The front, which seemed to be sort of a quickie to go type of place to grab a slice of pizza for lunch definitely rang true to our assumptions, but we ventured into the rear of the restaurant to find what I can only describe as elegant and casual at the same time. Um... what? A nice, upscale place in a small mountain town of Colorado??? We were greeted and seated quickly, and found ourselves at a cozy little two top, ready to order drinks while we were perusing the large menu. I started with an IPA (unfortunately don't remember the name of said beverage), and my friend ordered a white sangria. We decided to try starting with their bruschetta, as well, while still deciding on our meals. The drinks made their way to our table, and we were ready to order; I wanted to try their chicken piccata at the suggestion of my friend (I'd never had it before!), and she went with the classic spaghetti bolognese. We spent some time getting lost in conversation until our starter came out. It looked good! Definitely different than the bruschetta that we have both had in the past, but it was yummy! The plate was steaming hot, and the cheese was nicely melted over sliced tomatoes; the bread was a bit crusty on the edges, and soft and chewy on the inside. We continued talking while inhaling the appetizer, and it seemed like mere seconds had passed when the main course was set in front of us. The dishes looked pretty good. My plate was super hot, and my friend said hers was too, which is always a plus; hot food is the best lol. Overall, we both enjoyed our meals; I think my chicken was slightly dry, and the sauce it came smothered in could have been more prominent, but the sauce was very flavorful for what it was. The spaghetti it came with was definitely warm and it tasted good, but it didn't absolutely blow me out of the water - it was just normal, run of the mill spaghetti! My friend said she liked her dish, but that it was missing some of the more "traditional" aspects of what she normally sees with bolognese. I'd definitely come back if I were in town again!! The experience was super nice, the staff was friendly, and prices were reasonable.

The dressing was overly sweet for my liking and did not have your standard Cesar flavoring. I wish I would have asked more about the dressing to understand it a little better. I probably would not order this salad again. Eggplant parmigiano: this was sooooo good! The eggplant was breaded and cooked perfectly. I could have just eaten the eggplant it was so tasty. Highly recommend!! Tagliatelle bolognese: I am a huge sucker for bolognese, so I usually judge this sauce pretty tough. This. Was. De. Licious!!! The meat sauce was full of flavors and the noodles were cooked perfectly. I was impressed! Butterscotch budino: perfect way to end our meal. I'm a huge fan of butterscotch flavored desserts and this did not disappoint. It was light and not too heavy after a meal of pasta. The thick layer caramel on top was delicious. The portions were big in my opinion, so while prices were a little high, I thought we got our moneys worth of food. Our server (and others that came to the table) were all super kind and helpful. It does get very loud in the restaurant, so had the weather been nice enough to eat outside, I probably would have chose the patio seating. The portions are HUGE, and we easily could have shared. The bolognese was decent; you could tell the pasta was fresh, but the sauce was on the acidic side (needed a pinch of sugar to cut it), and there was very little meat to speak of. It seemed far too expensive to be primarily a bowl of noodles and tomato sauce. The chicken piccata was also mediocre-- very salty, and the sauce was lacking in lemon flavor and far too heavy on the butter. Chicken piccata is one of my favorite dishes, and this one was trying so hard to be fancy that it missed the mark on executing what is traditionally a simple dish of crispy chicken cutlets in a lemon white wine butter sauce with capers. Could hardly taste the lemon, and I'd be surprised if there was white wine in it. I only ate half because I feared the butter sauce would wreak havoc on my stomach. The dinner was disappointing, so we gave Mambo another chance by ordering a takeout pizza on our last night with an order of tiramisu. The pizza was also mediocre-- it was extremely greasy with a soggy crust. At $36, it was a pricey mistake. The tiramisu was literally a tub of mascarpone cream and cocoa powder-- not a ladyfinger in sight. I assume this was an oversight in the kitchen, but a straight mouthful of mascarpone cream is not appetizing... I called and spoke to the manager, who agreed to refund the dessert, but overall I would not recommend Mambo based on my two separate experiences.
