Only in Kanab is a friendly little food truck in the SAMCO/Silver Eagle gas station parking lot. When we arrived around 6PM for a Sunday dinner, the little parking area right next to the truck was full of customers waiting to pick up their burgers, but there wasn't a line to order. Per the cashier, Zuzu, there would be an 18 minute wait for our food. She was on the dot correct, and 18 minutes later, we were biting in: Kanab Burger + Fries ($19) - Let's start with the patty. It's really good quality, about half an inch thick after cooking, still with a good portion of pink at medium-well doneness, resulting in a burger with plenty of moisture remaining inside. The patty, slightly smaller than the size of the bun, is charred well, but still tender and extremely beefy inside. The burger is slathered with a ton of chimichurri aioli, creamy, bright and herbaceous along with two slices of melted Muenster. It's so creamy that some starts dripping out as soon as the burger is lifted up. To add even more fat (which I honestly don't think is required), there are plenty of small avocado slices, followed by a single thin slice of tomato, which I found to be too small for the burger. There's then plenty of arugula, peppery and bitter to finish. It leads to a pretty well balanced burger, all on the bun emblazoned with the Only in Kanab logo. The bun compresses well to really cradle the ingredients. We ordered this with fries, which are pretty average in size and shape. Some are a bit over fried, but most are okay and still fluffy inside. They dust it with a liberal amount of seasoning salt, so it's quite salty. Shadow of the Dragon Burger ($14) - The burger patty is the same as above, but the other ingredients are mostly different. There's a garlicky and tangy sambal giving just a hint of heat. There's crunchy fried red bell pepper bits embedded in the hot sauce and then another creamy, slightly sweet sauce spread on the buns. It's overall not very spicy at all, and very messy to eat since things spill out easily. I think both burgers are a bit too abundant with the ingredients, but I don't think either were overloaded either. Overall these were very good burgers and a surprising find for such a small town where I didn't expect to find great food at all. read more

This burger truck is AMAZING! It's a one man operation, and an impressive one for sure. We ordered our burgers and then walked around in a nearby grocery store while waiting for our burgers to be done (we got buzzers). The chef told us 19 minutes for him to make our burgers and fries, and he was spot on with that estimate. The food was done in 18 minutes 30 seconds. You can tell he makes the food with love, and even though there is not a place to eat the food (you need to take it to-go), it was a cute spot nonetheless that the truck is parked in. You just have to be aware that if you are waiting for your food, it could be quite hot outside. read more

I don't leave a lot of reviews at this point in my life. Holy shit, these are incredible burgers. I don't want to use the word gourmet, because it is still a hamburger. But the composition and execution of the burgers, the quality of ingredients, and the menu are all A+++. The fries are also S-tier. I have had hamburgers in 46 states at many of the highest rated spots. For my money, this has to be one of the 10 best burger spots in the USA right now. read more

We drove by just to check it out and make sure the listed hours were correct. We stopped to check out the menu. Fellow yelpers did not disappoint. We went back to our air bnb unpacked then came back to order our food. By then people were waiting in line and it was a constant flow of people. Going through Kanab and we needed a quick bite to eat. I wanted that Havana place, but they were closed. This place actually has 5 stars and it was this or Wendy's. This is a food truck, nestled in a parking area. I tried the Hog Canyon, my friends tried the Kanab burger and Belly of the Dragon. They all had their own flavors and were delicious. The chimchurri sauce was great and flavorful. And the scorpion pepper aioli was kickin'! The Cajun fries had a twist, a little spicy and sweet. The wait time was 17 minutes, which I felt was standard for something fresh. And it was quirky they gave out playing cards to keep track of their customers. Found this burger place via Yelp and checked out their Instagram page. Looked delicious so while visiting Kanab we decided to try it. Great choice! Burgers cooked to perfection and a hearty portion. Tried both the Kanab with regular fries and the Spicy with Cajun fries. The burger toppings were fresh and avocado on Kanab delicious. Spicy had a nice kick and was yummy too. OMGOSH! I'm certain the humble food truck is merely a facade for a Michelin Star kitchen. There is no way this burger came out of there! Ordered the Belly of the Dragon burger, was able to customize the meat temperature for a mere $1, and was served the perfect rare patty adorned with heirloom tomatoes, pepper Jack cheese, crispy fried jalapeños, arugula, sambal sauce, and scorpion pepper sauce. I was concerned it'd be messy, but the bun (which had the logo cutely branded in to it) was able to hold it together without being too bready. Note that this is a food truck parked between Sun-n-Sand motel and Adobe Real Estate. When I arrived, there was about a 20 minute wait with several people eagerly waiting for their food.
