Ok so after almost a year, I decided to give this place another chance because hey, everyone deserves a 2nd chance right. I walked in and went straight to the bar, the bartender was very quick to bring me a menu and asked what I would like to drink, I was impressed because the one I had last time was to busy on their phone. I ordered carne asada with bacon wrapped grilled shrimp, I specifically asked for the steak to be medium and the pico on the side. When it came out it looked amazing but trying it was a different story. The steak was very inconsistent medium in the middle and well done and crunchy on the sides. The shrimp was overcooked and the bacon was so overheated that it was stuck to the shrimp. The pico was hideous and not on the side liked I asked. My flour tortillas never came out like they were supposed to and I literally had to beg for some. I could go on and on about how it all was under a heat lamp too long and very bland, no need to. Tasty food and lots of it. Our party of six arrived after 6:00 on a Monday night. The restruant was not crowded and we were seated quickly. Our waiter was very attentive taking our orders and asking if we wanted drinks. The food ca out quickly. Several of our group split the plates. There were enough beans,rice and salad that everyone was satiated. I opted for a crispy chili relleno. It was very good. The chili was mild and the sauce had pieces of meat in it. I usually never leave a bad review no matter the service but this time it was really bad To start our server never went to check on us , she just grabbed our drink order and that's it , the older guy who took our order (was really nice, took the plates away , gave us a box for my daughter's food) but he took my husband's order wrong , that's understandable in a way ,I asked him again just to double check everything was correct and he said the right order but brought out a total different plate( for reference he order pork carnitas and he got chicken fajitas) we're not picky eaters so we said it was ok , food was ok not great , when we finish eating we had to go to the front to get our check and the server had an attitude, our check was 60 something a little overpriced to me ,but I understand everything is expensive this days , I'm pretty sure that with a better attitude and a better attention to there clients they could improve, but we're not coming back anymor read more

We always look forward to eating here. The food is flavorful and dependable. The salsa and cabbage dish that come with the chips are fantastic. I can make a meal on them. Enchiladas are always good and full of meat. The chili relleno is good but not a real relleno. It is a small slice of a canned green chili with cheese in a fried flou tortilla. Very upset with the order I had picked up. I had order the queso con chorizo and it was like they just threw some Monterey Jack in a pan and tossed a small amount of chorizo and onions on top and then warmed it up in the oven. From the time I placed my order until I picked it up was a totally of 15minutes. I only live 5 minutes away and by the time I got home I had to remelt the dip myself after paying $11!! We are from PA and have a business in Craig. We've been coming to Fiesta for years, and every visit is incredible. They have huge delicious margaritas and authentic yummy food. They give a Mexican coleslaw with the salsa and chips which is beyond amazing! This place is way better atmosphere-wise and food-wise than Vallarta. The staff are welcoming and accommodating. Fiesta Jalisco, why can't you be closer to my home? Let me just say this place was quick quick quick! As soon as all four of us said what we wanted to drink the drinks appeared right in front of us! The food took no time to get to us either, I don't think we waited more than 5 minutes! The quality of the food was really really good, having not had a proper meal in a while because we were hunting just made everything taste even better. Cons: Never been to Craig before- here on business so I was open to the idea of Americanized Mexican food but this was pretty bad. Bland taco, enchilada, and tamale needed lots of hot sauce for flavor. The Original Margarita was sour as warned but also really salty and kinda bitter. Ya, this was a disappointing meal. read more

In my experience, living in the middle of nowhere (aka Craig, Colorado) for five years was pretty much hellish on its own for a lot of reasons. Having a place like Fiesta Jalisco was awesome, because it was one of the few places in the whole town that had FLAVOR! It was not bland, it was authentic Mexican food, with some kick to it. The service was really great, and the prices were not too shabby for what you got. My husband loved the shrimp burrito, and that says a lot, since he's from the Bay area in California--where they have the freshest seafood. Our son loved the tacos, I loved the chimichangas. Everything, every time, was fresh at Fiesta Jalisco. Oh, and they make a kick-a$$ margarita! I highly recommend this restaurant if you want some good quality food. Yes, it is a bit pricier than Casa Loya, but it's worth it. :-D read more

Really good food! In Craig due to a cancelled flight, so thought we would try this out. We sat at the bar and the bartender gave great service! She was attentive and made good suggestions! Chips came out warm and the salsa was really good. Both entrees were really good! One had fajita chicken with fajita like seasoning and it was really tasty! The carne asada plate was outstanding and maybe the best I've ever had". BUT, we went there again and I'm down grading it Pure average. The service was poor and slow. Had trouble getting the waiter to respond to my requests for attention. I ordered the garlic sea food platter and it was way over cooked. It went from a 5star to a 3. Take your chances. read more
