I've lived in LA for 30 years so I don't give out 5 stars for Mexican food unless it's truly outstanding. That being said I'm giving los jilbertos a solid 4 stars.... Yummy family Mexican food... especially the asada. And great value. I'd rather drive out to Craig than eat at the overpriced and mediocre steamboat spots

Incredible portion size at Jilbertos! My dad and I went camping near Craig, Colorado and just needed something that wasn't freeze dried . We dropped into Jilbertos and ordered tacos. What was amazing to me was the sheer size of the tacos and the amount of meat inside. I gave them 5 stars because this is a little gem of a place up in northwestern Colorado. So if you are on state Highway 40 in Craig stop in, it's worth it!!

When I was in the Craig area today (11/12/23), where I drove out to see Dinosaur National Monument; I stopped at the local fast food Mexican restaurant for dinner. This place served authentic Mexican food. It's very similar to the tacos and burritos found in Mexico. I ordered a mixed burrito and a lengua taco. The burrito itself was massive. It came with shredded beef, onions, green peppers, & refried beans. I ordered guacamole in it as well for an extra price. The food was excellent. The meat and vegetables were very high quality. I also ordered a lengua (beef tongue) taco. It came in corn tortillas with a generous amount of meat, onions, and cilantro. I also guacamole as extra with it. I got the pico de gallo at the salsa bar. The taco was also excellent. For my drink, I ordered a Mexican Coca Cola (made with sugar cane instead of high fructose corn syrup). I think this is the best version of Coke. The service was kind and fast. The cashier also spoke perfect English. The dining room had plenty of seating, indoors and outdoors. It was also quite clean. This is far better than the local fast food Mexican restaurants I have eaten at in Denver, Greeley, & Fort Collins. I highly recommend someone to try this place if they're in northwestern Colorado.

Tore me up, never again. Beyond me how they have 4.8 stars. Weird refried beans, very little flavor overall.

I walked in and went straight to the bar, the bartender was very quick to bring me a menu and asked what I would like to drink, I was impressed because the one I had last time was to busy on their phone. I ordered carne asada with bacon wrapped grilled shrimp, I specifically asked for the steak to be medium and the pico on the side. When it came out it looked amazing but trying it was a different story. The steak was very inconsistent medium in the middle and well done and crunchy on the sides. The shrimp was overcooked and the bacon was so overheated that it was stuck to the shrimp. The pico was hideous and not on the side liked I asked. My flour tortillas never came out like they were supposed to and I literally had to beg for some. I could go on and on about how it all was under a heat lamp too long and very bland, no need to. I will not be back ever again, such a shame!!!

She attempted to seat the two of us at a six-person table directly next to three women who were clearly intoxicated, had obviously been there for quite some time, and were extremely loud. We ended up moving ourselves to the far end of the table just to get away from the conversation. Unfortunately, the service only got worse. It took over 10 minutes before a server came to our table, and then another five minutes to receive water after we specifically asked for it. Throughout the meal we felt completely ignored. After we finished eating, we sat with our dirty plates for another 10 minutes before anyone came by. The food itself was average--nothing memorable--but the poor service overshadowed the entire experience. There are too many restaurants that value their customers for us to return. Sadly, we won't be back.

At this point it feels like half or more of the restaurants we try are doing this. Not piping hot, not even warm... just straight up cold or barely room temp. And somehow we're still expected to pay $150 at the end and smile like everything is great. This place was no different. The food took forever, easily 45 minutes to an hour. Then the rice and beans come out and they're actually colder than room temperature. The rice was crusty like it had been sitting at the bottom of a pot for days. I said something and they brought another one... same temperature, cold. The rice was a little fresher so clearly they swapped it out the old crusty one they tried to pass off as acceptable the first time but still cold. It's honestly ridiculous. Long wait times are one thing, but then to have the food come out cold and crusty and act like it's fine is not okay. It's getting to the point where it's rare to find a place that actually serves hot food, which should be the bare minimum. Don't go here. Don't support this. Maybe if enough people stop accepting it, restaurants will remember that hot quality food is kind of the whole point. What a disappointment and a complete trick, I would have never gone to this place if I knew the awful quality and standard.
