This is what you'd call a fast casual pizza place. For the uninitiated (these are a big thing where…read moreI'm from but this is the first I've seen in Australia), this is a restaurant where your dish is composed on an assembly line in front of you, adding ingredients as you select. This one offered some decent options, including a sourdough crust in two different sizes, an okay selection of vegetables, and some nice sauces and finishes. They offer nice drinks, gelato, and you can do a salad instead of a pizza. The pizza is one price for whatever toppings you want. On the macro level, I liked it okay.
However, this location did a terrible job of actually executing the concept. For starters, the music volume was more appropriate for a club than a restaurant, and this posed a significant issue seeing as how one has to be able to intelligibly communicate back and forth about topping choices. For another, the staff seemed to have no idea what the choices were or how to do some simple things like add fennel seeds or ground pepper (mind you, I'm not saying it's their fault; they should be trained better, not disciplined). And their menu, while not bad, still could use a bit of an upgrade; they didn't seem to have the pine nuts their website promised, and could use some more vegetable options, particularly towards the protein side (have you tried chickpeas Fratelli? Trust me, it's a winner).
I'm writing this as someone who knows what a well-run fast casual place looks like. I'm not expecting the world here, but they need to get their act together. The pizza certainly wasn't bad, and I'd be happy to return (or perhaps try one of their more established Sydney locations) in the hopes that they can do better.
