But after our guest list grew, we had to move locations and our venue was no longer within their catering vicinity. I searched high and low for different vendors that fit the fusion that we wanted, but couldn't find anything that fit just right (or that didn't break the bank). Then I somehow stumbled across Rebel Catering on Google. They had a wide variety of packages for food varying from Asian, to bbq, to Mexican. They didn't have a ton of reviews, and it seemed like they mostly did corporate events, but I gave them a call. I'll be honest, I was a bit apprehensive of how incredibly chill Rahul is at first (because I was already stressed out), but when I told him about our vision, he immediately checked with his chefs and created an incredible menu for us. My mom and mother in law's primary request was copycats of the other restaurant's corn fritters, and he even delivered on that. I'll attach a picture of the menu, but our minds were blown at the quality and freshness of the food. Buffet style brisket is HARD and he and his team crushed it. I even had friends with allergies and he accommodated them without question. The most popular part of the night though was the shaved ice. Part of Rebel Catering is their shaved ice package with alcoholic shaved ice (TABC bartender included). They had custom flavors to match our Asian fusion theme, and even brought their truck in to serve our guests! They also created a custom flavor named after our cat and created a sign with a cute cartoon of him. They also had tons of other drinks including sodas, jelly drinks, boba drinks, and energy drinks. I have worked in hospitality and event planning industry in Austin for many years, and finding a good caterer has always proven extremely difficult. Leading up to the event, Brandi was extremely communicative and flexible with my needs. There was a long period of time where things kept getting delayed on my end due to my organization's policies, but Brandi remained so patient, kind, respectful and accommodating throughout the whole process. On the day of the event, her and her team arrived on time and set up a stunning buffet complete with layered linens and touches of greenery. For the price I paid I was expecting just a standard black tablecloth and chafers on a table, so I was very impressed with the presentation. It made it very clear to me that this is a business that takes pride in their work. On top of this already great experience, the food was fresh and delicious. I am not exaggerating when I say every single thing was seasoned to perfection! I went around to each table and asked everyone how they liked everything, and they all commented on how flavorful the food was. Even our staff with dietary restrictions that received alternative proteins were impressed. I had only paid for the basic-level buffet service, so I was't expecting them to do anything beyond serving the food- but I was yet again pleasantly surprised when I looked up and saw Brandi and her team walking around to each table bussing plates. They accomodated an Argentinian-theme wedding for us, and even worked to refine small tweaks we made with a follow-up tasting. We also did adorable, late-night Chicago hot dogs that were also a hit! Their prices were very reasonable, too. To be completely honest, they did forget one very small thing (a drink garnish) and a bigger thing (fries we meant to serve with hot dogs), but honestly, that was far from our biggest concern, and they owned up to the mistake and refunded us.
