This reminded me of a Vietnamese soup (the name is escaping me) that doesn't get served often because of it's pungent fermented fish flavor. The bood cakes and tripe aren't new to me, I love Bun bo hue, but this wasn't it. The crispy pork was made really well, I just wish they added salt. It was saved by the amazing sauce it came with. Now that I think about it, it could be that they withheld salting the pork for the purpose you're supposed to get that from the sauce? I dunno, I just need them to sell the sauce in a bottle so I can take it home with me. It reminds me of the viral "crack sauce" I see on tik tok. I want to come back and try more dishes. They have some things you wouldn't necessarily find in other places. The prices are a little higher than what you would normally pay which is crazy since there are literally 3 other pho places right around the corner competing for the same business. My family and I always order the spring rolls and fight over them. I usually order the shrimp pho and my son and daughter always go with the pho vien. I once drove to the location and it's a little bit of a hold in the wall and extremely casual but they do not skimp on the good.
