Fully booked at precisely 10h00 three-weeks in advance, just as it has been for more than a decade, arrival at 80 Rue de Charonne finds the green-fronted bistro largely indistinguishable from those surrounding while an interior of concrete and wood is neither exciting nor particularly comfortable. At one point part of the "Bistronomy" movement, but now perhaps best considered a Micro-seasonal experience right down to its beverages, guests are invited to begin with Aperitifs well-suited to deeply flavored Onion Broth and signature Gougeres served piping hot with bold spicing. Served at a leisurely pace by educated servers, though not the sort prone to over-explaining, proper courses begin with puffy Bread alongside housemade Labneh and Milk-fed Lamb Tartare before progressing to a green Salad with Egg Yolk dressed in White Wine, Olive Oil, and Garlic. Next taking advantage of local winter Truffles, smartly sandwiched between caramelized Endive with Pears and hints of Wine, Bread is offered to sop up all the Sauce and replenished to do the same with Monkfish in complex Buillabaisse. Not a place where one is prone to go hungry, all portions substantial including a Potato Salad offered with the Fish, Dessert on this day saw classic Crème caramel spun earthy with Mushrooms and another generous shaving of Tuber melanosporum that played well the nearly-burnt Sugar.

Technically perfect cooking, a focused yet deep wine list & really warm, friendly service. Reservation is hard to come by but if you are willing to wake up at Paris time 10am with a 21 days in advance booking, you should be able to score a resy. Although for us in the US, 10am Paris time is middle of the night so could be challenging. Ambience is French countryside rustic - Didn't have to dress up, didn't have to wait for choreographed service or any of the nonsense that the low reviews seem to crave. Just a very good restaurant. Some of the pairings were super interesting and really transformed the dish. However, on the day of our service, some dishes (such as the grilled endive) was a bit of a let down. There was a wine that is intentionally oxidated, very daring pairing but I was not a fan. Would like to come back and give it one more try!

The mussels were fresh and flavorful, the boudin wonton had the perfect crispy bite with a rich filling, and the duck was cooked just right--crispy skin, tender meat, and a sauce that brought everything together. Some highlights: The amuse bouche course was incredible end-to-end, but what really stood out for me was a blue masa shell holding mussel, sauce, and microgreens/herbs/flowers. The mix of the different herbs, the savory salinity of the mussel, and the sauces was wonderfully complex, yet also harmonious. The poached sea trout with pumpkin and horseradish ice cream was very satisfying. The mix of poached trout and horseradish cream was very familiar, yet the twist of making the horseradish a wholly different temperature and texture was really surprising and innovative. The monkfish in adobo was another extraordinary dish. I have only had monkfish liver before, but the way they were able to perfectly cook the monkfish gave it a texture and flavor reminiscent of lobster. With the spice of the adobo, it was a really well balanced dish. Additionally, all of the wines that we tried were also notable and delicious. Frenchie has definitely earned its Michelin star, and I wouldn't be surprised if it has another by the next time I come back.

Hidden in an angle street of rue de la roquette, this place has a dozen wooden tables and benches. It is fully decorated by its wine bottles so you know what you step into. The owners are extremely friendly and passionate about the wines they serve, which they know perfectly. They go mostly for organic wines and have a preference for Languedoc reds which they find have a better quality/price ratio. There are a few wines from the other regions as well. In total, you'll find probably 50-80 wines on the menu, all deliberately chosen by the owner who will be happy to talk about them. This place is a mix between a wine shop and a restaurant: you can buy the bottles to go or drink it in the restaurant for an additional premium (6 or 8 euros, can't remember). The food is simple but good: charcuterie or cheese plates to share, some grilled meat or fish. Try the calamari and the burrata as appetizers, they're pretty good. All in all, you spend a great time in this place: you discover new wines and you eat some good food. This is a great place to bring a group of friends!

Awarded his second Michelin star in 2022, an accolade retained until now even as prices for the daily Tasting Menu have doubled from pre-pandemic, it is inside the simple green-awning space that guests will find a curved metal bar surrounding the kitchen where each plate is made from scratch at lunch and dinner. Booking just four diners for Wednesday lunch service, frankly unheard of for top-tables in Paris, a choice of seats was offered and after inquiring about allergies or intolerances the heavy-hitter Wine list was perused to the tune of three €40 glasses of 2018 Domaine Comtesse de Cherisey La Genelotte Meursault-Blagny Premier Cru. Eschewing all the luxuries of Alain Ducasse or Guy Savoy, though linens and high-quality stemware show Verjus understands what matters, it is while watching plates come together that guests are spoken to with warmth by staff who truly seem to value feedback. Starting with "Colours of the Day," varied Herbs and Vegetables lightly dressed amidst Bottarga, course two entails three bites from which an Oyster crowned by Kiwi proved to be one of the meal's highlights. A zealot for seasonal products, sliced White Asparagus allowed to shine in a buttery Sauce with smoke Roe, Verjus' time in Asia shows in lightly cooked Turbot bathing in a pool of Fish Soup brightened by Seaweed and hints of Soy. Priced on par with spots like Louis XV and Plénitude, a fact one cannot ignore when faced with a dish like "Moussestage" that is essentially Herb Soup, Gamba Roja with Uni beg question what the Green Star means since neither are local, though the dish and its follow-up Pigeon are both very good. Eschewing mis en place, only a curated Cheese Course showing any semblance of assemblage while everything else is prepared to order, pre-Dessert of Peas and Cream proves a nice setup to the unwavering finale of a Caper-infused Dark Chocolate Tart with Caviar and warm Madelines dipped in Kardamili Olive Oil.

My friend's duck breast was pretty tough; I had noticed the table next to us also ordered it and they seemed to have trouble finishing/cutting theirs as well. As for my steak with foie gras, well the steak was once again tough and the foie gras was weirdly stringy. It was soft for the most part but there were parts that were tough and stringy. Maybe that's a section that's generally separated in the preparation process and it was missed? In any case it was disappointing. What wasn't disappointing was dessert though; perfectly sweet and balanced.
