Poblano biscuit, unique in its own right, stood out on the plate and added and extra "kick" for the overall flavor of the dish. Chicken and waffles. Fried chicken perfection almost seems like it was floating over the fluffy buckwheat waffles. Really? Peach compote bacon brittle sprinkled like fairy dust over the fried chicken?! My taste buds stood defeated. Being a "meat and potatoes type gal," I quickly consumed the brittle and chicken first and almost forgot about the waffles. Yes, the waffles were indeed a treat, especially with the smoked blueberry homemade syrup - so much that I didn't even fancy a dessert at the end. Crab Mac and cheese. I ordered this along with the entrée only because our waiter, Giovanni, asked if we wanted a side with our entrées. But he didn't just ask if we wanted a side. He also provided an example of a side, the Crab Mac and Cheese. Well duh! Of course I can't say no to two perfect things placed together - crab AND Mac and cheese. Yes this was super good but we didn't really "need" it since all the other food was filling enough! Overall, although this was a spur of the moment dinner, we did call to make an 8pm reservation. All our info must have been stored from previous visits in their system it seems because they kept greeting us "welcome back!" when we actually arrived. They were so excited because they sat us at a corner table of the patio out looking the beautiful desert sunset. It felt secluded and cozy even though we were outdoors. Our waiter Giovanni and the restaurant manager constantly checked in on us and were so friendly and wonderful to us our entire visit. Our dinner experience really out shined breakfasts here especially with the food. The service is just consistently great regardless of time of day. We love Proof! Yes, like turned into love. I came to Proof twice during a stay at the Four Seasons hotel: once for take out and once for dinner while watching the sunset. The prices are on par with a hotel restaurant, but the quality was pretty good. During my stay I tried the lobster roll with fries and the Impossible burger with coleslaw. I was actually impressed that they carried the Impossible patty and they did not overcook it. While I wouldn't come out of my way to eat here or grab a drink, it is a good option when staying at the hotel. It's a great quiet place for a view and dinner. read more
