I ended up getting an orange blossom beer that was suggested by the bartender. So good!! I wasn't very hungry so they let me order the child's plate and I got brisket. The server suggested I try the red beans and rice. I was a little skeptical because I've spent a lot of time in New Orleans, and had some of the best. I was so impressed, I almost wished that I had just ordered a bowl of beans and rice. The brisket was really tender as well. Very friendly service and food appeared in minutes after I ordered. The smell of smoked meat hit me the second I stepped inside, and I knew I was in for a good time. I grabbed a seat on the patio, where string lights twinkled and a local band was warming up. The brisket came out tender with a perfect bark, and the pulled pork melted like it had something to prove. The burnt ends were the real show-off, though--crispy, smoky little bites of joy. Even the sides had personality, especially the spicy slaw that snuck up on me. Service was friendly and easygoing, like everyone there was happy just to be surrounded by barbecue and good vibes. Parking was a little tight, and there was a short wait, but between the music and the beer list, I didn't mind a bit. It wasn't flawless, but it was flavorful, fun, and full of character--just the kind of place that makes you want to kick back, loosen your belt, and stay a while. Solid four stars and a full stomach to prove it.

The indoor seating filled up very quickly and it was just a bit too chilly to sit outside in the shade today. Everyone seems to talk about the line that forms before the restaurant opens. I stood and chatted with folks waiting in line. The folks that were doing the meat smoking and taking orders were all SUPER FRIENDLY even though they were also working so diligently to get orders prepared and customer orders ready. The food! We ordered so much food. We'll be eating BBQ all weekend. We got a pound of brisket. This was smart because damn, it's delicious! I love that they cut it thick. Its perfectly smoked and not too fatty, though they also sell a moister brisket too. We got a full rack of pork ribs too! This is a lot, but also absolutely phenomenal taste and chew! Perfectly smoked! We got potato salad, coleslaw and beans. All fantastic and at an affordable price. We couldn't pass up the cobbler and got both the peach and the bourbon pecan cobblers. I'm so full. Time for a nap. But I've already decided this is where I'm going for my birthday next month. I loved The Chuckwagon!

I remember watching their episode 10 years ago. I didn't even live in Colorado back then! Their claim to fame is the iconic cheese "skirt" on their burgers. The way they melt the cheese, you get this funky crispy cheesy entity around the burger resembling a skirt. On this visit, I kept it simple with the Pueblo Farmer and fries. Pueblo Farmer ($12.25) // Grass-fed beef, pueblo chilies, pepper jack cheese, & homemade guacamole on our sesame seed bun. Beefy, spicy, creamy, a perfectly balanced burger. I didn't get it skirted (I honestly was so tired from driving that I forgot), but I wouldn't change much about this burger. Damn tasty! Burgers don't come with fries so I added those on. These are thin and salty. Even though the fries are extra, they have a little sauce bar with their ketchup, ranch, and Heifer sauce to accompany it. The sauces were all great and tasted homemade! Honestly, just wish there was more seating as it's usually crowded. They do have a few outdoor stools, but it does get chilly when the sun is down. If it's good enough for Guy (Fieri...duh) it's good enough for me!
