Server was inattentive. Husbands ordered enchiladas and they came out cold, not room temp, but cold. When he told the server there was no apology, just a grunt. His plate was returned after being run through the salamander, now the food was lukewarm at best. I ordered Arroz con Pollo and asked if I could get queso sauce instead of red sauce. The server said 'yes' but failed to mention that it would cost an additional $3. It should be mentioned when there is an up-charge so the customer can decide. I would not have opted for the switch, if I had been informed. My meal was good. Our drinks were not refilled nor was the salsa. The ambiance is nice and the restaurant was very clean. The chips were hot and the salsa fresh. The queso was delicious. The staff was friendly and the atmosphere was fun. But as good as the appetizers were the main were absolutely incredible. No wait on a Friday evening. The staff was super friendly and the food was amazing. I am not a fan of Mexican food but my boyfriend likes molcajete bowls so we had to try it. We ordered a molcajete with bacon wrapped jumbo shrimp. My fav of all the molcajete that I have tried in North America. We also ordered two crispy rellenos, alarcarte. As you're driving through north western Colorado, there is not a whole lot to eat in Craig Colorado. When I pulled off into this little restaurant, I was greeted by excellent staff and a clean restaurant. I ordered the Molcajete seafood platter, and it was very flavorful. The next time I pass through I will definitely stop off and see what else they have to offer because if it was as good as it was today, the next meal should be really good as well. read more

I'm only in Craig, Colorado for two days. This was day two. I picked Vallartas mostly because it's close to my hotel. However I was in the mood for chicken fajitas. The hostess that greeted me was friendly and seated me quickly. My server was also friendly. She checked on me regularly but not to much. The salsa was chunky. I liked that. The flavor was different than I'm used too. It wasn't spicy, was flavorful. The chicken fajitas also were not what I was expecting. They were not a traditional fajitas taste, in my opinion. They were good. I guess that's just the difference between Mexican food at home, Memphis, Tennessee vs Craig, Colorado. Over all time enjoyed my dinner and recommend you try Vallartas too. read more

I use to come here while living in the area years ago but since then they had moved to a new location... so out of the tiny mall in town to a fresh and modern diggs..... very family focused and their staff continues with great service. Ambiance is festive with colorful walls and art work that provide a great atmosphere as ya enjoy your meal. Their menu is balanced with lunch specials and full dinner menu that includes chips and salsa at no charge. Full Bar and a few signature cocktails. I had ordered Chili Relleno and a cheese enchilada along with a Cadillac Margarita...... each was very tasty. Chili Relleno was not too spicy as some folks are not keen on spicy.... I use sour cream to tone down the spiciness if it's too much for me.... this time it was perfect level of spice. Enchilada had a light red sauce that was not spicy but good favor and several kinds of cheese ....also plenty of cheese. So my meal was perfect today. Again.... The food was ok, probably would've been better if I got what I ordered. I ordered a chicken combo meal and got ground beef. I normally would've sent it back, but I just go off the road (on a motorcycle) returning from Sturgis. I was batting a fly the entire time I was eating. Oh, and I had the waitress give me a beer menu as I ordered, but she never asked me what I wanted, so I drank water. I still left a reasonable tip, because that's the type of person I am. We were traveling through Craig and staying at the KOA. We asked a friend who travels there frequently for work for a restaurant recommendation and Vallarta's is what we got. I was eating a chicken enchilada when I felt something in my mouth, I had this bone in my mouth! I spit it out and I'm so disgusted that I ate this, but I didn't want to start problems. This came highly recommended from the hotel staff where we were staying. So here we go.... we walked in and were not greeted only asked how many. We were then motioned by a young woman who appeared to be having a rough day or she just has RBF? We were sat and she walked away. Waiter comes by 10 mins later to get drink order and again no customer service offered. I decided to go with minimal risk and ordered a quesdadilla. The taco meat inside was very wet causing the tortilla to be soggy. The waiter did not check back until we flagged him down. I would hard pass on this place next time. The first time we ate here they were still located in the old mall. Things have differently improved over the years. Fast service and all of the food came out together as well as hot. The flautas were filled generously with chicken and served with a good helping of beans and rice. The pulled beef burrito with green chili sauce was also stuffed generously. The queso was the kind made with good chilies and white melts cheeses, runny and perfect for dipping all the chips in. Salsa was the only thing I would say could use a little adjusting, it wasn't very spice and was more tomato juice than it was anything else. With that being said... the food was really quite good for a small town, off the beaten trail. I had the Chicken Fajitas. The chicken was high quality meat, cooked very well, not very spicy, and almost sweet... The veggies were done well, plenty of red/green bell peppers, and the portion was large. While headed to Steamboat we stopped at Vallartas Mexican Restaurant in Craig. It set back off the road inside a pretty empty shopping center. Upon arrival we were immediately greeted by a hostess and seated. Served salsa and fresh warm chips. We ordered the queso as well, which I liked. The menu has quite a few options available to choose from. I ordered the fajitas quesadilla which was really good and easily could have been shared as I was only able to eat half. My husband ordered the combination (taco, burrito and enchilada with rice and beans). He thought they gave him two enchilada cuz he didn't taste a difference between that and the burrito. Overall food portions were big and tasty. My only complaint was I ordered a small cheese quesadilla for my 2 year old. Said I didn't need the rice or beans meal with it and I was still charged a meal price. read more

Vegan/vegetarian friendly place that is great for the whole family!! We always come here when we have whole family get togetherness because there is something for everyone. We are vegan and the vegetarian portion of the menu can easily be made vegan. It is also delicious. As with most Mexicana restaraunts- the portions are huge and the partner and I can share dishes and both be very full! The vegetarian chimichanga is amazing- worth a try for veggies and non-veggies alike, it is so good especially when you get to snack on chips and salsa beforehand. A meatless dish can be a less guilty, lower calorie-intake dish. Plus then you save room for beers or margaritas which are amazing! This place is on the main thoroughfare in Craig- but you might miss it because it's tucked away in the Centennial Mall- right across from McDonalds! read more

But the next 3 times (we gave it a chance) the food was very average at best, the service was terrible - slow, wrong, and uncaring, so we finally gave up on the place. Drinks were average, sopapillas were good. We had a variety of dishes, rellenos, chimichangas, burritos, enchildas, tacos, and more. The beans were flat, the rice bland. The location on the hill is nice, but the restaurant inside is not very pleasant. The cement floors and kitchen tables are not comfortable and are noisy. While I'm glad the place is cleaned, the smell of cleaning fluids overpowered the smell of the food. read more

The new location in the old Signal Hill Inn is fantastic! They really did a great job making it a nice, fun place with bright colors and an upbeat, modern atmosphere. I had my favorite beef enchiladas with chipotle sauce which had just a bit of heat and plenty of flavor, but not too fancy as Mexican should be. The service was prompt and friendly. We were seated on the east side with a great view over Craig as night fell. Bonus, the margaritas actually had a decent amount of tequila, which isn't the case at many places anymore. FANTASTIC FOOD. service is 95% perfect. cute staff. food comes to the table piping hot and quickly, I have never waited more than 20 minutes tops for food to arrive. very attentive employees keep the place spotless. I have never seen a table go longer than a few minutes dirty before someone comes out and gracefully cleans it up. price isn't bad either. this is a great place to take someone on a casual date or just a good night out.
