But don't sleep on Squamish's limited-but-delicious food scene. A solid place to start is Backcountry Brewing, a blink-and-you'll-miss-it bar and restaurant on the back side of the towns main shopping plaza. Since debuting in 2017, Backcountry has been a British Columbia beer darling; now, Backcountry prides itself on an ambitious lineup of limited-release beers. From the outside, the converted warehouse blends in with the rest of the industrial block. But inside, Backcountry is lively and inviting. The accents sport a tan and teal color palette. The bar to the right is decked with retro bulbs and a letterboard menu. Sound-dampening panels and camo-shaded lamps hang down from the soaring exposed HVAC. Each table is decked with a laminated BC map and mid-century modern chairs. Eighties tunes echo around the halls. My partner and I visited Backcountry after a full day of hiking, ready to chow down; we ordered a sandwich, a pizza, and a few flights. The Soprano -- Italian Sando was piled high with capicola, mortadella, and prosciutto cotto on a fluffy, poppyseed-laden foccacia. Our side of Five Guys-style, wedge-cut fries was rich and salty, and we loved each one of Backcountry's house-made sauces more than the last. The Meat Your Maker pizza was a deliciously nostalgic riff on the classic meat-lovers pizza. The thin crust stood up against the hefty helping of toppings, and the poofy cornicione paired perfectly with the exciting sauces. On the brewery side, the flights proved to be a fun deal. Across the beers, I was most impressed by the sours. Our collective favorite was the "Plan B? We Need A Plan C, D, E, We Need More Alphabets" (a basil-forward pineapple sour), while the "I'll Take You To the Candy Shop" (a peach-centric sour) and the "Might As Well Go For A Soda" (a gummy cola-esque cherry sour) were strong competitors. Meanwhile, the non-sour beers I tried were relative duds, including the "Never Taken A Shortcut Before?" oatmeal stout and the Sneaky Peach Cider. The service was friendly but somewhat inattentive throughout the meal, and the bill came to about $60 (after tax and tip). More than anything else, Backcountry satisfied -- it achieved the ideal brewery balance of fun, elevated, and casual. After our stay in Whistler, I admittedly had low expectations for Squamish, but Backcountry Brewing was a beyond-pleasant surprise, and I surely would visit again.

We sampled five of their beers - Mountaineer Pilsner, Grapefruit Ale, Black Tusk Ale, Llemoncello, and Variable Conditions IPA. My favorites by far were the Pilsner and Llemoncello. Very drinkable and thirst quenching. Our food was an appetizer of Vegetable Samosas and I liked them a lot. Flaky crust, plenty of vegetables and potatoes, and just a hint of curry. We had quite a few pizzas in the dining room -vegetable, pepperoni, and a barbecue chicken and pineapple. I liked the vegetable and the BBQ chicken. Both had great flavor and a medium soft crust. We had a few GF and Celiac folks in our group and Whistler Brewery did an outstanding job accommodating them, so hat's off to their staff and kitchen.

The place is part of Mark James group (Yaletown Brewing etc.), so one can already know what to expect if one has been to the other locations. Staff are friendly. Most of them seem to be Australian. Only complaint was that my friends and I couldn't be seated outside on the patio for some reason, even though there were clearly tables available (I didn't see any reserved signs). Not sure why the waitress insisted we sit inside where the place was maybe 30% full, but oh well. The place feels like a giant chalet, with the timber trim everywhere. They have a pizza oven, and the beer production tanks are visible over the kitchen area. There's even a toy train that does a circuit throughout the dining area (look up). One thing worth mentioning is that the bathrooms are on the 2nd floor, which may be a problem for some. Food here is Whistler pricing, so be sure to have deep pockets. I was told to try the High Mountain beef ribs, so there is now 1 less cow out there. 3 bones drenched in BBQ sauce, served on top of a pile of coleslaw and next to a pile of mashed potatoes (there is a fries option). Ribs were cooked well but the sauce was definitely on the salty side. I tried a piece of my buddy's prime rib and it's pretty solid. The portion size was definitely enough. I was stuffed. I also had a flight of their craft beer (4 glasses). As of the time of writing, they only have 8 beers available, but it was more than enough. Overall the place is worth a visit if one wants pub style comfort food.
