Thankfully I researched the difference between leg meat and shoulder meat when I got home or I would have wasted a lot of that meat. Turns out lamb leg doesn't work as well as shoulder for a long-simmered stew. Shoulder needs to be simmered for a long time, as my recipe instructs, where as leg meat gets tough and chalky if simmered for too long. Why didn't she know this? Really disappointed in this place. Overpriced for a butcher that knows very little.
