The interior is surprisingly large with a spacious dining room to the right, more seating near the bar, and even an outdoor space that had live music when we went. Spicy Beef Nachos Appetizer: Chips topped with queso, green onions, jalapeños, black olives, tomatoes, guacamole, and sour cream. My friend got this and I had a couple bites. Chips were not soggy and it was large enough to cover as his dinner. Green Chile Burger: Topped with monterey jack cheese and roasted chopped Chaves County-grown hot green chile. Served on a jalapeño bun with a side of our hot green chile sauce. Their signature burger and it tasted good. I don't need too much food but the amount of fries I got was too little even for me. Got two Johnny Walker Blacks with a splash of coke and they came well mixed and quickly. We did end up getting rained in and hilariously went back for a second dinner to wait out the rain. Black corn taquitos were OK, I would not get the fried shrimp basked again, the shrimp was too small and there was too much breading.

Now the other alternative was Texas Roadhouse. Don't get me wrong, I'm regionally from where Texas Roadhouse was founded and it's huge, especially where I'm from. But part of my philosophy when traveling is to try someplace new, traditionally NOT a chain. So I gave this a shot. Cattle Baron reminds me of those old school steakhouses in the 90s that served steaks and an AYCE salad bar. Except it's much nicer ambiance-wise with a broader menu. I ordered the largest ribeye steak they had with a loaded baked potato, unlimited salad bar, a Coca-Cola, and a brownie for dessert. The total for ALL that ended up being $48.35. That's really cheap considering I had to be rolled out on a stretcher (joking). The most expensive item was the steak, in the $30-range but an unlimited salad bar for $4.95 and dessert for $6.95 can't be beat. The salad bar had everything you'd want in a salad bar with fresh veggies and toppings along with two soups, premade salads, and a sampling of sweet items like jello and fruit. I got 2 plates from the bar and two small bowls of soup. The steak and potato soup was good but the chicken soup was a bit salty for my taste. My steak and loaded potato was good and hit the spot. The potato was kind of dry, assuming it was a potato, already cooked hours ago and they just pulled it out to serve to me. After smothering it in butter and sour cream, the dryness disappeared. The steak was cooked medium rare, so no issues there but there was very little seasoning. I added salt and pepper to it, which made it a lot better. I wish it had a little bit more searing/char to it. I ended the meal with a brownie and ice cream, with caramel drizzle. The brownie was fairly large and warm, with a nice scoop of ice cream and ample ribbons of caramel sauce. It was really delicious and not too overly sweet! It definitely put me over the food coma edge. Service was good, but slow. My waitress explained to me that it was slow because a table of 39 people showed up, so she apologized. It didn't bother me though because I was so tired from working nearly 12 hours that day. I'm glad I supported local and my meal was definitely worth the price.

In the mean time I started with the chips and salsa. It was good but I think made with more chipotle chilies than jalapeños. It gave it that burnt taste. Or maybe it was burnt because they just have it in a large stock pot sitting under a heating lamp. My food came out and it was larger than expected. It came with 3 taquitos, a large scoop of beans and rice. I did not care for the flavor of either. The beans tasted like they came from a can and the rice was not very flavorful. What makes up for the stars is the chicken taquitos. They were ever flavorful. Juicy and well seasoned chicken. I also loved the fresh guacamole with the plate. About that water, I never received it.

This was a nice portion of food with a good amount of flavor in each dish. The beef enchilada was probably the best item out of the three - well seasoned beef in a tortilla, covered with good chile sauce. The service was just okay - it seemed like we were almost inconveniencing our server, but at least the host was friendly. Despite being fairly empty, it did take a little while for our food to arrive. After some research, this seemed to be one of the better options for New Mexican food in Roswell, so I'd probably go back on my next visit.

A little bit less common yet, we find restaurants that provide this space over a long period of time. Martin's Capitol Cafe would be such. We ordered a tamale, carne adovada and a chimichanga. The chimichanga wasn't deep fried but pan fried, which was not common and already a red flag. We got our food and it was just OK. The chips and salsa were good, but the food was OK. My portion was also small, and the rice was a bit dry. Maybe we ordered wrong... The restaurant is also a bit well worn. It adds charm but I think charm that is not backed up with good food is like a band-aid over a bleeding wound.

The wait was a bit long as I ordered online and still had to wait a while after getting there, but they were VERY busy and I imagine they were one of the only places open late on a Tuesday night.     Disappointing Curbside Experience - Not Worth the Wait…read more I placed a curbside order at 8:13 PM and didn't leave until 8:56 PM--a 43-minute wait for a to-go meal. I even called the store at 8:45 and was told my food would be brought out. It wasn't. Another customer who arrived after me got their food first. Only then did a staff member ask if I was still waiting and finally brought my order. Turns out my food had been sitting under the heat lamp the entire time. The Dr Pepper Blackberry Shake had to be remade on the spot because it was no longer presentable (on the plus side, my wife loved the shake). Unfortunately, the rest was a mess: Cold burgers Terrible fries (I had to reheat them in my air fryer) One burger was supposed to have everything except mustard, but came completely plain A manager (I believe named Dan) spoke with me but said there was nothing they could do about a refund because it was an online order. I spent $44 for what was supposed to be a quick meal. For that price and time, I could've sat down at Applebee's, ordered three full-size burgers with drinks and fries, tipped 20%, and still spent less money for better service and food. Chili's and BWW offer similar deals. Really disappointed this time. Hopefully they can improve the curbside process, because this was not Whataburger's best. At least, I hope it's not.
