I went for the Tomahawk AAA, the Porterhouse AAA, the Kansas AAA and to finish in style, the "Cowboy" wagyu. You can probably guess which one cost the most!. My order took a bit longer than that of others, as many had ordered online beforehand and only needed to pick up their reserved bags. I took my precious package home and proceeded to patiently let the cuts warm up before prepping them with salt and pepper. I won't go into details of the cooking, but it was definitely an exciting experience to manage these impressive and different cuts (we aimed for rare to medium rare). The steaks were delicious! The porterhouse was particularly tender, second only to the wagyu, which was distinguished from the other cuts by its rich umami flavour.
