Really liked this place. The gluten-free pizza was quite good - difficult to even tell it was GF -…read moreand the regular pizza was great as well. The crust had that nice wood-fired flavor without being burnt. Staff were super friendly the whole time, and the place had a relaxed vibe. They also had some fun Italian-style drinks at the bar, including a couple of beers I hadn't seen before. Solid spot if you're craving pizza in Montreal.

When I went in, I saw their certification on the wall for making Neapolitan pizza I knew I picked the right place! I also liked their menu! The setting is beautiful, almost like a Paris bistro, but it's a pizza joint. Service was excellent too, very helpful and friendly. I started with their starter salad and it was excellent! The tomatoes were incredible, but that cheese was awesome! The arugula was also very fresh and tasty. Next was the pizza - I opted for their Diavola Ventricina, because I like spicy. This pizza had lots of flavors that came together to make one cohesive taste. The dough was INCREDIBLE!!! The toppings were fresh and great. But since it didn't have a tomato sauce on it, I asked for a side of their sauce to try. I was very impressed when I saw it was basic sauce, meaning it appears they just popped open a can of San Marzano tomatoes and added light seasonings and blended - Simple and great! Overall - Excellent - Highly Recommend!

In Montreal on business for the third time, I had so much to do that I needed an evening meal where…read moreI could (a) sit alone; (b) have leftovers that would make a good breakfast at 6AM so I could skip stopping on the way to the office; (c) eat something tasty. No. 900 on the edge of old Montreal (I think it is on McGill St) was such a treat! I got to know, in a very little way mostly, and more extensively in one case, all of the staff that run the front of house. Delightful, all of them! Kind of a graduate student crowd, very efficient, friendly, smart, and pleasant to talk to. I don't drink so I didn't try beverages. I was in town for the week so got to try several pizzas. The one that says it is spicy, is SPICY. I was at my limit but the delicious outweighed the spice and I did end up eating it all (in two sittings, not one!). I especially liked the milder italian sausage pizza and so wanted to try more of them.

Wish they would have told us it was going to be last call before we tried to order one more drink. The server told us that the bar closed ten minutes ago, and was very apologetic. So we ordered another pizza to go. We also had our last meal there. It was a little busy and they were short-staffed so they did not come around much and it took a long time to get our food that time. But it was worth it. Pizza is very good. So we're the meatballs.

Montreal now has world class pizza! After many years of coming here and being forced to eat…read morepoutine, smoked meat, great steaks, and Canadian interpretations on various cuisines ... I now have a pizza option that rivals the best of NY, New Haven, and all the rest! Pizza Bouquet is labeled as a hybrid of other styles (NY and New Haven) and they are spot on ... more leaning to the NY version. This is exceptional pizza created by an energetic and passionate staff. I have only been there once, but in that short visit it was obvious that the pizza reflects the people that work there ... creative, fun, unique, and welcoming. They sell several great pies and actually offer both slices and whole pies. I ordered a pepperoni and hot pepper pie but as I sat there I had to get a slice of their upside down pie. While they were both outstanding, I have to say, what I cannot stop thinking about was that upside down slice. That was freaking magical. I would eat it there through because of the complexity and nuances of the actual pizza. Do not let this one sit ... trust me. Overall, this is a destination pizza in my book ,,, welcome to the world of pizza relevance Pizza Bouquet ... you guys do it right. Special shout out to the lovely ladies that danced through the entire preparation of my pie. Loved everything about this place!

New Montreal style pizza…read more Considering I've not heard of or tried "old Montreal style pizza"; just sayin'. The crust, similar to the NYC pie. Thin, gently crisp, some chew and char. Easily foldable. Follow it up with just the right amount of quality ingredients are brought together in just the right proportions with quirky flair. Upside down pizza (cheese first, sauce on top) or stranger still, a double carb potato pizza. Speaking of, the potato pie is so good. All the ingredients from a potato mille feuille with a hit of fresh rosemary and grana padano atop the well made crust. Rich, creamy, nuff said. Equally good the mushroom with its "mushroom cream" (think a thin duxelles) base, rosemary to season and meaty creminis and motz to round it all out. Finally the sopressatta. I mean, come on, who doesn't love a cheese pie made even more complex with goat cheese, honey and grana padano? Sold by the slice or whole 18 inch pie. Inexpensive. Is it better than the NYC pie? No. But it's definitely not as boring either.
