Meh. This was the first time visiting PB and I have to say it was just ok. I did like the size of the pizza and the taste was decent, but it was nothing to write home about. The service is friendly, quick and counter service. A downfall for me was for the price. You are only given plastic dinnerware with paper plates. In my opinion, you want to charge over $20.00 for a "10 inch pizza (all pizzas are this size) salad is a la carte, and encased in a plastic container? A little bit over the top for what you get. I am NOT a pizza person, but had to give Pizza Baker a 5 star review! I got the Cacio e Pepe and was so impressed by how well they replicated the flavor of the pasta so perfectly in pizza form! The only thing that would make this better is getting a side of marinara since I think a bit of the tartness would help balance out the flavors. The size is perfect for a personal pizza, and I love that they use a sourdough crust. The cashier was friendly and even though I took takeout it seems like a good low key place to get a quick bite of some amazing pizza! The atmosphere is very chill, and they are clearly at is with folks that have not visited before. I had done some prior research on the website but I had a small customization that I wanted to make to my pizza. This request was made with assurance and in short order I had my dinner in front of me. I opted to have the mushroom cream pizza but add bacon to the mix for a protein. It was absolutely delicious and seasoned perfectly. The atmosphere reminds me a bit of a college eatery with its sparse set up, but for this kind of food it's actually perfect. Pizza Baker has cracked my top 3 places in Midland to eat pizza. The best place downtown IMO. The ambiance needs a little work, that will come as this restaurant is fairly new. The nice thing is downtown has seating right outside most places, enhancing the overall experience. But this score is all about the pizza. Wood fire, brick oven. I am bias as I love wood fire thin crust pizza. The dough is fresh, light, and develops some great texture with a little crunch. Pizza done is less than 5 minutes, huge bonus if you're in a rush. UPDATE... Went here when they first opened and the menu has improved, a lot! Not only can you order specific styles of pizza but you can "make your own". They say 3 meat/vegetables so I'm not sure if they'd do more than that. We ordered one with pepperoni, sausage and bacon and hubby wanted extra cheese, they recommended not since the center might not cook entirely....good tip, thanks! The pizza was DELICIOUS!!! Sauce is fabulous and the crust, which takes 2 days to ferment, is just the right balance of crispy and chewy. They also have side salads, garlic bread and a featured daily pizza. My one complaint is the soda. It comes in cans and I'd prefer fountain but I'll overlook that for the taste of the pizza! Their menu says 2 minute bake time and that's pretty accurate so don't think you'll have much time to wait. Plus if you're ordering for take out I'd order at the restaurant . Service is friendly and you might just get a little history of where the tables came from or the corrugated tin covering the walls or even why the restaurant came into being. Sour dough crust made fresh and fermented overnight. This creates a wonderfully soft yet crispy crust with great chew. The sauce is light but with a great taste. Pepperoni is just spicy enough, sausage had a great texture and taste and the bacon was good (I'm not a bacon fan but it was good). You order at the counter and they have a selection of 10"pizzas you choose from. Taking to the owner here said eventually they may have salads and desserts. I'm not thrilled with having cans of soda, I prefer fountain soda but that's what they have. Coke, diet Coke, Sprite and water. The building is rustic with corregated tin and brick wall. Comfortable chairs and plenty of seating. Parking is typical downtown Midland so it might get hairy if it's busy downtown. Pricing is good ranging between $7 to $12 for a pizza. Good place to bring a family with a variety of tastes. Looking forward to more of this pizza and to see what exactly they be doing in the future. read more

Without a doubt the best pizza in Midland! I'm so happy to see them in a permanent location and I feel that their pizza has gone up a notch (still previously very good) from their mobile cart. The crust absolutely makes this pizza some of the best I've ever had. Super light, not too doughy and always cooked perfectly in their brick oven. The bottom of the pizza is pebbled with char makes which tastes absolutely perfect. Their sauce is a little sweet which compliments everything perfectly. You can taste the freshness in every bite! Tried this place for the first time today after wanting to for awhile. Inside was warm and welcoming(maybe just warm because of the woodfire oven). Was promptly greeted by two young gentleman and given the whole sphiel. After looking over the menu, I went with the Margehroni, sauce, mozzeralla, pepperoni, basil leaves and a drizzle of olive oil. Maybe 5 minutes and the pizza was out! First sight, you notice and beautiful, bubbly, crispy charred crust but you when you bite into it, you get a good crunch from the bottom crust and good chew from the remaining dough. Cooked perfectly. The flavor was amazing. The pepperoni had a nice bite, the cheese is amazing, my only thing is I wish the sauce had a bit more seasoning, but the rest of the toppings make up for it. After having the Little Caesars lunch combo, this is an entire step up. LC's is good, but it makes you feel tired after eating it, there's just so much. But with this, I felt refreshed and ready to continue on my day. Highly recommend for a quick lunch spot if your downtown for the day. Will deffinately be returning! read more
