From the first time I got in touch with her, Chef Aless was always prompt with her responses - as it was my first time ever doing anything like this, she helped curate a menu for my husband and I based on our likes/dislikes. I had also gone back to her to switch up a couple items, which she had no problem with either - really appreciate the flexibility! On the day of, she came by a bit early (which was a non-issue for us considering we were idling by at home), and was very efficient as soon as she stepped in - we were served some delicious hors d'oeuvres (fig and brie crisps were divine!), an appetizer (truffle burrata and arugula, with a delicious pomegranate molasses dressing), second course (crab cakes with mango slaw, always a favorite in my book), main course (a perfectly medium rare Pat LaFrieda steak), some sides (a decadent sauce for the steak, creamed spinach and potatoes lyonnaise; if you coudln't tell, we wanted to replicate the NYC steakhouse experience), and lastly, chocolate mousse for dessert (needless to say, it was amazing). And best of all, she left the kitchen spotless, which was much appreciated. I also want to note that it's important to clarify what you're looking for when hiring a private chef, especially as a first timer (like me) - I thought Chef Aless was going to cook everything from start to finish at our apartment, however she actually came by with everything mostly prepared, and left the finishing touches for last. When signing us up, I mentioned in a note that her dream is to become a chef. The class included seven or eight adults and us, and Chef Paul went out of his way to make her feel welcome. He took her under his wing, showing her basic techniques and treating her aspirations with such respect that she felt truly seen and encouraged. We arrived early, and Chef Paul shared that he began cooking in a professional kitchen around the same age as my niece, then apprenticed under a famous chef in Paris at 15. He later became the head chef of two restaurants before opening his own culinary studio. The class focused on French cooking and included a four-course meal. I loved that it was small and intimate--just 10 people--compared to other classes I found that had 16 to 20 participants. Although we worked in groups of four to prepare each dish, Chef Paul brought everyone together where he demonstrated key steps across all the courses--techniques that many cooks get wrong--and showed us how to do them for the best results. He even provided special recipes for us to take home and ensured that each student got hands-on experience with parts of multiple dishes. It truly felt like a shared and collaborative learning experience. By the end of the three-hour class, our class of nine or ten had shared a delicious meal and great conversation. My niece was absolutely thrilled and left even more inspired to pursue her dream. If you have a child who loves cooking, I can't recommend Chef Paul highly enough. The food looked and tasted awful: the salmon was fishy and poorly seasoned and cooked; the kugel was a pile of brown literal mush; the vegetables were brown and tasteless; the matzo ball soup tasted like it was made from pareve chicken cubes, was bright yellow, and the matzah balls were mealy. The only things we could take more than one bite from were the dessert (which tasted like a box mix with some raspberry thrown in) and the "homemade" gefilte fish (which tasted like a store-bought brand I've had before). For nearly $40 a head, this is unacceptable. Shame on me for ordering from J2 given how this wasn't even the first time I'd had their food. A few years back, I went to a cooking class and a Shabbos gathering by J2, and in both cases, the food was bad. I thought maybe it had improved since, but I was mistaken.

AND I HAVEN'T EVEN YET TOLD YOU ABOUT THE FOOD! The party started with Charles' veggie samosas... guests couldn't get enough of them and even asked me about them the next day! Lobster rolls presented along with the lobster shell (see photo)... and bacon-wrapped shrimp served bursting from a pineapple with jalapeño mango dipping sauce. The curry coconut chicken satay was my personal favorite but that was only until I tried his wasabi tuna tartar and black hand-pulled pasta with pork and shrimp (which Charles threw in for me for FREE because he knew I liked them and had a budget I needed to stay under). If there is heaven for a palate leave it to Chef Charles to find it - THIS COOKING IS NO JOKE.
