I'm not sure when they opened but they are local right in town in Mohegan Lake right off of Route six. I ordered a bunch to try out including the seafood, the lobster, grilled eggplant, eggplant and roasted red pepper, chicken marsala and the Ruben. I'm currently sitting in bed and enjoying the rest of them and I can definitely say these are truly awesome.If you are a fan of empanadas, they have such an array to choose from, and even some vegetarian options. If you like dessert, they have those too! All I can say is I will definitely be coming back here again and again and I hope that they can stay in business and I will be telling everyone I know to check them out

The rice and refried beans were also very good. The only item that wasn't amazing was the tres leches. It was good but not as moist as what we normally get. We ate it, of course. It just wasn't at the level of the rest of the food. We sat outside on the patio. It's right next to the road but also overlooks the creek and was very pleasant. The service was great. Very friendly and fast. The prices were reasonable. Knowing about Panchos & Gringos, we'll have no hesitation eating Mexican food when we're visiting our daughter in Peekskill.
