The way they melt the cheese, you get this funky crispy cheesy entity around the burger resembling a skirt. On this visit, I kept it simple with the Pueblo Farmer and fries. Pueblo Farmer ($12.25) // Grass-fed beef, pueblo chilies, pepper jack cheese, & homemade guacamole on our sesame seed bun. Beefy, spicy, creamy, a perfectly balanced burger. I didn't get it skirted (I honestly was so tired from driving that I forgot), but I wouldn't change much about this burger. Damn tasty! Burgers don't come with fries so I added those on. These are thin and salty. Even though the fries are extra, they have a little sauce bar with their ketchup, ranch, and Heifer sauce to accompany it. The sauces were all great and tasted homemade!
