There didn't seem to be a dress code but people were mostly dressed nice. The service was phenomenal. We were greeted by the owner himself and he made sure that we were seated and comfortable and helped us understand the menu and their wine selection. Our server was amazing as well. She was very attentive in taking our order. For food I ordered the crab cakes, the shishito peppers, and the Atlantic salmon with the chimichurri sauce on the side. I substituted the mashed potatoes for French fries because I don't eat dairy. Everything was delicious and a little different. For the shishito peppers usually these are served with a tangy sauce and the shishito peppers are blistered. With this dish the shishito peppers were still blistered but they were served on a sweet mustard sauce. For the salmon that was also delicious, served with vegetables. The French fries were great. The crab cakes were pretty good. Now if you're from Maryland you are not going to like these crab cakes, of course, because you're from crab cake capital, but for California crab cakes they were good. I would definitely come back here. I didn't get to try the wine but next time I will definitely try some of the wine and some additional food dishes.

Ever since then, it's become a regular spot for us. The owners Sonya and Mike are truly what make Colony special -- but so does their incredible staff. I can't say enough good things about Shalene, Molly, Camille... anyone we come in contact with is always so sweet and attentive. The wine selection speaks for itself. Sonya does a great job at bringing a rotating selection that we always enjoy. There is always a featured flight that, a great selection of white, red, and bubbles, and they even have some craft beers available as well. There is also a great selection of wine to purchase to take home with you after. But the food. Oh my, you don't just go to Colony for the wine because their food is absolutely FANTASTIC. You can't go wrong with their charcuterie, and let me tell you they have the BEST french fries in Orange County. The daily specials have never disappointed and on Tuesday nights you can't get one of the best grilled cheese around. We love visiting on Thursday nights because the owner Mike does live music on Thursdays where he sings and plays the guitar. This last year, my husband got us their wine membership which we have really enjoyed. Every other month you get a curated four wine selection and you get to come during a window to pick up your wine and you get two free flights to enjoy when you pick up. Pays for half the membership in itself. My only complaint? It's not closer to our house... which maybe is a good thing. And I won't deduct a star over it.

To our surprise, we were so thrilled to see Colony Wine Merchant had a good sized menu with various options to choose from: small bites, appetizers, entrees and dessert. We weren't too hungry so we opted for the daily sandwich of the day and their seasonal soup offering. Every bite from both items was enjoyed so much. The soup had the perfect consistency of creaminess followed by savory tomato flavor. It had some delicious (and I think) roasted potatoes, and the side of roasted sourdough with roasted tomatoes was perfection and really brought the dish together beautifully. The daily sandwich of the day was also fantastic! We remember biting into the sandwich and it melting in our mouth. The bread was beautifully crunchy and the meat with all its toppings inside couldn't have been any better. For our drinks, we opted to do a tasting of whites and reds. The wines were selected by our host (if I recall) and remember enjoying them all. It was fun to taste not only different varietals, but wines from different parts of the world. I was especially excited to see they had a really great selection of wine bottles to purchase in their wine shop. I happened to see one of my favorite ones there. We ended up purchasing a sparkling wine bottle at the end of our experience to have with our thanksgiving meal the following day. The service was A+. Every interaction from when we first walked in the door, being seated, being provided food recommendations, was a great experience. The ambiance is perfectly casual with a slight elevatedness to it. You don't have to wear a cocktail dress or tux to come here but it's definitely a perfect date night place or to come with friends and loved ones and enjoy a delicious meal followed by great wine. They always do a great job with decorating when they have a new theme in effect, and the Great Gatsby décor is no exception. The room is filled with lots of gold streamers, hanging gold light fixtures, art deco artwork, Roman columns, etc. Reservations are highly recommended. We checked in at the host stand with Emma who was very friendly. She seated us immediately at the bar as requested. We enjoy talking with the bartenders and watching them make drinks. Ruben was our bartender and he was excellent in all aspects. I started out with Between the Sheets from the Gatsby menu (rum, cognac, orange, lemon, $18). Rum and cognac is a great combo. This cocktail is spirit forward and well balanced. She started out with a Bartender's Reserve (you call the spirit and flavor profile, and the bartender crafts something special for you, $20). She gave parameters of no hard liquors like whiskey or cognac, not sweet, and not refreshing (i.e. no cucumber). Ruben made the most amazing gin based cocktail. Some of the ingredients he mentioned were plum, passion fruit, pineapple, lime, and a bit of chartreuse and soda. It was complex and perfectly balanced, with great flavors. We have been here many times, and he even served it in a unique tiki mug that we've never seen here before. Now it was my turn to put Ruben to the test. I also wanted a Bartender's Reserve, and I told him to use any spirit as long as the drink focuses on banana or apricot flavor. He went to work, and after a short time a beautiful frosted glass was served to me. I forget all of the ingredients he mentioned, but it was rye based with banana liqueur, a small foam top, and fresh shaved cinnamon on top. The banana was perfectly present with the rye at a nice level. This was a home run all the way. Of course, she wanted another magical creation, and Ruben went to work yet once again. She was served a beautiful yellow cocktail, and he even hand cut a little lemon fish garnish. It was mezcal based with yuzu, elderflower, mango, and lime. It was perfectly balanced, the smoke was at the perfect level, and again it had a great mix of flavors. There was some left over, and he even gave that to her in a chilled side bottle with its own baby's breath flower garnish. It's so fun to watch their bartenders create something from scratch, grabbing various bottles, mixing, tasting, adjusting, and then garnishing and serving. The wine was amazing so we decided to stop by for a mid-week dinner last night. The outdoor space is such a nice space. I even saw someone having wine and reading a book. Definitely will keep this place in mind for a nice spot to relax. The menu is rotating. We had an artichoke dip and pretzel that was delicious. For our mains we had salmon and pasta. Both were very good. Honestly one of the best meals I've had in the downtown Fullerton area. The buttercake was very good. Mason Fox is known for their natural wines. Chris was incredibly responsive before the reservation and a was able to add one of my friends. Chris is also the wine maker and has won several OC Fair awards for this wine. The wine was so good. The last wine was a port which I normally find too sweet and just too much and this port was the best I've ever had and would drink again! Thanks for a great experience!
