The truck operates only on Saturdays and Sundays, from around noon until six, or sometimes one. When we arrived, a line had already formed, which is a testament to how much people love this spot. Be prepared to wait about 2 hours--it's cash-only--but trust me, the experience is worth it. The most popular dishes are Lechon, Spanish Rice, and Octopus. The wait is long because the owner personally prepares each order, taking the time to chat with customers and even offer tastings. His warm personality and genuine customer service create a welcoming atmosphere. While my daughter and I waited in line, I noticed an older gentleman I'd seen in videos sharing wine with waiting customers. Seeing him there, pouring wine as we waited, made us feel part of a lively, friendly community. I had a cup of wine and couldn't help but feel like I was at a festive gathering.
